This is great for those that cannot have or doesn’t want to consume animal products. You still will get a moist and dense cake you would expect, but without eggs!

How to Make a Mug Cake With No Egg
We started with this brownie in a mug with a dollop of peanut butter in the middle. OH MY was that good! We all love this recipe a lot. That one is egg-free as well but you would never know it because it is just as tender and moist as if one was in there. Melted butter instead does the trick, let us show you how it is done. 😉

As long as you use a microwave safe mug without any metal on it then you’ll be just fine. You don’t want to overcook it so it burns so stick to the 1-2 minute timing in the recipe you’re following for sure.

Seriously, with a mug and microwave you can make a multitude of single individual serving treats. You can use gluten free flour if need be, use our coffee cake with cake mix recipe but cooked this way so you could cut down the bake time serving it this way instead of in a large pan full.
Easy Microwave Mug Coffee Cake
If you want to get specific, it tastes like delicious coffee cake in a mug really. 😉 For a quick treat late at night, in the morning or a snack any time of day this is one of my favorite things ever.
Ingredients
- You’ll need a large microwave safe mug – do NOT use a small one or it will overflow
- All purpose flour, sugar and milk you probably have already
- Baking powder and baking soda are surely in your pantry right now
- Butter
- I prefer salted over unsalted butter
- Brown sugar
- Vanilla extract
- Cinnamon
I love the streusel topping but you could leave it out and still taste good, I mean it’s amazing instead of good without it but ya’ know. Cooking time would remain the same either way.
Eggless Cake Mug
There is a crumble topping you add to your dessert in a mug which gives it a bit of texture and sweetness. Of course you can leave that part out and just top it with some whipped cream or vanilla ice cream BUT that is my favorite part.
Time needed: 2 minutes
Easy mug cake recipe
- Prepare ingredients
Add your 1/4 cup of flour, sugar, baking powder and cinnamon into your large mug. Stir. In a small dish melt 2 tbsp butter, pour this into your mug with the milk and vanilla. Stir to form a thick cake batter.
- Make crumble topping
In the same dish you melted the butter in add another 1 tbsp of butter and melt it. Add 2 tbsp flour, brown sugar and cinnamon into this bowl. Use the back of a spoon to combine it so there is no powdery flour left. Sprinkle this mixture into your mug on top of your batter.
- Cook
Microwave on high for 1.5 minutes, enjoy! (2 min. for some microwaves may be necessary, we thought 1.5 was perfect for ours)
Timing will vary slightly depending on your microwave so start with 1 1/2 minutes and add 30 seconds the first time to see if it looks done. That works for us but if you have a small unit that is less powerful you’d want to opt for 2 full minutes so the batter in the middle is cooked thru. For mine 2 made it a bit drier than I wanted.

Really fluffy, soft, moist and flavorful like a snack cake from the grocery store.
Not bad! I had to use gf flour, almond milk and non-dairy butter, but it still came out light, fluffy and good. Next time, I’m going to add a dash of salt to the batter.
Just a note with the gf flour…the batter was very runny. I had to add an addition 3 Tbsp to make it the thickness that cake batter should be. No big deal, though. I’m just thrilled to have a simple dessert that I can eat!

Ok so this recipe tastes good … But mine didn’t turn out like yours at all .. I followed it to a T .. so I don’t get why it didn’t but I had to cook mine for about 3 1/2 mins .. it was super runny .. & the toppings all fell down to the bottom and there was no crumble involved lol. It was like a paste. What did I do wrong? It tastes delicious though!!!
The only thing I can think of is your microwave isn’t as powerful as the “typical one” and mine. if you took it out and then back in again that is why the top sunk. Next time use the timing you figured out works for your unit and don’t stop mid way.
I’ve made this recipe several times and it has come out perfect every time!! I’ve tried the 1.5 mins and 2mins, not much difference in the cooking time. Same heeay taste!!
