This cheesy Instant Pot Mexican pizza is amazing!! With layers and layers of cheese, sauce and ground turkey it’s like a wonderful enchilada lasagna!

Ninja Foodi Mexican Pizza
I think we all love layers of meat and cheesy goodness for dinner. This is the ultimate in comfort food cooked in just 4 minutes! That is right!
If you don’t have a pressure cooker I’d highly recommend one. You can cook a traditional meal that normally takes several hours in your crockpot in just 15 minutes flat typically. Other brands that work the same are Crockpot Express and the Ninja Foodi.

- I HIGHLY recommend you buy this non stick pot.
- You should still deglaze pressure cooker after sautéing but it won’t have as many issues with this better liner.
For reference, this is the pressure cooker I have (a 6 quart) and use for all recipe creations.

Here’s how easy this cheesy Instant Pot Mexican pizza is to make. No wonder it’s on our list of Instant Pot kids recipes!
First you will need a Ninja Foodi, Crockpot Express or Instant Pot to pressure cook. We have a 6 qt. Instant Pot.
A 6″ or 7″ springform pan is necessary too. 6 inch worked great using small corn tortillas.
If your days are non stop dropping off kids, grocery shopping, cleaning, and working, you don’t have a lot of dinner prep time.
My days usually look something like this and I only have under an hour to prep, cook, and serve dinner for five of us.
I’m all about a nutritious meal packed with protein and flavor, this one tops the list at our house!
Mexican Pizza in Instant Pot
- Ground Turkey
- we used Foster Farms brand
- or lean ground beef
- Cheese – we used cheddar and pepper jack
- King Size corn tortillas – about 7″ size
- Enchilada Sauce – we used medium
- Olives
- Green Onions
- 6″ Springform pan
- Instant Pot or Pressure Cooker
Optional add ins:
- Taco seasoning packet – add in when cooking meat
- Can of diced tomatoes – to sprinkle in between the layers, or use pico de gallo salsa
- or add in 1/2 cup with meat when cooking
- Refried beans – to add a thin layer when you’re layering
I am telling you this is so good and perfect for two people to split!
Mexican pizza Instant Pot
The two different cheeses give it great flavor. Olives are great on everything and you can choose the heat level for your enchilada sauce.
- This recipe below is enough to make two Instant Pot Mexican pizzas. If you only want 1 just cut it in half.
Of course how much cheese, meat, and sauce you want to layer on is totally up.
Oven Mexican pizza directions:
- Follow these Mexican pizza casserole directions or:
- Just layer like instructions state below
- cover springform pan with tinfoil
- put in your oven or toaster oven for about 15 minutes at 350 degrees
- take out when cheese is melted.

Time needed: 12 minutes
Instant Pot Mexican Pizza
- Prepare
Brown your ground turkey on the stove or inside your Instant Pot with olive oil on saute setting. Add minced or fresh onion and seasoning salt to taste.
Remove from pot and rinse inside of pot. Shred your cheeses and dice green onion. Pour 1 1/2 c. water into your Instant Pot with a small trivet inside.
Spray the inside of your springform pan with non stick spray. - Layer
In your 6″springform pan start layering your Mexican pizza.
Layer tortilla, cheeses, cooked ground turkey, olives, green onions, enchilada sauce.
Then the same layering continues until you’ve used 4 tortillas and topped the last layer of toppings. - Cook
Cover with tinfoil, put on trivet inside your pot, and close your lid and steam valve. Set Instant Pot to manual, pressure, high, for 4 minutes.
Allow to naturally release steam for 4 minutes, then release rest of steam. Lift out of pot carefully using hot pads.
Place pan on a plate. Unhook side of springform pan and lift outside of pan off. Use a spatula to slide Mexican pizza off bottom of pan.
Pour more enchilada sauce and chives or green onions on top, slice into 3-4 pcs. and serve! (This recipe makes 2 Mexican pizzas so if you only want 1 just cut the recipe in half)

Ingredients
- 1 lb Ground Turkey or ground beef
- 10 oz. can enchilada sauce
- 1 c Pepper Jack cheese or more
- 1 c Cheddar cheese sharp, or more if desired
- 1/3 c Green Onions
- 8 tortillas corn, 7" size
- 1/2 c Olives sliced
- 2 tbsp minced onions or 1/4 c fresh diced onions
- seasoned salt
- 2 tbsp olive oil
Instructions
- Brown your ground turkey on the stove or inside your Instant Pot with oliveoil on saute setting, add minced or fresh onion and seasoning salt to taste. (can add taco seasoning now) Remove from pot and rinse inside.
- Shred your cheeses and dice green onion.
- Pour 1 1/2 c. water into your Instant Pot with a small trivet inside.
- Spray the inside of your springform pan with non stick spray.

I've never used a springform pan in the IP. You said this recipe is enough to make two pizzas. Can you stack the springform pans on top of each other and cook them at the same time? Any changes to the recipe?

Do you have to have a springform pan for the instant pot? Cant you just layer inside the pot? Of course when its done you cant take out all in one piece just wondering if it would work wthiut it?

No you must use a pan because the IP works with liquid in the bottom or it will trigger burn message and not work.

For this particular one yes it would work. You are just warming it up so the cheese melts everything together.
