I spent many years in the Arkansas / Louisiana area where cajun was the thing!! I am not just talking about spicy shrimp boil, it went for everything that went into your mouth. That is the first time I tried this loaf of meat with super bold flavors, and diced vegetables. If your mouth is already watering with the idea of this, you’ll need to get out;

If you love this but you have kids that need “fun” in their meals, no problem. You can in fact make this super fast as muffin tin meatloaf instead of a 9×13″ pan too. Not only can these be picked up and eaten more easily but you get more of a crisp on the outside and cooks in a fraction of the time, the perfect quick meal.

Ingredients

  • 2 lbs ground beef
  • 4 tbsp butter
  • Diced onions, celery, green onions and bell peppers are great
  • 4 tbsp minced garlic
  • 1 tbsp mustard
  • Spicy ground sausage – Jimmy Dean has a great one
  • Italian bread crumbs is used as a binder
  • eggs
  • 1/2 c evaporated milk
  • Thyme, oregano and cayenne pepper

Spicy Meatloaf Glaze

  • 1/2 c ketchup
  • Hot sauce of your choice like Franks
  • Worcestershire sauce

You are going to start with the base of 1/2 cup ketchup, then you need to add a savory element which could be Worcestershire sauce, soy sauce or Dijon mustard. 1 tsp of savory usually does it, for sweetness factor add 1 tbsp brown sugar.

When do you add sauce to the top of meatloaf?

In a small bowl, combine the ingredients. Stir until well blended. Once your meatloaf has been cooking for at least half its total cooking time, brush the glaze over the top and sides using a pastry brush. Keep an eye on it to prevent it from burning. If it starts to darken too quickly, you can tent the top with aluminum foil.   • Add the onion, celery, bell pepper, and green onions. Saute until soft, about 6 minutes. Add the garlic and cook for 1 more minute.
  • To the vegetables, add ½ cup of ketchup and mustard, stirring until blended. Remove from heat and allow to cool for 10 minutes. In a large bowl, combine the beef, sausage, bread crumbs, add the eggs, stir in the milk (evaporated), 1 tablespoon hot sauce, 1 tablespoon Worcestershire sauce, seasonings, and vegetable mixture.
  • Mix well by hand until evenly combined.
  • Transfer the mixture to the prepared 9×13 baking dish. Shape into a loaf.
  • Bake uncovered at 350 for 1 hour or until the internal temperature reaches 165 degrees.

Meanwhile, mix the glaze ingredients until blended. Brush on top of the meatloaf with the ketchup mixture and bake for 5 additional minutes. Remove from the oven and allow to rest for 10 minutes before slicing and serving.
