You add all your favorite breakfast ingredients like egg, cheese and ham into the middle of your refrigerated biscuits like our breakfast bundt cake. Then a quick trip into the oven creates this on the go meal. It will become your favorite leftover ham recipe too. Easy breakfast that is hand held, yu have got to try these.

When cooled they the perfect easy recipe to bring with you for early game times and hitting the road early when you’re headed on a road trip. We love them! As always this recipe is super easy (doesn’t happen in this house unless it is). And you can make them as loaded or simple as you want. This is just one of our favorite muffin tin recipes.

Egg Stuffed Pillsbury Biscuits Recipe

The base of these ham and cheese breakfast bites is refrigerated pizza dough cut into pieces. You could use regular refrigerated rolls or defrosted frozen rolls as well. With any of them I will flatten so they’re thinner and don’t take up the whole area, you want lots of filling.

If you make our Instant Pot pork belly the morning before you can dice that up too. Green onions, those are wonderful on top to make them pretty and give it a bit of texture too.

How to Make Ham and Cheese Egg Cups

Watch as we make them right here. Using a measuring cup like this one makes them easy to fill with less spilling. If you have kiddos in the house they can help you make these and have fun doing it. Let them flatten the dough and push them inside, then pour the eggs and sprinkle in the goodies inside. Easy and gets them involved in cooking.

Some of the kids prefer that there aren’t onions so half are made without those. If we have bacon instead of ham in the fridge then that is what is included. Both are really amazing though. Anything goes inside these or our Ham and Cheese Crepes.

Ingredients

  1. Refrigerated pizza dough, use regular or Grands refrigerated biscuits if you want more breading
  2. Eggs or egg whites if you want lower carb breakfast
  3. Shredded cheese
  4. 1/2 cup Diced meat like ham if you want them more protein packed
  5. It is best to spray muffin tin with cooking spray so they slide out

What is the difference between Grands biscuits and Grands Jr biscuits?

Grands are the standard, larger-sized biscuits, typically yielding about eight biscuits per can. Jr. sizes are smaller, often referred to as “junior” size, and usually come with ten biscuits per can.

I used a regular size muffin tin to make these. You could make them larger using ramekins if you wanted to do so. For that size I would use Grands instead to fill the insides better. I would increase the timing a bit for these. What you are looking for is that the eggs are set really, and the dough is browned and cooked thru.

How to Make Ham and Cheese Biscuit Bites

  • Lightly spray muffin cups with non stick spray, separate the pizza dough into 6 equal pieces and flatten each piece in your palm. 
  • Push each piece of flattened pizza dough into each muffin hole. 
  • Beat together with a fork the egg and milk, add salt and pepper now if desired. 
  • Pour the egg mixture half way full into the pizza dough cup you’ve created. 
  • Add cubes of ham, bacon, cheddar cheese or any additional toppings in at this time including any cheese(s) you want. 
  • Bake at 425 degrees for about 12-15 minutes or until the egg is set in the middle.

Of course they are best by far when they are fresh. If you have some though put a paper towel on the bottom of a container with your Bisquick breakfast muffins on the top.

Can You Make Ham and Cheese Egg Muffins with Homemade Dough?

You could if you wanted to start from scratch. In that case you would just want to cut into circles a bit larger than each hole to press into each one. You could make the dough with Bisquick or another alternative would be to make our Bisquick butter swim biscuits with diced ham folded into the dough.

Make our ham and cheese filled biscuits! A great option with Pillsbury refrigerated dough for a hearty breakfast or snack. Like egg bites but with a roll wrapped around it. Easy muffin tin breakfast you should try.

Can I make ham and cheese biscuits ahead of time?

Yes, you can make ham and cheese biscuits ahead of time. Once baked, allow them to cool completely, then store them in an airtight container or zip-top bag. You can refrigerate them overnight but note that they will dry out. Reheat refrigerated biscuits in the oven or microwave before serving.

Can I use different types of cheese in ham and cheese biscuits?

The choice of cheese is flexible, and you can experiment with different flavors. Cheddar, Swiss, Gouda, or even a combination of cheeses can work well. Consider using a cheese that melts nicely and complements the flavor of ham.

If you do have leftovers you can save them but the texture will be different. Let them cool, seal the top of a freezer bag and put into the fridge overnight. In the morning transfer to a plate with a clean paper towel underneath and heat for 30 seconds until warmed in the center. If you put a little fresh cheese on the top it is even better to kinda’ freshen it back up.

  • 1 muffin tin

Ingredients 

  • 1 roll refrigerated biscuits, grands fit better, or sliced refrigerated pizza dough
  • 2 eggs
  • 1/4 c milk
  • 1/3 c cheddar cheese, shredded, or mozzarella
  • 1/2 c ham, precooked, diced, optional
  • 1 green onion, diced, optional
  • 1/4 c onion, diced, optional
  • 2 tbsp bacon bits, optional
  • 1 pinch Salt and Pepper, to taste

  • Grease muffin pan, separate the pizza dough into 6 equal pieces and flatten each piece in your palm. (or use 1 regular flattened refrigerated roll per hole)
