When the Summer starts to end I start to think of slow cooker soups recipes. Ok well slow cooker recipes in general but I really love soup when it’s a bit chilly! Here are a few of our favorite slow cooked crockpot recipes and a few from other bloggers I heart. ๐Ÿ˜‰ (affiliate links present)

My kids even make requests for some of these easy Crockpot soup recipes. Pair them with a slice of french bread or corn muffins and you have yourself a hearty and tasty meal that cooks by itself in your crockpot!

Have leftover meat? This is a great way to use it up with a few other ingredients. Especially when you don’t know what to do with meat in your fridge, just cube it up with some broth and go. Like our beef barley soup in Crockpot you can use stew meat, ham, steaks etc..

Let’s talk a little bit about slow cooking shall we?? First off I have a few different varieties and I love them all. Each one has an occasion to be used like….

  1. This is my favorite 6 quart programmable one with a locking lid so it’s great for bringing to a potluck too.
  2. I prefer not to use liners, but rather just spray olive oil inside before adding my food for easier cleanups.

Easy slow cooker soup recipes with few ingredients in your Crockpot cook all day. Healthy with chicken or this split pea soup with carrots are just a few.

Equipment

Ingredients 

  • 2 c split peas, uncooked, green
  • 6-8 c vegetable broth
  • 1/2 onion, diced
  • 2 carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 1/2 tsp salt
  • 1 c ham, diced or 2 ham hocks

Instructions 

  • If using ham hocks place them in the center of the pot with other ingredients around them.
  • Pour in all ingredients and close lid. Slow cook on low heat for 7-8 hours or until peas are tender and when stirred break apart to become smooth.
  • If using ham hocks take them out, slice off meat and dice. Put back into pot and discard bones.
