These are truly the best banana muffins for kids because they can help you prepare them! It’s great when you can incorporate your children into the baking process. I have made mini banana muffins for a really quick cook time, regular and jumbo sizes.

Yellow Cake Mix Banana Muffins

I mean you can really use any flavor you like, spice will give you a deeper Fall flavor where white or yellow will allow you to taste the fruit more. If you can find banana cake mix you are even better off but that is rarely at our store. 15.25 size box is right.

You are going to need some Vegetable oil to make the batter. This or canola oil is best because it doesn’t have a flavor, applesauce works but will make it denser, pumpkin puree is another substitute.

You want to add your large Eggs at room temperature whisked into the bowl for best results.

How ripe should bananas be to bake with them?

You are going to want 5 very browned and mashed bananas. You want them to be as brown as possible but just before they turn black – that is too late where it will be watery inside and no good.

    If you aren’t ready to bake that day and yours are looking like this, put them in a bowl (because they may start to leak) and into the fridge. This will buy you a few more days until you’re ready.

    I just use a fork to mash and spoon to mix together ingredients in a bowl. I like paper muffin cup liners in my muffin pan – mini muffin muffin tin would work too, just adjust to less time, 11 minutes.

    Can you add chocolate chips?

    Optional add ins: 1/4 cup to 1/2 cup chocolate chips and/or chopped nuts, walnuts are probably best. You don’t want to add much more than half of a cup or so or it will weigh them down and not be as fluffy. Other ideas would be dried cranberries or white chocolate chips work well with these flavors.

    How Long to Bake Banana Muffins with Cake Mix

    If you choose to make make “regular” size like below you are looking at about 17-18 minutes, for mini it is quicker and closer to 11 or so. Jumbo is a fun one but takes 22 or so.

    Can you bake this in a loaf pan?

    Yes, we have done just that with our 4 ingredient banana bread recipe. Of course it takes a lot longer, closer to 50 minutes vs 18 but does come out more moist in the middle slices this way if you have the time.

    Can you bake banana muffins in air fryer?

    Air fryer muffins are about 12 min. Timing will vary slightly depending on the height of your shelf and oven temp. You want to take out immediately once they spring back when touched in the center!

    Tips

    Note: these won’t rise as much as if you were baking cupcakes because the bananas are rather heavy. You can see what they look like below. Believe me your family will love them!! In just 30 minutes flat, start to finish, you too can have some of the most amazing cake mix muffins ever.

    NO need for flour, baking soda, and all of the other ingredients you need to make traditional muffins. This one is just throw it together simple on a busy morning. Serve warm or at room temperature as is or with a little butter on the side and enjoy!

    Cake Mix Banana Bread Muffins Recipe

    This is our easy 4 ingredient cake mix banana bread muffins recipe! If you've never made cake mix banana muffins before you're in for a real treat for breakfast.

    Equipment

    Ingredients 

    • 5 large bananas, overripe, brown
    • 1/3 cup vegetable oil, or canola, pumpkin puree is good substitute
    • 3 large eggs
    • 1 box cake mix, we used carrot, spice is good too

    Instructions 

    • Preheat oven to 350 degrees.
    • Mash bananas in 1 bowl, not too much so they're liquid I like leaving it a bit chunky.
    • In another bowl mix cake mix, oil and eggs.
    • Add bananas and gently mix just until incorporated, do not over-mix.
    • If you want to add 1/4 c. chopped nuts and/or mini chocolate chips fold them in now.
    • Spoon into muffin liners, 3/4 of the way full and bake for 18 minutes or until they spring back when touched in the center. Do NOT overbake.
    • Remove and use a spoon to scoop muffins out of pan and on to a cooling rack, leaving them in the pan will overbake them and dry them out more.

    Mini cake mix banana muffins

    Follow instructions but bake in mini muffin pan for about 11 minutes or until top springs back, remove immediately from pan and on to wire rack to cool to remain moist.

    Can banana muffins be frozen?

    Many times I will make a double batch of these and save the rest for another morning. Just remember to cool muffins completely before wrapping and freezing them. To freeze them, wrap in foil or a freezer wrap, or freezer bags which is my preference.

    Can I freeze muffins in Tupperware?

    I wouldn’t because they’re not airtight and will get freezer burn easier. Label all packages with the name of the recipe and the date. These can be stored frozen for up to 3 months so there’s no hurry.
