Our Instant Pot vegetable beef soup with potatoes is a great recipe! It costs less than $20 for the whole meal which feeds all five and done in 20 minutes. Similar to pressure cooker beef pot pie soup but healthier.

Instant Pot Vegetable Beef Soup

This one pot meal with ground beef, carrots, green beans and carrots is cheap yet full of protein and a favorite amongst my family members. Yet another Instant Pot recipe you too should try sometime soon.

You can use any type of electric pressure cooker to make this. We have a Crockpot Express, Mealthy and Ninja Foodi as well. You can saute and brown the meat to begin with, then add the rest of the ingredients. The best way to make a one pot meal with easy cleanup.

If you are new to this way of cooking you’re in for a real treat. You can make something that would normally take hours on the stovetop to get tender, under 45 flat.

Ingredients Notes

You want to add a can of petite Diced tomatoes for a chunky texture but with some tomato sauce with it to to make the soup umami.

For liquid I like to use Chicken broth but it is really your preference, if making pressure cooker vegetarian soup then use vegetable broth or pressure cooker bone broth

As for the vegetables you want to have red or russet Potatoes diced into large bite size chunks. Carrots should be peeled and sliced into thicker dials. Celery is optional but nice diced. Yellow or white Onions go in everything for flavor and Green beans we added were fresh. You could even chop up 1/4 of a cabbage and throw that in

For the protein I add lean Ground beef. I mean you can leave out if you want Instant Pot vegetarian soup but we are going for all the things here.

Should you use fresh or frozen vegetables in Instant Pot soup?

That depends on the texture you desire. If you are adding fresh produce I would choose things like carrots, celery, carrots and fresh green beans as those will stay in tact better under high pressure. More delicate choices like broccoli and cabbage cook very quickly, 1-2 minutes and will fall apart in a pressure cooker soup. Frozen mixed vegetables with peas, carrots and corn work best in that case.

Variations and Substitutions

I make this with fresh vegetables but frozen veggies would work. 😉 They will have a different texture though, a bit mushier. I used what looked fresh and wasn’t expensive at the store. Literally the entire meal including the garlic rolls was about $20. It fed all 5 of us with lunch for 2 left over for the next day, I call that a major win!

You could use canned vegetables if you wanted to. Just note that they will soften quite a bit and the texture won’t be as appealing.

You could opt to make our Instant Pot stew meat with potatoes option instead of ground beef but with that tougher meat I would recommend dicing the pieces up rather small.

If you’d like softer vegetables allow pot to natural release for 3 minutes vs. a quick release noted. Then remove the lid and serve immediately for best results. We have a crockpot vegetable beef soup version here too.

Vegetarian option

You can omit the ground beef or meat entirely and follow the rest of the directions with vegetable broth instead. You could add tofu blocks at the end. When the soup is done remove lid and set to saute. Add this into the hot broth and allow to bubble for 1-2 minutes until warmed and serve.

What to Serve with

This easily made vegetarian if you wish. We’ve added some shaved parmesan cheese to the top once served. This is a really a good addition to the meal. Serve our 3 ingredient beer bread and it’s the perfect meal! Or serve with a side of frozen rolls in air fryer we were set for the evening.

  1. Delicious, this is the 1st time in my life that I loved my Vegetable soup. Will make this again and again.

  2. If you don’t mind me asking, what are the size of your cans of tomatoes? It just says two, but two of what? Thanks!

  3. My husband prefers beef stew meat to hambuger in his vegetable beef soup? Would I have to change the cooking time if I used stew meat? Also you used chicken broth instead of beef broth, is that correct?

    1. You could use either type of broth. I am not sure of the cooking time for stew meat vs. hamburger but it would be a bit longer depending on how tender he likes it.

      1. I just made this recipe using a pound of stew meat cut into bite size portions and it turned out great. Sauted it with onions and garlic to start.

  4. My maiden voyage with my Instant Pot. This soup is delicious! Will definitely be making this many times in the years to come. Thanks for the recipe.
