I mean chicken soup in the Crockpot is good BUT add some thickness and it’s a heartier meal any time of the day. Typically you add noodles to this one with a thin broth, carrots and celery. This one takes it a step further to make it thick with some of the same ingredients.

Yes we all love our easy chicken pot pie recipe. This is kinda’ like it but without the crust! I make this a lot after we have had this meat the night before and have leftovers. I hate wasting food so coming up with a whole new one with the poultry in my fridge was a must. Now it is a regular dish.

Ingredient Notes

Fresh vegetables were used but in a pinch you could use a bag of mixed frozen peas and carrots, with halved green beans in there too, fresh mushrooms are great, diced onions, etc….. The only real difference is the texture, fresh usually becomes much softer.

Chicken breasts or thighs could be used too. They can be precooked before adding or whole medium sizes work too. I have used both, and sometimes together, depending on what I have on hand.

Then you will need a can of cream of chicken soup or homemade cream of mushroom will work too. This will make it creamy.

Use Milk or a dairy free alternative like creamy cashew milk to thin it out to your liking. You can add more later when done if it thickens up a bit too much. Chicken broth is an alternative but won’t make it creamy.

I add shredded parmesan cheese with the dairy the last 30 minutes so it can melt and get creamier but still offers that intense flavor we love.

The seasonings are really up to you I mean. There are suggestions below but add what you really love. If I have minced garlic on hand I’ll add that but if I am out that is okay too. If you wanted it to be spicy you could add a pinch of red pepper flakes at the beginning or end on the top.

with Egg Noodles

To add noodles you would boil until al dente on the side. Fold in 20 minutes before serving, fold together and let soften a little longer. Do the same for gluten free pasta, though that takes less time to cook.

with Frozen Chicken

Now you could make this with medium size breasts right out of the freezer. Crockpot frozen chicken turns out quite well actually and doesn’t really change the cook time as long as they are separated from one another before adding into the Crock Pot.

Tips

This really is a quick crockpot dump meal as you put it all in, turn it on and it will be done when you get home in the evening, those are the best. It’s chocked full of vegetables too which we love in this family. If you’ve only made chicken noodle soup and love it like we do this is a great alternative when you want to change it up a bit.

We make crockpot soup all year long, but really often during the winter months when it’s chilly outside and you’re ready for a warm meal in the evenings.

Add as many vegetables as you like really to this creamy chicken soup, the more the better really in our opinion. Serve with slices of garlic bread and a good meal is ready to be had.

Crockpot Creamy Chicken Parmesan Soup Recipe

Easy crockpot creamy parmesan chicken soup recipe you will love. Served with my beer bread it is an amazing meal during the winter months & easy to throw together in your slow cooker and have it cook on it's own all day!

Equipment

  • 1 slow cooker

Ingredients 

  • 2-3 medium chicken breasts, boneless, skinless
  • 2 cans cream of chicken soup
  • 1 cup chicken broth, if you want a soupier version
  • 2 cup carrots, peeled and chopped
  • 1 cup mushrooms, halved
  • 1 cup onion, chopped
  • 1 bay leaf
  • 1/2 tsp thyme
  • 1/2 tsp sage
  • 1/2 cup parmesan cheese, add in during final 30 minutes
  • 1/2 cup milk, add in during final 30 minutes
  • 1 pinch Salt to taste

Instructions 

  • Place medium boneless skinless chicken breasts on the bottom of crockpot. 
  • Add vegetables and seasonings, whisk together water or broth and cream of chicken soup, pour on top. 
  • Cover and cook on low for 6-8 hours or on low for 4-6 hours. 
  • The last 30 minutes of cooking time, add in milk and parmesan cheese, shred chicken breasts with two forks and put on lid to continue cooking.
