No you don’t have to add frosting to the top of your air fryer banana bread recipe but why not?? I mean it can be a killer breakfast or dessert really. Next time you have overripe bananas give our easy air fryer recipe here a go. (affiliate links present)

I hate wasting. When I see naners like these on my countertop I’ve always made my Bisquick banana bread or one with a bit of shredded coconut in it. It is tough during the summer months when it is hot and the oven is not my friend though….. Now I can make a smaller version in my electric air fryer too!

Air Fryer Banana Bread Muffins

You could also make this in smaller forms. Using silicone baking cups it is a quicker way to get the same flavors you love. You would want to use our recipe below, or yours, and our air fryer muffins temperature and timing for those.

Ninja Foodi Banana Bread

Of course there are a ton of other overripe banana recipes you can make if you have a LOT of them, but this should be one. If you have never baked before like this it is easier than you think. I would use the measurements below because you shouldn’t fill your pan higher than 3/4 of the way full and this works well. With a Foodi you will use the lid that is attached.

Air Fryer Banana Bread Bundt Cake

You may be here because you recently made our banana bread bundt cake, wasn’t that great???!!! It is the moistest cake like sweet bread I have ever come up with and often times I make it dairy free as well.

How ripe should bananas be for banana bread?

First off let’s talk about that brown bunch here. You may not have the energy to bake that day. I have had those moments before (a lot) and have learned that I can buy myself a few more days by putting them in the fridge. Once they’re completely black they’re kinda done. I like them like you see here below. That way when I mash them up there is still a bit of larger chunks here and there.

What happens if bananas aren’t ripe enough for banana bread?

Well they won’t be as sweet. The blacker they are the sweeter the flavor will be. If you just must make it when they’re still too yellow you can put them on a sheet pan. Then into a 300 degree oven for 15 to 20 minutes. Kinda’ a kitchen hack for you, but honestly my kids usually finish them up before they get to the brown point so it’s rare I ever do this.

Ingredients

  1. Brown bananas
  2. Room temperature Egg
  3. Sour cream
  4. Oil
  5. Sugar
  6. All purpose flour
  7. Baking soda and salt
  8. A pinch cinnamon and/or splash of vanilla extract are up to you

You’re going to need this 7″ bundt baking pan. You could alternatively use the same size springform pan. The difference is the latter will get more done on the outside than the middle. As for the timing keep an eye on it. Don’t walk away and let time elapse leaving it into the hot machine. You’ll be disappointed because it will continue baking and be overdone.

Variations

If you needed dairy free you can use our Banana Bread Recipe No Butter recipe instead. And then there is the debate on adding chocolate chips or nuts. With our larger version of Ginger Banana Bread I usually don’t add either but 1/2 cup of either would be fine.

I am a strong NO nuts gal myself. I do not like crunchy “things” in my soft food. You could add crushed walnuts, maybe 1/2 cup but I’d rather add the same amount of mini semi sweet chocolate chips myself, or leave plain. Something else you could add is a bit of vanilla or almond extract too. That is personal preference really.

You can make the batter from our 4 ingredient banana bread muffins with spice cake mix instead of flour and leavening agents if you prefer.

How to Bake Banana Bread in Air Fryer

  1. In a bowl whisk dry ingredients and wet ingredients in another, fold in mashed bananas.
  2. Slowly incorporate dry flour cinnamon mixture into your wet bowl and use a spoon to mix. Leave bits of banana chunks in tact, in my opinion.
  3. Spray inside of bundt pan lightly, pour batter in and place inside air fryer basket or on wire rack in Foodi.
  4. Air fry at 310 degrees for a total of 28 minutes.
  5. Remove and allow to sit for 5 minutes cooking time.
  6. Put a plate on top and gently flip over cake pan so bread slides out.
  7. Slice and serve or drizzle with slightly melted vanilla frosting and enjoy.

This didn’t last long at all, never does. I could barely get a photo of it after this chunk was already eaten. None of our banana bread with mayonnaise slices ever make it past the first breakfast time.

Ninja Foodi Banana Bread without Pan

In my Foodi Facebook group someone did cook this with NO pan. They just sprayed the inside of the pot with non stick spray and poured the batter right in. A screenshot of their post is here and their directions to that method are below.

How do you store leftover banana bread?

It’s the same for air fryer zucchini bread. You want to wrap what is left in plastic wrap. Do not slice what isn’t eaten, it will stay moister that way. After wrapped, then slide it into a freezer bag and suck the air out of that before zipping closed.

It will stay fresh up to a week longer if after wrapping you store in your refrigerator. Then slice and take out just what you want to eat then and there. Leave the rest in the fridge until you’re ready to enjoy it!

Equipment

  • 1 air fryer
  • 1 7" bundt pan
  • 1 Bowl

Ingredients 

  • 2 large bananas, overripe, brown, mashed
  • 1 egg
  • 1/4 c sour cream
  • 1/4 c oil
  • 1/2 c sugar
  • 3/4 c all purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Instructions 

  • Preheat machine to 310 degrees F. Mix dry ingredients in one bowl and wet including mashed bananas in the other.
  • Slowly incorporate dry into wet and use a spoon to mix but leave bits of banana chunks in tact.
  • Spray inside of bundt pan lightly with non stick spray.
  • Pour batter into mini bundt and place inside air fryer basket. Cook at 310 degrees for a total of 28 minutes or until toothpick comes out mostly clean with moist crumbs attached and lightly brown on top. Remove and allow to sit for 5 minutes.
  • Put a plate on top and gently flip over so bread slides out. Can flip back over so bottom is more flat on plate.
  • Slice and serve or drizzle with slightly melted vanilla frosting and enjoy.
