Peanut Butter Blender Muffins

We mixed our favorite easy banana bread with our favorite other flavor. Adding peanut butter to any dish makes it over the top right?? NO mixer necessary to make these, just whip our your blender and wait until your fruit has turned brown so they are nice and naturally sweet.

Of course you can choose to leave out things like the chocolate chips but trust me you’ve got to try them as is at least once. If you are looking to cut flour out of your diet but need something sweet, this treat is for you.

Blender Muffins Ingredients

You can make these a regular size or bake mini muffins. Those are fun for kids to grab and go on busy days for sure.

  1. Bananas
  2. Peanut butter
  3. Eggs
  4. Baking soda
  5. Apple cider vinegar
  6. Vanilla
  7. Chocolate chips
  8. A blender of course – this one is great
  9. Muffin tin

I suggest you use bananas that aren’t really yellow and almost green, but not brown either. Somewhere in the middle. You don’t want them mushy, a bit firm but not hard if you get my drift. Then blend away and add the chocolate chips at the end so they don’t get really broken up. Same thing goes when making pancake mix muffins this way.

How to Mix Muffin Batter in a Blender

We have made a lot of muffin tin recipes over the years, you can skip the KitchenAid or hand mixer and use this instead now. Why didn’t we think of this earlier right? You just add everything and pulse if you want to keep a bit of chunk or blend with the smoothie function for a creamy texture.

They really are healthy snacks for kids since there isn’t any flour and just natural ingredients. Mine like anything with peanut butter, and everything made in a muffin tin is a winner. We added these to our Christmas brunch menu because they’re so easy to make. And they fly off the table!

If you’re looking for other things to make in the morning, our sour cream blueberry banana muffins are dense but delicious.

Can you make muffins without flour?

You can!! If you use a thick binder like peanut butter with some eggs and apple cider vinegar you can create a still fluffy and filling breakfast you’ll love. Cutting out refined sugar is important too and we did that here using honey instead to make it sweet enough.

How do you substitute powdered peanut butter for regular peanut butter in a recipe?

For every Tbsp. of jarred regular peanut butter you can substitute that with 2 Tablespoons of powdered peanut butter + 1 Tablespoon of water with it. This will create a great alternative that has less fat but tastes surprisingly similar.

Equipment

  • 1 blender
  • 1 muffin tin

Ingredients 

  • 1 c peanut butter, smooth is preferred
  • 2 bananas, ripe, med. size
  • 2 eggs
  • 1/4 tsp vanilla
  • 1/2 tsp baking soda
  • 1 tsp apple cider vinegar
  • 2 tbsp honey
  • 1/2 c chocolate chips, optional

Instructions 

  • Preheat oven to 400 degrees, lightly grease muffin pan or use muffin liners.
  • Put all ingredients (except chocolate chips) into blender and blend just to incorporate ingredients. Fold in chocolate chips.
  • Pour batter into muffin pan, 2/3 full in each cup.
  • Sprinkle a few chocolate chips on top if desired.
  • Bake for 12-15 minutes or until toothpick comes out clean in middle of mufifn.
  • Allow to cool before serving.
