Chicken Parmesan Casserole with Pasta

Ok so picture this: You need to run to the store, drop 1 child off at softball practice, 1 off at band practice, go to the post office, and make dinner somewhere in between all of that. Sound familiar?? This. Is. My. Life! I do not have time for difficult or time consuming recipes, but still want YUM. We use penne or shell noodles but you could use your favorite shape.

Now you can make this another way that is faster with our Instant Pot chicken parmesan casserole. You may not have that machine though, and everyone has an oven.

Chicken Parmesan Casserole

With Rotisserie Chicken

I am all about one pot meals I can make with leftovers, canned chicken or with a precooked bird I can grab at the grocery store. Saves me a ton of prep time since that is already done and I just have to fold everything together before baking to tender. You could use any of the three to make this.

With Spaghetti

You could use straight noodles but you would need to break them into fourths in order for the sauce to coat each piece. I honestly wouldn’t recommend this shape as they would likely stick together and clump vs. smaller elbow shapes or shells.

With bread crumbs

The topping with parmesan cheese is optional but my kids love it. I do like to add it for added flavor and texture overall. Another option to get this done would be to sprinkle canned fried onions on there in the last 15 minutes or so to brown.

Without pasta

You would want to add some sort of carb to this or it would not be considered a casserole. If you wanted to add rice instead you would need to cook that first to fluffy and then use that way, similar to our Hamburger and Rice Casserole here.

Ingredients

  • jar of spaghetti sauce
  • 2 cans Chicken canned, precooked, (25 oz. total)
  • 12 oz pasta penne noodles, (uncooked)
  • 1 can chicken broth (16 oz.)
  • Italian dressing seasoning
  • Mozzarella cheese
  • Italian bread crumbs
  • Parmesan cheese
  • Butter (melted)
  • Basil

How to Bake a Casserole without Boiling Noodles

  • In a bowl combine your uncooked noodles, cooked diced chicken, Italian dressing seasoning, chicken broth, and jar of spaghetti Sauce.
  • Stir well.
  • Spray a 9×12 casserole dish and dump contents inside, cover with foil.
  • Put in oven at 425 F for 35 minutes.
  • Take out of oven and sprinkle your shredded mozzarella cheese on the top of your dish.
  • In a bowl add your melted butter, bread crumbs, Italian seasoning, basil, parmesan cheese, and basil.
  • Sprinkle the bread crumb mixture on top and put foil back on.
  • Bake for another 15 minutes.
  • Remove foil, brown for 5 more minutes.

Slow Cooker Option

You could follow our Slow Cooker Chicken Parmesan directions. Then you can boil the pasta separately and then fold together or if there is enough sauce to submerge them in the pot they can be cooked to al dente that way all together.

Low Carb Option

If you did want to make it a low carb version you could make this without the noodles. Make spaghetti squash noodles on the side, or air fryer zoodles and then serve together. Like I said you can make this in your pressure cooker too if you wanted to as well. Either way it is a kid friendly meal that everyone loves.

Ingredients 

  • 1 jar spaghetti Sauce
  • 2 cans Chicken, canned, precooked, (25 oz. total)
  • 12 oz pasta, penne noodles, (uncooked)
  • 1 can chicken broth, (16 oz.)
  • 1 tsp Italian dressing seasoning
  • 2 c mozzarella cheese
  • 3/4 c Italian bread crumbs
  • 1/2 c parmesan cheese
  • 1 tsp Italian dressing seasoning
  • 1/4 c butter, (melted)
  • 1 tsp basil

  • Take casserole out of oven and sprinkle your shredded mozzarella cheese on the top of your dish.
  • In a bowl add your melted butter, bread crumbs, Italian seasoning, basil, parmesan cheese, and basil. Mix well.
  • Sprinkle the bread crumb mixture on top and put foil back on.
  • Continue baking for 15 minutes.
  • Remove foil, and brown for 5 minutes. (optional) Serve!
