Like I said, if I can throw it in a crockpot, let it cook all by itself all day, and have it ready with really no effort on my part I’m all about it!! We are a busy family of 5 who all work or go to school. Most of the time there is some activity after school to travel to as well so if there is a meal ready when we get home it saves the day.

All you have to do for prep is brown the ground sausage or beef. If you use a bag of mixed frozen vegetables you don’t even need to slice produce. I don’t know about you but I love slow cooker soup recipes for dinner when it is cold outside. During the Winter I am all about it! Pair it with some rolls or garlic bread and enjoy together.

Let’s talk a little bit about slow cooking shall we?? First off I have a few different varieties and I love them all. Each one has an occasion to be used like….

  1. This is my favorite 6 quart programmable one with a locking lid so it’s great for bringing to a potluck too.
  2. I prefer not to use liners, but rather just spray olive oil inside before adding my food for easier cleanups.

Soup is a great comfort food meal, especially during the colder months. It’s fairly inexpensive to make, it sticks with you, and kids typically love anything in soup form, at least mine do anyway.

For this easy slow cooker vegetable soup you will need some ground beef, sausage or turkey. I prefer spicy ground sausage from Jimmy dean if I can find it because it adds a little bit of heat and a ton of flavor to it too. Diced fresh produce works but you could also use canned if that is all you have.

Slow Cooker Vegetable Beef Soup with Pasta

All of the veggies can be fresh, frozen, or canned. This option is nice because sometimes the grocery store has really inexpensive green beans so you might want to pick those up and use fresh, but nothing else looks great so you can get canned or frozen of the other items.

Once you cook your meat you literally throw that and all the veggies and canned tomato sauce products in, turn on your crock pot and you’re done! If you wanted to add medium size noodles, just submerge them 30 minutes before serving to get them nice and tender.

  1. Chicken broth
  2. Diced tomatoes – we like this petite variety
  3. Potato
  4. Carots
  5. Celery
  6. Onion
  7. Ground beef – or ground turkey or sausage
  8. Green beans
  9. Corn

When it comes to using fresh, frozen or canned veggies like Veg-All there is a big difference when it comes to texture. If you don’t like yours super soft then you should go with fresh. That way you can slice them bigger so it won’t break down as quickly and you’ll still have a bit of “bite” to them. Next would be frozen and the softest would be canned for sure.

How do I make vegetable beef soup in a Crock pot?

You really could cook this on low on your stove top. Just add beef,  brown the meat in your pot with some olive oil first. You could use diced chuck roast or hamburger too. All you need is to meld all the flavors together so 30 minutes to 1 hour will do it over medium heat bubbling with a lid on it. On low in your Crock though is more hands off. You just throw it all in and walk away.

Does soup taste better in slow cooker?

I mean we think so. Our Crockpot loaded baked potato soup can be made in a pot but it is harder to control the heat and get it super low and steady. Even if you do it needs be stirred along the way so the bottom doesn’t burn. This way it is just hot enough where over time the ingredients get tender and flips to warm when the timing is up.

How to make delicious beef vegetable soup that does not use beef stock or bouillon

You could use a mixture of canned vegetables with their juices to flavor the extra water needed. Tomato sauce adds flavor too, or paste to make thicker. Many times I will have a few stalks of celery and carrots in the fridge but want to add more. I’ll throw in a bag of frozen green beans like you see here and I’ve been known to add a can of black beans too. I mean whatever goes.

Equipment

  • 1 slow cooker

Ingredients 

  • 1 lb ground beef , or turkey
  • 1 onion, diced
  • 2 cans diced tomatoes, petite
  • 48 oz chicken broth, or vegetable broth for vegetarian, use more if you want it thinner
  • 1 potato , diced
  • 2 carrots, peeled, sliced into dials (if using canned veggies use 2 drained instead of fresh)
  • 2 stalks celery, cut into large bite size chunks
  • 2 c green beans, can use frozen
  • 1 tsp minced garlic
  • 2 ears corn, remove kernels
  • salt and pepper, to taste

Instructions 

  • Slice vegetables, and brown meat on stovetop. If using canned veggies, drain 2 cans and use those instead of fresh or 1 large bag of frozen mixed.
  • Add all ingredients into your slow cooker and stir well. Set to low and cook for 6 hours or high for 2.5 hrs and serve!

  1. So I just used this recipe for tonight’s dinner, and I had a question with one of the ingredients: Where it says 1 can Tomatoes, is that Whole Tomatoes? Tomato Sauce? I ended up leaving that step out because I wasn’t sure. Sorry if it’s a silly question!

  2. I recently have retired and like taking my meals to the next level. so I add herbs de Provence to my version of this soup. PS it adds antioxidants with the carrots, tomatoes, and onions. I add broccoli, garlic for more antioxidants.
