As soon as October hits I am all about everything pumpkin!! If you’re anything like me you do too and you want it to be EASY to make. These copycat pumpkin pop tarts are great!! You only need a few ingredients which is a huge win in my book. They are inexpensive to make and a quick sort of pumpkin pie recipe too. (affiliate links present)

Can pies be baked in Airfryer?

Absolutely, and this way is a great method. Everything is better mini sized anyway right?? Kinda’ like the middle of our pumpkin pie sheet cake that we make every Fall.. You can make a quick and easy glaze on the top or just enjoy as is right out of the oven or air fryer. Yes you can bake these either way. Even phyllo dough could be used as the top and bottom crusts.

We bake these 2 ingredient pumpkin muffins type of recipes a lot if we want a treat quick. For this we did start with ready made crusts as we used cake mix with the recipe above. Beyond that the filling is made from scratch, well if you consider canned pumpkin puree homemade. 😉

What setting should I put my air fryer on for pies?

Air fry or air crisp if you are using a Ninja Foodi with the lid that IS attached is what you use for these. If you want to cook it in your Cosori you’ll want to use this recipe, then the timing and temp in our air fryer hand pies recipe. I am sure this season you have a can of pumpkin puree in your cupboard so just grab that.

You can make these the same exact way but with just a can of pie filling like we did with our Air Fryer Blueberry Hand Pies. If you have a bunch of people over you could make 1 tray of each so there are choices for everyone. Any flavor works.

Pumpkin Pie Hand Pie Ingredients

  • I used premade refrigerated pie crust
    • if you want to use crescent rolls
  • sugar
  • brown sugar
  • Pumpkin puree 15 oz
  • Vanilla
  • 1/2 tsp Pumpkin Pie Spice
  • 8 oz cream cheese
  • egg wash 
  • a round cookie cutter or pizza slicer to cut into 16 equal rectangles
  • melt frosting for glaze
  • or mix powdered sugar and milk or heavy cream to make a “homemade” version
  • parchment paper is great for a quick clean up

How long do you cook pies in the air fryer?

No matter whether you fill these with this inside YUM or make Air Fryer Peach Hand Pies they are all perfect for gifting or bringing to a party. Just want a quick dessert using refrigerated pie crust at your house. Pumpkin pie flavor is our absolute favorite during this time of year!

Mini Pumpkin Hand Pies

How to Make Mini Pumpkin Pies

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a bowl add the pumpkin puree, vanilla, pumpkin spice seasoning and white sugar.
  • Whisk together until combined. Set aside. In another bowl beat the softened cream cheese until smooth. Then add the powdered sugar and beat again until combined.  
  • Unroll the first of the 2pk pie crust and place on a parchment covered baking sheet. Or make our 3 ingredient homemade pie crust, two of them instead.
  • Cut the excess top and bottom horizontally that doesn’t fit within the baking sheet with parchment paper.
    • or cut into 16 equal pieces to make 8 total one on top of the other.
    • pumpkin shaped cookie cutter (2 each) can be used too.
  • Place those edges on the left and right, molding together to create a rectangle shape about the size of the pan. Place the pumpkin mixture in one piping bag and the cream cheese mixture in another. (or use freezer bags with corner snipped off)
  • Create a squeeze of the pumpkin mixture about 3 inches long and a log of the cream cheese next to it the same size. Repeat this 8 times for 8 hand pies, keeping about 3 inches of width between each set of mixtures to press together the edges. You will create 2 rows of 4.
  • Place the second pie crust on top of the piped mixtures to assemble the pies.
  • Use your fingers to press down the dough in the spaces between the pie filling. This will help give you a clear indication of where to cut. After pressing the dough, use a pizza cutter to cut out the 8 hand pies.
  • Cut once horizontally, and 3 times vertically. Cut any excess from the tops and bottoms to create uniform pies. Remove the excess dough and rearrange the pies on the baking sheet at least an inch apart from each other.

Cut 2 small slits on top of each hand pie. Then use a fork to seal the edges of each pie. In a small bowl whisk the egg with 2 tablespoons of water. Brush this over each hand pie. Bake in the oven for 25-30 minutes or until golden brown on top.

Here are the basic steps to follow and a few tips to keep in mind while you are making these dessert hand pies.

How to Make Homemade Pop Tarts

  1. I used premade pie crust, you could make your own.
  2. Make sure it is room temperature and roll it out.
  3. You could use a biscuit cutter to make large circles, then place on parchment lined baking sheet
  4. Mix pumpkin pie filling ingredients in a bowl
  5. Put filling into the center, then crimp the edges of each one to make pumpkin hand pies. Can use fork to seal edges too.
  6. Put a small slit on top of the pie crust pieces
  7. Brush with a bit of an egg wash if you want tops to be shiny.
  8. Bake in preheated oven at 350 degrees for 25 minutes or until tops are brown.
  9. Dust with powdered sugar and sprinkle with cinnamon and/or pumpkin spice when done

Takes about 25 minutes to prep and bake these. That is quick for a great pumpkin recipe for the holidays. We love Instant Pot pumpkin butter too if you want another winner.

Can you use puff pastry to make pumpkin hand pies?

You could use defrosted puff pastry instead of refrigerated pie crust like we did here. You would want to watch the time closer since the dough is lighter and will likely take less time to bake in the air fryer though. A great alternative though.

What is the difference between a pasty and a hand pie?

The main differences between a pasty and a hand pie lie in their origins, fillings, preparation, and sometimes the dough used. Both are delicious, portable pastries filled with savory or sweet ingredients. Both can be baked in the oven, air fried or deep fried in oil.

Equipment

  • 1 baking sheet
  • 1 Bowl

Ingredients 

  • 1 can pumpkin puree, 15 oz
  • 2 pack pie crusts, refrigerated, thawed, rolled out
  • 1/4 tsp vanilla
  • 1/2 tsp Pumpkin Pie Spice
  • 1/3 c sugar
  • 8 oz cream cheese
  • 1/4 c powdered sugar
  • 1 egg wash, whisked, for wash on top of crust

  • Cut once horizontally, and 3 times vertically. Cut any excess from the tops and bottoms to create uniform pies. Remove the excess dough and rearrange the pies on the baking sheet at least an inch apart from each other.
  • Cut 2 small slits on top of each hand pie. Then use a fork to seal the edges of each pie. In a small bowl whisk the egg with 2 tablespoons of water. Brush this over each hand pie. Bake in the oven for 25-30 minutes or until golden brown. Remove from the oven and let cool for a couple minutes. Enjoy!
  • Air Fryer Pumpkin Hand Pies – Preheat air fryer to 350 degrees for 5 minutes. Follow instructions as described above. Spray basket with non stick spray. Set inside without overlapping. Brush the tops with your egg wash in a small bowl and sanding or granulated sugar for added sweet. Air fry for 10-12 minutes or until they are golden brown on the top
