Roasted Vegetables in Air Fryer
We’re going to make roasted tomatoes, zucchini, bell peppers, and red onions together in this one. The seasonings are what makes this a Mediterranean blend for sure. You can buy bottled at the store with it all mixed together but it is easy enough to make it on your own too.
You could use any color of air fryer peppers you wanted really, or a mixture of a few. Yellow instead of red onions would be fine, you could even add halved mushrooms if you wanted or kalamata olives would be a nice touch. Change it up a bit every time you make it but leave the base as is because it’s just so good!

What are Considered Mediterranean Vegetables?
Typically the veggies in this category would be; tomatoes, cucumbers, bell peppers, eggplant, zucchini as well as the addition of olives and garlic in almost all their dishes. This may have got you thinking about other items you could add into this dish. Some are better than others as far as keeping the texture tender but not mushy. I wouldn’t add leafy greens.
Artichokes, beets, broccoli, brussels sprouts, green or red cabbage, carrot, celery, mushrooms, sweet potato, okra, the list goes on and on. It is really the seasonings though that transitions these into the Med category.
Another common choice would be collard greens which we like but wouldn’t cook it this way. Instead you really want those leaves to get very tender which works best in a slow cooker or on the stovetop though.
We have shared how to cook frozen vegetables in air fryer too, these are fresh though. During the summertime of course most all produce is nice, fresh, and easy to find. We choose these because they are traditional and easy to find year round really.
Other than the tomatoes everything is pretty cheap too which is nice. It is best if you can buy cherry or cherub tomatoes as they are already small and you can just slice them in half. Larger varieties will have a lot of juice and not achieve the texture you would ultimately want.
How Long to Cook Air Fryer Mediterranean Vegetables
About 10 minutes will get them all tender. To then make it into an actual meal or brunch item you could boil pasta until al dente, drain, and toss everything together. That will create a type of Mediterranean pasta salad of sorts. Served warm with our dressing blend you could serve as is as a vegetarian meal or as a side.
If you wanted to add some starch for a heartier dish you could follow our air fryer potatoes and onions recipe but with the seasoning blend suggested below. You’re going to need;
Air fryer Roasted Vegetables Ingredients
- Large bowl
- A package of small cherry tomatoes halved
- 2 cups zucchini chopped
- Red onion sliced
- Chopped or minced roasted garlic in air fryer is amazing
- 2 bell peppers in the colors of your choice, seeds removed, cubed
- Olive oil
- 1 tbsp Italian seasoning
- Salt and pepper
- Olives halved are optional but fantastic
What’s a good dressing for roasted vegetables?
You could just drizzle on some bottled Italian dressing for a quick option, but our homemade blend is simple to make. Adding a dressing period is optional of course but a fantastic addition to add a ton more flavor to the dish. You’re going to just whisk together;
- 2 tbsp parsley fresh, chopped
- 3 tbsp olive oil
- 1/4 lemon fresh, squeezed
- salt and pepper to taste
Can roasted vegetables be made the day before?
I mean technically yes they can and you could refrigerate them for the next day and reheat them but I wouldn’t recommend it. It’s all about texture and fresh is always best. Once it cools down this will get a bit softer and left overnight in the fridge in a container it will soften even more.
Not good. Even reheating in the air fryer won’t get it back to the crispy edges you had when it was done to begin with.
Can you freeze roasted Mediterranean vegetables?
This would be even worse. Like I said, once cooked you really need to eat this immediately within the first 30 minutes ideally. Same goes with other varieties like roasted brussel sprouts and cauliflower, they just don’t save well no matter what you do.
Now you can make roasted zucchini and squash in the oven, this is how we made this mixture air fried this time;
- Preheat air fryer to 400 degrees F for 5 minutes.
- In a large mixing bowl, add halved cherry tomatoes, zucchini, onions, garlic, bell peppers, 2 tbsp oil, Italian herbs, salt and pepper.
- Mix together. Transfer to your air fryer basket and air fry vegetables for 10-12 minutes cooking time. Shake the basket every 4 minutes or so.
- Remove vegetables and add to a large salad bowl. Whisk together dressing and pour on top. Toss together and serve.
You could cook pasta separately until slightly al dente and fold that in. If you do add noodles you will want to double the amount of dressing you make so everything is nicely coated.
If you want to know about roasting frozen vegetables here are the instructions. Fresh in the oven you can do so on a baking sheet. Use same recipe but preheat oven to 400 and bake for 30 minutes or so. Flip contents every 10 minutes, remove when tender and pour on dressing if you want to add that.
Remember to always serve immediately for the best texture and flavor so plan accordingly when you’re cooking your main dish. - 8 oz cherry tomatoes, halved
- 2 c zucchini, chopped
- 1 c red onion, sliced
- 3 tbsp minced garlic
- 2 bell peppers, color of your choice, seeds removed, cubed
- 2 tbsp olive oil
- 1 tbsp Italian seasoning
- 1 pinch salt and pepper
- 1/2 c olives, halved
- dressing
- 2 tbsp parsley, fresh, chopped
- 3 tbsp olive oil
- 1/4 lemon, fresh, squeezed
- salt and pepper, to taste
Instructions
- Preheat air fryer to 400 degrees F for 5 minutes.
- In a large mixing bowl, add halved cherry tomatoes, zucchini, onions, garlic, bell peppers, 2 tbsp oil, Italian herbs, salt and pepper.
- Mix all together. Transfer in the air fryer basket and air fry for 10-12 minutes. Shake the basket every 4 minutes or so.
- Remove roasted vegetables and add to a large salad bowl. Whisk together dressing and pour on top. Toss together and serve.
- You could cook penne pasta separately and fold that in, if you do add noodles you will want to double the amount of dressing so everything is coated well.
