If you loved our blueberry muffin in a mug you are going to love this one too. We have made all sorts of recipes in a mug I tell you. Why? Because it’s fun y’all. I mean when we are having a lazy weekend morning this comes in handy.

The teens can make one or two in a coffee mug themselves. A quick breakfast we love. WE don’t stop there though, we’ve even made pizza in a mug of all things for lunch on those days.

Want dessert for one? NO problem, use cake mix and water, or throw together our chocolate chip cookie in a mug. You’ll be blown away at how good those are. If you really love it you can mix the dry ingredients in baggies. Then pull one out, dump it into a mug, add milk, butter and egg and you’re set to “cook”. Here’s how you get started on your pancake in a mug recipe.

This easy breakfast only takes 5 minutes to throw everything together and 2 minutes to “bake” it to perfection. Below is just the basics for a simple pancake batter. From there you can certainly add a dash of cinnamon, small pinch of a handful of chocolate chips or dash of lemon zest.

Ingredient Notes

All purpose flour is the base of the dry ingredients you start off with. Then you want to mix together with Baking powder to allow it to rise a bit for a fluffy pancake texture. You do want to use a large mug to start with because it gets rather fluffy.

Sugar is added for sweetening it but a sugar-free alternative such as Splenda that has a 1:1 ratio to it should be fine too.

Milk or dairy free alternative works for the liquid element. If you do need an alternative I would go with vanilla almond milk or cashew is thick and creamy so that is best by far.

Egg added at room temperature will yield the best “baking” results so it is as light and fluffy as possible. Butter or plant based stick is the last thing needed.

    Equipment

    Ingredients 

    • 1/2 c all purpose flour
    • 1 tsp baking powder
    • 1 tbsp sugar
    • 1/3 c milk
    • 1 tbsp butter, melted
    • 1 egg

    Instructions 

    • In a small mixing bowl whisk together dry ingredients, then add wet and incorporate.
    • Pour this into a large mug that has been sprayed with non stick spray.
    • Microwave for 2 minutes or until toothpick pushed into the center comes out clean.

    You would just mix 1/3 cup Aunt Jemima mix + 3 tablespoons milk (or water) + 1 tablespoon vegetable oil (or melted butter) + Optional: a few drops of vanilla extract or a pinch of chocolate chips. Use a spoon to mix together into a batter. I like to spray the mug so it doesn’t stick. Heat on 100% power for 1.5 minutes.

    with Pancake Mix

    with Kodiak Pancake Mix

    If you wanted to make a single serving kodiak pancake recipe you would just add 1/2 cup of Kodiak cakes mix with 1/2 cup of water. Whisk together with a fork and then microwave for 1.5 minutes or until it springs back when touched in the center.

    You can use snack Ziploc bags to mix these 3 things together and save them for later, then add: I haven’t used bagged mix yet like we did with our air fryer pancakes but I imagine that would be fine too. You’d just have to cut it down to a very small amount so it didn’t overflow. When you’re ready into a large mug to cook in. Cook and enjoy with maple syrup.

    If you wanted to use a boxed mix to make microwave pancake in a mug, just use 1/2 cup of dry mix and adjust the necessary ingredients listed on the back. So if it tells you what to add for 1 cup of mix just cut recipe in half so there is less batter for 2 minutes.

    It really is that easy!! For one person in the morning it is perfection. My teenagers love it too because it’s quick and they don’t need my help to make a “complete meal” for themselves. They even make this as a sweet snack here and there and have experimented with a bit of protein powder and/or chocolate chips too.

    For a larger crowd, follow our pancakes in the oven instead. You can make a ton at a time in a casserole dish, slice and serve in no time.
