So you may have seen these on social media too, I get it. Sometimes people like to perform their own cooking shows at their house and recipes become an instant hit. I heard this is one of them, although they aren’t a new thing. 😉 I have made a few other “traditional” ways that are more like a cake form like our Instant Pot coffee cake that we love.

When I want something smaller and more of a grab and go goodie, we will make a dozen coffee cake muffins which are pretty fun too. A lot of the ingredients needed for these would be used in a more cake. like variety too, except we use two different flours here. Of course these won’t be as fluffy, that’s the biggest difference.

Cinnamon Sugar Cookies

For your Frosted Cinnamon Roll Cookies, you’re first going to make your batter as you normally would with a traditional chocolate chip variety. There won’t be any chunks inside of it, rather the goodies are sprinkled on top once you make a divot to hold them on. 😉 You’re going to need;

  • 1 c brown sugar
  • 1/3 c melted butter
  • Vegetable oil
  • Egg and vanilla
  • Baking soda and Baking powder
  • Salt
  • 1/2 tsp cinnamon
  • All purpose flour
  • 1 c almond flour

Streusel Topping

Now on to the crumb topping you might also see on a muffin. Same idea but in order for it to not fall off you will press the top with your thumb or the back of a spoon so it stays.

  • 1/2 c all purpose flour
  • 1/4 c brown sugar
  • Ground cinnamon (could add a pinch of granulated sugar in there too)
  • Butter cold

Powdered Sugar Glaze

You have likely made this real fast for other goodies too. It is the easiest way to make a quick frosting of sorts to drizzle on instead of pipe like a thicker version. This is great on top of our mug coffee cake version too.

  • 1 c powdered sugar or confectioners sugar they call it
  • 2 tbsp lemon juice water or milk

Cinnamon Sugar Cookies

Preheat the oven to 360 F. In a deep bowl, mix dry ingredients – two types of flour, baking powder, baking soda, ground cinnamon. (remember this is how to measure flour properly with a measuring cup) Use a whisk. In another bowl, combine sugar, vegetable oil and butter, beat until fluffy or just until combined.

  • Next, pour vanilla extract into a bowl with butter and brown sugar, and also add an egg. Continue stirring until completely combined.
  • Add dry ingredients and mix until you get a soft and fairly crumbly dough. Cover with foil and leave for half an hour.
  • To make the streusel, add the flour, sugar, cinnamon, and cubes of butter in a bowl. Stir until you get an oily crumb mixture.
  • Use a spoon or your hands to form cookie dough balls, about 2 inches in diameter, and place on a baking sheet liked with parchment paper.
    • if you don’t want them to spread as much you can add 30 min. of chill time in the fridge at this point
  • Then make a deepening in each ball, pour streusel into it.
  • You can also make flatter cookies and sprinkle streusel on top as well.
  • Place the baking sheet in the hot oven and bake for 8-11 minutes.
  • The longer the cookies bake, the firmer and crispier they will be. Remove the finished cookies and let cool.

While it is cooling, make a frosting with lemon juice and powdered sugar. Ready cookies with glaze and leave for another half an hour on the table for solidification. Enjoy with chocolate stout cold brew! Cookies can be stored (once at room temperature) in a container with a lid to stay soft and chewy.

Cookies with Powdered Sugar Glaze

Another way to make a glaze similar to this one would be to buy a tub of vanilla or cream cheese flavor. Pillsbury or Duncan Hines have them for cheap. Then just open, pop it in the microwave for 30 seconds and it will loosen up to be poured over the top of all the things!! I do this for our healthy coffee cake (I mean all in moderation right).

If you need a lactose free variation to these that is possible too. I have to do this for my husband and you usually don’t even notice the difference. Use a plant based butter product, Country Crock has one, instead and almond milk works just fine too.
