Ham and Cheese Breakfast Bites

 Ham and cheese breakfast bites are the best leftover ham recipe! Ham and cheese egg muffins are a great muffin tin breakfast and perfect when you’re on the go. If you love our air fryer egg bites these will be a hit at your house.

Are you an on the go family….we are!! Between having 3 kids in 2 different schools, soccer practices, band and work we are always on the go. When we have leftover ham these ham and cheese breakfast bites are one of our favorite recipes. Here’s how you make them. (originally published 5/16, affiliate links present)

  • Easy breakfast that is hand held with ham, egg, and cheese. You have got to try these.

When cooled they the perfect easy recipe to bring with you for early game times and hitting the road early when you’re headed on a road trip. We love them! As always this recipe is super easy (doesn’t happen in this house unless it is). And you can make them as loaded or simple as you want.

Ham and Cheese Egg Cups

The base of these ham and cheese breakfast bites is refrigerated pizza dough. That’s good for SO many recipes like this one and our muffin tin pizza recipe too.

  • You add all your favorite breakfast ingredients like egg, cheese, ham and bacon. Green onions are good too. Then a quick trip into the oven creates this on the go meal. It will become your favorite leftover ham recipe too.

If you make our Instant Pot pork belly the morning before you can dice that up too. Green onions, those are wonderful on top to make them pretty and give it a bit of texture too.

Watch as we make them right here. Using a measuring cup like this one makes them easy to fill with less spilling. If you have kiddos in the house they can help you make these and have fun doing it. Let them flatten the dough and push them inside, then pour the eggs and sprinkle in the goodies inside. Easy and gets them involved in cooking.

Muffin Tin Breakfast

Some of the kids prefer that there aren’t onions so half are made without those. If we have bacon instead of ham in the fridge then that is what is included. Both are really amazing though. 

Watch me as I make a batch of egg muffins here, using our prepared egg mixture. I used a few slices of ham that were leftover from Easter.

  1. Refrigerated pizza dough or you could use regular size refrigerated biscuits
  2. Eggs
  3. Shredded cheese
  4. Diced meat if you want that
  5. It is best to spray muffin tin with cooking spray so they slide out

Ham and Cheese Muffin Tin

  • Lightly spray muffin cups with non stick spray, separate the pizza dough into 6 equal pieces and flatten each piece in your palm. 
  • Push each piece of flattened pizza dough into each muffin hole. 
  • Beat together with a fork the egg and milk, add salt and pepper now if desired. 
  • Pour the egg mixture half way full into the pizza dough cup you’ve created. 
  • Add cubes of ham, bacon, cheddar cheese or any additional toppings in at this time including any cheese(s) you want. 
  • Bake at 425 degrees for about 12-15 minutes or until the egg is set in the middle.

You can print recipe below and make your own creations this week. See what add ins you like best. I will say that these save okay if you have a few left over. Of course they are best by far when they are fresh. If you have some though put a paper towel on the bottom of a container with your breakfast muffins on the top.

Seal the top and put into the fridge overnight. In the morning transfer to a plate with a clean paper towel underneath and heat for 30 seconds until warmed in the center. If you put a little fresh cheese on the top it is even better to kinda’ freshen it back up.

Ingredients

  • 1 roll pizza dough refrigerated
