Oh my goodness!! I just got an Instant Pot and this is my second recipe. I seriously cannot believe how quickly this lazy Instant Pot lasagna soup took to make! It’s now one of our favorite Instant Pot recipes. (participant in the Amazon program, affiliate links present)

Instant Pot Lasagna Soup with Jar Sauce

Ok so it’s lasagna but you’re pressure cooking with different noodles and meats. We love this classic Italian dish. You can make it as an easy Ninja Foodi or Crockpot Express recipe too. As long as it is electric with the saute and high pressure function you are good to go!

With kids, and those wide traditional noodles, they always had a hard time eating it. I also hated precooking them and trying to pick them up to layer them when they were entirely too hot. Lazy lasagna soup is the way to go y’all! You just brown the meat, throw everything else in and let it go.

Ninja Foodi Lasagna Soup

I will use bow tie pasta noodles in this Ninja Foodi recipe too if I find that on sale. They would be a bit smaller than these when it’s done, but totally your choice because of the “cuteness”. ๐Ÿ˜‰ In order to make this lasagna soup recipe in just 8 minutes  you need a pot like this one. If you don’t have a pressure cooker I highly recommend getting one.

Ours you see here below was bought when they first came out and there were no recipes online for it at all. Since that is what I do for a living I got to work. This and our InstaPot spaghetti were the first two ever created and added on to the blog to share. We still make them both today……many many years later.

One of my favorite parts of this 7 in 1 multi cooker pressure cooker is that you can brown your meat right in it. Then add everything else on top, snap the lid on and let it cook. Before I had to dirty a pan on the stovetop to do this part, makes it so much easier!

As for the meat you just want something ground. Sausage is our fave, then beef, but for lower fat chicken and turkey could be substituted. The latter won’t lend nearly as much flavor to the dish but that is up to you.

Lazy Lasagna Soup Ingredients

  1. Spicy Italian ground sausage – or ground beef
    1. I highly recommend getting a non stick pot for this and all other pressure cooker recipes
  2. Onion
  3. Diced tomatoes
  4. Chicken broth or beef broth
  5. Noodles – uncooked, can use any style you like, these work great
  6. Mozzarella cheese
  7. Spaghetti sauce – marinara sauce or three cheese is great
  8. Italian seasoning – optional

Made with Frozen Ground Beef

If your meat is still rock hard you can still make this. I explain how to thaw Instant Pot frozen ground beef in case you need it here. Once done, drain the liquid in that pot, and start with the steps below browning that meat until there is no pink left.

Dairy Free Lasagna Soup

If you need a version for those with a sensitive stomach to dairy it is totally easy. I have done this for my husband and will say you can find lactose free dairy products at almost any grocery store nowadays. It is surprisingly good and many times my kids can not even tell the difference.

If you wanted to make One Pot Lasagna Soup on the stovetop we have directions for that here too. Takes just a bit longer this way but not much. If you wanted to double this for a large crowd I might go this way since it will fit more.

How to Make Lasagna Soup in Pressure Cooker

  1. Set Instant Pot to saute, add olive oil, ground sausage or beef and diced onions. Cook until ground beef is no longer pink.
  2. Turn OFF/Cancel button.Scrape bottom with wooden spatula to deglaze pot.
  3. Pour in all other ingredients except ricotta and mozzarella (those are used for toppings).
  4. Press manual, pressure, high for 3 minutes. Do a quick release and remove lid. Done!! 
  5. Top with small spoonful of ricotta and a pinch of mozzarella cheese on top. 

I’ve used larger noodles you see here but prefer smaller ones like you see above. You can use any brand too. If you love lasagna you can make this in your Crock Pot Expres too, just use the directions below. No problem. Use the pressure cooker function with a quick release. Then at the end you could use air crisp mode with some extra cheese on top! All Instant Pot recipes are interchangeable no matter what brand you have. 

Using slow cooker function

  • If you want to make slow cooker lasagna soup just pre cook your meat first on saute. 
  • Then add all ingredients other than noodles and cheeses and cook on low all day (6 hrs or so).
  • About 30 minutes before you’re going to eat put your noodles in.
  • Submerge them into the liquid.
  • Put crockpot on high 
  • Keep in longer if you want noodles more tender.
  • Top with cheeses and serve!

It is similar to our Crockpot lasagna but with more broth so we call it a soup, but similar ingredients. You can make it layered and thicker or break the noodles with the same ingredients to make a thinner base.

Why do we love both of these deconstructed lasagna recipes over the old fashioned way? It’s much easier to eat, especially for little kids. Using smaller noodles makes it much easier to make vs. trying to maneuver hot long noodles into a pan.

It is safer to make since there is NO boiling required. You just throw the uncooked noodles right in. Close your lid and they’ll be nice and tender in just 3 minutes. Serving this is a snap too. Just use a ladle and serve into bowls with some cheeses on top. Let’s be honest, a slice of lasagna never looks very pretty.

Can you use ground beef instead of ground sausage to make lasagna soup?

Sure, but I will say loudly that spicy ground sausage, like Jimmy Dean brand, is the BEST. There is tons of flavor right inside the meat so you could literally not add any other seasonings. It adds a bit of spicy heat to it too and is always a favorite meal.

How many calories are in lasagna soup?

Of course it depends on your serving size but the nutritional information is below at about 300 in a 4 ounce serving. If you alter the ingredients of course that will change a bit. If you are comparing the traditional method to this, soup will always have fewer calories overall with the increase of liquid.

How to freeze lasagna soup

If you do in fact have leftovers it is best to just store them in the fridge. Put what’s left in an airtight container and it will still be good for 2-3 days in there. To reheat put in a microwave safe bowl and heat in 30 second increments stirring in between.

Equipment

  • 1 pressure cooker

Ingredients 

  • 1 lb ground sausage, spicy Jimmy Dean is best, ground beef or ground turkey
  • 1/2 onion, diced
  • 1 c diced tomatoes, used canned
  • 40 oz beef broth, or chicken broth, less if you want it thicker
  • 1 jar spaghetti sauce, (24 oz)
  • 1.5 – 2 c noodles, uncooked , could use bowtie or other type
  • pinch salt
  • pinch oregano
  • 1 c mozzarella cheese, for topping
  • 1 c ricotta cheese, could omit, it’s just as good without it

Instructions 

  • Set Instant Pot to saute, add olive oil, ground sausage or beef and diced onions.  Cook until ground beef is no longer pink. Turn OFF/Cancel button.
  • Pour in all ingredients except noodles and cheeses. Stir. Pour noodles on the top and gently submerge into liquid. Do not stir.
  • Press manual (if you have that button), pressure, high for 3 minutes.
  •  Do a quick release and remove lid.
  • Top with small spoonful of ricotta and a pinch of mozzarella cheese on top.

  3. Found this recipe and tried it last night. It was a huge hit with everyone, including kids! I doubled the recipe ( I have the large sized IP) so we will have enough for tonight! I also used individual crock pot bowls and put them under the broiler to melt the cheese. (Think French onion soup type bowl). Delicious!!! I made some bread and a salad to complete the meal. I will be passing this one on to my friends that use the Instant pot. Thank you for such an easy recipe!
