Have you tried making breakfast in your hot air machine yet?? There’s tons of flexibility to these. Yes fried potatoes are great but done this way you get that same bit of crispy on a healthier note. Either way it’s an easy air fryer recipe here at our house.
Looking for an air fryer breakfast recipe that’s super cheap and everyone will love? You just can’t go wrong with taters right?? You can use any brand of machine you have. I have a few, like an AirWave, Cosori and the dual Ninja Foodi as well.
There are tons of ways to make these. Leave them plain with just some salt and pepper, add diced up bell peppers and onions, or feel free to add meat to make air fryer corned beef hash out of them too.
One thing you can always find in your local grocery store, no matter what time of year, would be potatoes! Yes you can cook frozen hashbrowns in air fryer if all else fails, this is better though.
Tips: My Favorite models are the Cosori or making Ninja Foodi recipes with the lid that is attached.

Should you leave potato skins on?
Do NOT remove those potato skins, you’ll lose all those great nutrients and keep them together better too. They really help support a healthy gut because of the fiber they contain, eating them increases feelings of being full and satiated too. If you’re looking to get the most nutrition out of your russet, sweet, or red potatoes keep the peel on!!
When small like this it adds to the flavor, when making air fryer potato wedges it keeps them more in tact, and with our Instant Pot potato corn chowder I don’t even peel them.

Ingredient Notes
Now we are making diced potatoes in an air fryer to start our busy day in this case. More firm would be russet or red. Yukon Gold will be softer and take a tad less time, not holding it’s shape as well as others. Leave the skins in tact.
Olive oil will coat the outsides to keep them moist and you can add a spray at the end if you want them more of a golden brown too. Avocado oil would be the best substitute.
As for the vegetable add ins we are going to suggest that you dice up and add air fryer onions, bell peppers, green onions work well since they are all rather firm and take about the same time to get tender.
Optional: If you love some heat you could chop up some fresh roasted jalapenos if you wanted to make it real spicy!
As for the seasonings you should use your favorites but salt and pepper are the basics. Lawry’s seasoned salt is a nice add in for more of a pop. Seasonings that add spice would be red pepper flakes or dry Sriracha.

What else can you add?
Cheese and bacon bits are optional of course but one or both are a must if you ask me. If you want more vegetables in the mix you could half some baby bella mushrooms. And as far as seasonings the sky is the limit really.
Can I cook eggs with it?
Yes!! Actually this is a great option actually. So you would follow the directions below and add the air fryer egg bites cracked into silicone muffin cups in the last few minutes right on the top. Then you can enjoy them together!

Tips
If you choose to do so, this is how to blanch bell peppers. I tend to be in a hurry when using my hot air machine so I don’t bother. After dicing press the tops and sides with a few paper towels to remove as much moisture as you possibly can so the oil can stick.
You’re going to want to preheat your air fryer before adding any food or they will not get as crispy as if you put them in from the get go. You want to shake the contents inside your air fryer basket every 5 minutes for optimal results.
How the cook time is going to vary: The larger you dice your vegetables and potatoes, the longer it will take. You can make different types of breakfast potatoes too of course. Use red potatoes and sweet potato in air fryer vs. russets but it will take a bit longer to get tender. Yellow will be similar cook times.

Air Fryer Breakfast Potatoes Recipe
Equipment
- 1 Bowl
- 1 knife
- 1 cutting board
- paper towels
Ingredients
- 3 large potatoes, russet
- 1 smal onion, yellow, diced
- 1 whole green pepper, diced
- 2 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
- 1 cup cheese, shredded, optional
Instructions
- Dice potatoes into equal small bite size pieces. Press a few paper towels on top and roll them up inside to remove as much moisture on the outside as you can.
- In a mixing bowl add diced potatoes (with skins on), onions, green peppers and seasonings. Drizzle with olive oil and stir so everything is coated.
- Preheat air fryer for 5 minutes at 400 degrees.
- Pour mixture into air fryer basket and cook for 15-20 minutes shaking every 5 minutes. Take out once potatoes are tender with a fork and browned as much as you'd like.
- If you want to add cheese you can sprinkle it on the last 3-5 minutes to melt, or dump potatoes when done in a dish, sprinkle cheese on top and microwave for about 2 minutes until it is melted.
