This is the best pumpkin monkey bread with cinnamon rolls you will ever make. It is a tweak of our easy monkey bread recipe you can make in under an hour in the Fall for breakfast plus I have a video showing you how to bake it.

I will say with all honesty that is the MOST delicious recipe I have ever created!! You can use refrigerated rolls or make as rhodes rolls monkey bread too once they defrost a bit. Let me share with you how to make it so you can drool over it too. 😉
If you’ve never made monkey bread with cinnamon rolls from the refrigerated section of the store it is an easy thing to do and you can mix it up with lots of different flavors too like this one for Fall. It’s so addicting and of course easy to do.
You can change it up and make pumpkin monkey bread with refrigerated biscuits too if that is all you can find. Since Fall is upon us I chose to add caramel and pumpkin flavors but the choices are endless once you know the basic steps.

We have bought monkey bread before in the frozen section and it is okay. Once you realize just how easy monkey bread is to make you will taste the difference AND you can fool around with the flavors. Beware…it is addicting. I chose to add caramel bits this time but you could swap out for nuts too. I’d use a bundt pan that is already non stick in order for it to slide out easily. My favorite one is listed below.
Ingredient Notes
You are going to start off with a few cans of refrigerated cinnamon rolls cut up into bite size pieces. These or frozen cinnamon rolls (those will need be be thawed though which takes longer) are best because they are already sweeter with cinnamon inside.
With these pieces you want to get them ooey gooey and stick together to create a sort of sweet version of our pull apart bread. To do this you will toss with some white granulated sugar. You can do this in a bowl or baggie.
To make it sticky sweet you need to combine a few items to make a sauce that is poured over the top when done. We do this with some canned pumpkin puree or make your own pressure cooker pumpkin to start with.
You will warm this with some melted butter, I like salted Kerrygold for a really creamy result.
To make it even sweeter I whisk in some light brown sugar with some added pumpkin pie spice to finish off the “glaze”.
Baked in a bundt pan is the best way to make this so it gets cooked thru all the way around. Caramel bits and/or 1/2 cup crushed nuts are of course optional and could be left out entirely
Can you use refrigerated biscuits instead of cinnamon rolls?
That is a great alternative if that is all you can find. The biggest difference is that the final baked goods won’t be as sweet. You could instead sprinkle in a bit of cinnamon into the melted butter and sugar mixture to compensate for that though.
Can you add apples?
If you wanted to ditch the caramel bits listed below and add chopped fruit instead you could. I have made an apple monkey bread once and it was beyond amazing. Incorporating 1/2 cup of chopped and skinned would work just fine.

How to Make Monkey Bread with Rhodes Frozen Cinnamon Rolls
Yes you can make this with defrosted Rhodes cinnamon rolls this same way except it takes longer. The reason for that is that that these come frozen and have to be defrosted, this takes a few hours to soften and rise (double in size). From there you could follow the instructions below.
How Long to Bake Pumpkin Monkey Bread
Put in preheated oven at 350 degrees for 30 -35 min. checking after 30 min. to ensure it doesn’t get overdone. Take out and loosen sides with a knife. Let it sit for at least 10 min. before turning over. Place a large plate or cutting board on top and flip over. Should slide out if you sprayed it well. Reheat butter mixture and pour on top. Serve!!
How do you know if monkey bread is done?
The easiest way is to move a few pieces around in the center and see if underneath those is still doughy. If so allow it to bake a bit longer. You don’t want underdone biscuit or cinnamon rolls. It should also be golden brown on the top like you see here. Ok and if you want to take this over the top or make it “prettier” you could sprinkle a bit of powdered sugar on the very top.


Pumpkin Monkey Bread Recipe
Equipment
- 1 dish
- 1 gallon ziploc bag
Ingredients
- 2 cans cinnamon rolls, refrigerated or defrosted for 30 minutes so they can be cut into fourths
- 1 cup sugar
- 1 cup butter, melted
- 1 cup brown sugar
- 1/2 cup pumpkin puree
- 1 pinch pumpkin pie spice
- 3/4 cup caramel bits, optional
- 3/4 cup walnuts, crushed, optional
Instructions
- Cut up cinnamon rolls into 4ths. Spray inside of bundt pan with non stick spray. Preheat oven to 350F.
- Put white sugar in a large baggie (or a bowl). Add half of the cinnamon rolls that have been cut into bag, close, and gently shake to coat pieces (or put in bowl and gently stir pcs. with sugar until coated).
- Place one layer of cinnamon rolls into bottom of bundt pan.
- Sprinkle some caramel bits, then walnuts, then another layer of sugar coated cinnamon roll pieces until everything is gone and layered inside the bundt pan.
- Microwave butter, brown sugar, pumpkin, and pumpkin spice for 30 sec., stir, then 30 more sec. until it’s warm and bubbly.
- Pour half of mixture on top of layers inside of bundt pan.
- Put in preheated oven at 350 degrees for 30 -35 min. checking after 30 min. to ensure it doesn’t get overdone.
- Take out and loosen sides with a knife. Let it sit for at least 10 min. before turning over.
- Put large plate or cutting board on top and flip over (should slide out if you sprayed it well). Reheat butter mixture and pour on top. Serve!!

Can I freeze monkey bread?
Well we’ve never had any left after the 5 of us get to it BUT if you did you could freeze it. Just wrap each piece in plastic wrap and then put those inside a freezer bag. They should stay good for up to a month. Do NOT store monkey bread dough in the freezer, just the cooked leftovers. This is because freezing will make the yeast inactive. I used regular, for Grands you could just increase the time just a bit…just look and adjust slightly.
