Bisquick banana bread is one of our favorite quick easy dessert recipes. If you have overripe bananas and you’re like me you hate to waste them. Baking with them makes every sweet bread moist and full of flavor. Give this one a whirl next time you have a few. (affiliate links present)

Bisquick Banana Muffins

Ok so you could bake this faster with a muffin tin too if you wanted instead of a 9×5 loaf pan. Same batter but cuts the time in the oven quite a bit. 18 minutes is regular size while this is how long to bake mini muffins if you want them bite size and “so cute”.

The easiest way we’ve made this in the past was to use cake mix. I still swear by our 4 ingredient banana bread to this day, but this is great to add to the list too. Beyond that are the add ins like; crumble topping, adding crushed nuts or mini chocolate chips. Let’s go over the basics first though. ๐Ÿ˜‰

What Can You Make with Bisquick other Than Pancakes?

We first made Bisquick chocolate chip cookies for dessert and those were so good. When we had overripe bananas at home I thought you should be able to use this once again for a delicious breakfast, it did……and the list goes on and on from there…..

You could use the “regular” yellow box or the heart healthy style you see here. One has less fat in it so it is healthier but won’t be as moist if you had to compare the two side by side. The whole thing starts with these yellow fruits though. The browner the better, but catch them before they’re completely black.

The closer to deep brown they are the sweeter the taste of any baked goods you use them in. Not that you couldn’t use yellow firm ones but you will certainly taste the difference, it will be more bland.

So just mash them up in a bowl and set that aside. You’ll want to cream together the wet ingredients like the butter, oil, sugars etc… In another bowl mix together the dry ingredients. Since the leavening agents are already mixed into the baking mix there’s less to do than if you were making completely from scratch.

Of course the add ins at the end are up to you. Love nuts then go for it with some chopped walnuts maybe. Want to incorporate some mini semi sweet chocolate chips, you could add 1/2 cup of those too at the end. I like to add all the extras at the end so they don’t break down.

  1. Bisquick – there is a gluten free version too
  2. Sugar
  3. Milk whole is best
  4. Vegetable oil
  5. eggs
  6. Vanilla and cinnamon
  7. 3 large bananas

And whatever mix ins you want to add beyond just the mashed ripened bananas. This time we used a streudel topping kinda’ like our muffin crumble topping recipe. You can make this numerous ways but I think it takes any good sweet bread into a WOW piece for real. Not only does it add more sweetness with every slice but it adds texture as well. Oats can be incorporated or left out.

Can you use Bisquick instead of flour?

No, it’s not the same. There are other ingredients mixed within it vs. just using all purpose flour for baked goods. It has baking powder, fat, sugar and salt in it. If you substituted then you’d have too much of these 4 items in your batter and it wouldn’t turn out well.

You just incorporate some softened room temperature butter, brown sugar, cinnamon and a little more baking mix from the box. Use the back of a fork to just smush it together so it is well, crumbly. ๐Ÿ˜‰ If you wanted to make muffins bake for about 18 minutes until middle springs back when touched.

How to Make Banana Bread with Bisquick

  • Start out by preheating your oven to 350 degrees F. Lightly spray the inside of a 9×5″ loaf pan or line with parchment paper.
  • Mash super ripe bananas. In a bowl combine all other ingredients for bread other than your dry mix. Fold in bananas and then stir in Bisquick until you get a semi smooth batter.
    • Fold in chopped nuts now if you’d like.
  • In a small bowl use the back of a fork to mix together streusel topping until crumbly.
  • Pour 1/2 of your batter into the prepared loaf pan. Then sprinkle half of your streusel. Pour remaining half of batter on top followed by remaining topping on top side.
  • Bake banana bread for 45-55 minutes or until top is light browned and middle is no longer wet with just crumbs attached to toothpick. Do NOT over-bake.

How to save leftover banana bread

You want it to stay really moist right? To do this allow it to reach room temperature first. Slice what you want to enjoy and leave the rest of the loaf whole. Wrap tightly in plastic wrap and then aluminum foil over that. Store on the countertop for 3-4 days, reseal after opening every time.

If you need to freeze what is left, wrap it this same way. Freeze for 3-4 months. Allow it to sit on the counter to thaw out when you’re ready to enjoy it later. Then slice and warm in the microwave for 30 seconds and enjoy.

Equipment

  • 1 9×5 loaf pan
  • 1 Bowl

Ingredients 

  • 2 2/3 c bisquick
  • 2/3 c sugar
  • 1/3 c milk, whole is best
  • 3 tbsp vegetable oil, or use applesauce, sour cream or Greek yogurt instead
  • 3 eggs
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 3 large bananas, overripe
  • 1/2 c nuts, crushed, walnuts, optional

Streusel

  • 1/4 c bisquick
  • 1/4 c brown sugar
  • 1/2 tsp cinnamon
  • 2 tbsp butter, softened

Instructions 

  • Preheat oven to 350 degrees F. Lightly spray inside of 9×5" loaf pan or line with parchment paper.
  • Mash bananas. In a bowl combine all other ingredients for bread other than Bisquick. Fold in bananas and then mix in bisquick until you get a semi smooth batter.

  • ** If you want to make muffins fill muffin cups 3/4 of the way full and bake for 18-20 minutes or until top springs back when touched gently on top.
