Zucchini Bread in Your Air Fryer

I created this air fryer cooking time chart for dinners but it was time to bake!! I wasnโ€™t sure how well this would work vs. the oven but was pleasantly surprised. You have to use smaller loaf pans of course but is a great alternative during the summer so the house doesnโ€™t heat up.

You can make this in any bread of hot air machine. I have made this in a Cosori, AirWave and as a Ninja Foodi recipe. With the latter you will use the lid that is attached to bake this one.

Ingredients

  1. All purpose flour is the base for your dry ingredients
  2. Baking powder and your baking soda will help it rise
  3. Cinnamon will add flavor
  4. Nutmeg is optional but in the Fall is a great add-in
  5. Eggs should be added at room temperature
  6. Sugar granules give it a sweetness
  7. Oil, vegetable is best because it doesnโ€™t have a flavor
  8. Vanilla extract is suggested for a touch of warm sweetness
  9. Could fold in 1/2 cup nuts or mini chocolate chips if you wanted too

If you have your own favorite zucchini bread recipe you could definitely use that. Just remember that your air fryer basket will only fit 2 mini loaves, or a mini bundt pan. The latter would take about the same time to bake. Youโ€™ll need a mixing bowl and spatula too.

Slather cream cheese frosting on this when done for dessert, or enjoy with some air fryer egg bites in the morning. Either way itโ€™s pretty amazing. Just one of many of our best recipes here on our site.

Air Fryer Zucchini Bread

  1. Prepare

    In a small bowl mix together all dry ingredients. In another bowl combine eggs, sugar, oil and vanilla. Mix together. Slowly incorporate the dry into the wet mixture until combined well. Then gently fold in shredded zucchini. Spray 2 mini loaf pans with non stick spray. Divide batter in half between then.

  2. Bake

    Preheat air fryer to 310 degrees for 5 minutes. Add prepared loaves and bake for 30-35 minutes. Check at 30 with a toothpick in the center. Remove once there is no wet batter in middle and just crumbs are attached.

Tips

This is a very important step. That way your veggies wonโ€™t sink to the bottom and you also wonโ€™t add extra unnecessary liquid into your batter. That will weigh it down and it wonโ€™t be as fluffy as you expect it to be.

It is always best to spray the inside of the pans so they slide out when youโ€™re ready to serve them up. Then just throw the pans away when youโ€™re done. Made this way they make great gifts during the holidays too.

You can make all sorts of things like air fryer cake and other Ninja air fryer recipes this basic way. Youโ€™re going to use the same basic ingredients as you would normally do. Itโ€™s a smaller batch of batter though, you could half this if you only wanted 1 mini loaf too.

  • 1.5 c all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda

    1. Only reason I can think is you didnโ€™t put them in after preheating, then it wouldnโ€™t bake as long and at the same steady temp. the whole time, that is necessary
