Chicken fajitas are our favorite meal at restaurants but I wanted to make it cheaper at home. With a little experimenting I figured out how to make them for a fraction of the price. Now it is one of our favorite crockpot recipes!
These ingredients are healthy, incorporate veggies, and tastes amazing stuffed inside a small tortilla with toppings. I have done this throughout the whole year. If you are someone who only thinks about their Crock in the Fall, don’t!! Yes I do love my pressure cooker but when we have a really busy day I still love this baby.
What is the best chicken to make fajitas?
I tend to choose breasts just because they take a bit longer to cook and I generally am gone all day at work, but large thighs would work as well. The latter tend to take a bit less time but offer a lot more flavor so go with your favorite cuts.

Crockpot Fajitas with Frozen Chicken
You can make this one with fresh, defrosted or as Crockpot frozen chicken breasts. Believe it or not, the cook time doesn’t change with it either way as long as your pieces are broken apart before you start. SO if you’re forgetful like me at times this may save dinner for sure.
The Best Vegetables to Add
I will start by saying I typically do not like onions or bell peppers in anything, other than this and our fajita soup. BUT they get so very tender this way and add so much flavor that I can overlook it, and quite enjoy them too (and surprisingly so do my kids).
Then you want a jar of salsa, use your favorite one but chunky style is best. If you don’t want any heat you could substitute for the same amount of diced tomatoes
What to Use Instead of a Fajita Seasoning Packet
You could buy and use the packet of spicy fajita seasoning or taco seasoning at the store but really this is How to Make Fajita Seasoning yourself. That’s really a mixture of seasoning salt, cumin and some heat like chili powder.

Can you use chicken thighs instead of breasts?
Chicken breasts is what we use but you could easily make boneless skinless chicken thighs Crockpot with the same other ingredients if you preferred. Keep in mind those are typically smaller and thinner so timing likely won’t be as long.
Can you cook on high?
I do not recommend cooking meat on high period. The whole point of this machine is to “slow cook” for a longer duration of time to get the proteins to become incredibly tender. Yes, technically you can cook on high in about 4 hours but the meat will not be as fall-apart tender.

How do you make fajitas spicy?
The main three are the meat, salsa and seasoning packet. The rest are optional but highly suggested to make it bulked up with lots of veggies and onions. If you wanted to add heat to make it spicy I would suggest diced roasted jalapanos.
Add more chili powder or cayenne powder if you want more spice or less salt if you’re watching your intake but these measurements turn out amazing for us! It is a pretty inexpensive and quite healthy crock pot recipe too which I love.


Crockpot Chicken Fajitas Recipe
Equipment
- 1 slow cooker
Ingredients
- 4 medium chicken breasts, fresh is best, if frozen they need to be broken apart and small
- 1 pkg fajita seasoning, 2 oz, or taco seasoning
- 16 oz salsa
- 2 large bell peppers, red and green sliced thick + 1 onion if desired
Instructions
- Chop onion and bell peppers into large chunks. Place chicken breasts at bottom of pot (if breasts are unusually thick and large cut them in half first). Sprinkle meat with taco seasoning.
- Put onion and bell peppers on top of meat, then pour jar of salsa on top of everything.
- Cover and cook on low heat for 6 hours or until meat it shreds easily with 2 forks. Shred, stir, and serve inside tortillas with sour cream and cheese!

Made With Frozen Chicken
There is no change in timing with these. You do need to separate them first though, you can do so under cool water while pulling apart. Note that there will be extra liquid in the bottom of the pot with frozen pieces which will slightly dilute the flavor vs. using fresh.Nutrition

What do you serve with chicken fajitas?
We usually serve these inside air fryer tortillas with guacamole or slices of avocado. Some pico de gallo and/or salsa is a great add in there too with a lot of shredded mixed cheeses. The already done Mexican blend at the store is usually what I grab because it has more taco seasonings sprinkled within it too.
Veggies like shredded lettuce gives you a nice crunch. Instant Pot refried beans homemade are great because they are easy to prepare when canned. BUT if you have never made these babies homemade you should. Click on the blue link above and give them a whirl, you will likely never go back.
How to Save Leftovers
I will tell you that you can reheat the next day but the peppers will be rather soft, on the mushy side. If you make tacos out of it again it isn’t as big of a deal I feel. Make sure it cools completely, store in an airtight bag and keep in the fridge for up to 3 days.

We love this dish SO much we have ventured out and made air fryer fajitas too the other week. I used shrimp once and then thin strips of beef the next. Those are amazing and do have a different crispy texture on the outside for sure. I suggest you try both with your brood and see which you prefer.

I made this with chicken cut into fahita strips. Let it cook the full time. Big mistake, good flavor but the chicken was dry and all of it was to bland. Will have with salsa and use full breasts next time
I don’t see that you added any liquid to cook this… the chicken doesn’t dry out?
I cooked with chicken broth. Cause I don’t understand how you don’t put any liquid in it. It turned out amazing. Definitely going to make this more often.
