2 Ingredient Soda Cake

We started this experiment with our 2 ingredient strawberry cake that came out so moist we just had to do it again!!

Soda cake or cupcakes are lower in calories, dairy free and egg free too. How can this be? I dunno it just works y’all. 😉 Get out a bowl, soda and your favorite cake mix and let’s get started shall we?

Homemade Cake Mix

You can use boxed or this homemade chocolate cake mix, totally up to you. If you love batch cooking you might want to try this. Then you can divide it up into baggies and have it on hand for many months.

Root Beer Float Cake

It is a cheaper way to go and saves you trips to the store when you want a quick easy dessert. This is what you’re going to need:

  1. Large bowl
  2. Box of cake mix, your choice as far as that goes but we went with chocolate because why not?
  3. 1.5 cups of Root beer or really you can use any sort of soda.
  4. This bundt pan

That is really it. I mean you’ll probably want some vanilla ice cream and/or whipped cream on top of each piece when you serve it but it’s pretty easy. Alternatively you can whisk together powdered sugar and water for a simple glaze.

What ingredients make a cake more moist?

If it just isn’t coming out super tender for you, try adding 2 extra tablespoons of oil into your mixture. That should do the trick. Fewer eggs tend to produce a more dense and less fluffy creation too.

How can I substitute soda in a cake mix?

You just do, and it works! This trick is great for those who need an egg free cake recipe that tastes amazing. NO need for any of those if you just combine what’s in that clear baggie and some of your favorite soda pop.

How to Make Root Beer Bundt Cake

I used a bundt pan because I think that it just looks so pretty when it is done. Yes you could make this batter homemade, but why?

If you insist on doing it all yourself then you could use a chocolate cake recipe and use root beer extract, or add root beer flavored soda instead of water.

Just do the same thing incorporating everything into a mixing bowl, or use a stand mixer to make your cake batter. Pour into a cake pan and allow to cool completely before slicing. This will make the pieces come out easier.

I know people usually use a toothpick and say when the center comes out clean it is done, I like a bit less time. Instead I say to touch lightly in the center. When it springs back it is done.

If you really need to do the “toothpick thing” then take out once it comes out mostly clean with some crumbs on it. That means it will still be really moist inside. If you over-bake it just gets crumbly and dry.

Does cake mix and soda work?

Yep!! We have used this idea over and over again, it doesn’t matter what combination of the 2 you use. All of the ingredients needed to rise like baking powder etc..are in the boxed mix. All you’re missing is the moisture.

Can you make root beer cake with cake mix?

Yep, to me it really isn’t worth starting from scratch. Just mix soda with chocolate mix and you’re set. Complete instructions and exact amounts for each ingredient are below in the printable recipe card. Nutritional information available there too with calories, saturated fat, etc listed. It only takes into consideration ingredients listed.

Time needed: 35 minutes

Root Beer Cake

  1. Prepare

    Whisk together your box of cake mix and root beer soda until mixture is smooth. Use a hand or stand mixer for this. Preheat oven to 350 degrees. Spray inside of bundt pan with non stick spray. Pour prepared cake mixture inside your bundt pan, or you could use a 13×9″ pan.

  2. Bake

    Now bake for approx. 35 minutes or until the middle begins to spring back when gently touched in the center. Do NOT over-bake your cake. Remember the middle will not rise high like traditional cakes, that is okay. Just touch gently in center to see if it springs back, then it is done.

  3. Cool

    Allow to cool completely, then loosen sides from pan. Put cake plate on top of pan and quickly flip over. Remove bundt pan and remove.

  4. Flip

    You could also flip over, then flip back over on to a wire rack set atop a baking sheet. Melt a tub of chocolate frosting and pour that on top. Excess will drain off below. Slice and serve with a scoop of ice cream on top, whipped cream and a cherry are fun too.

  1. Ever? There are plenty of claims for the best chocolate cake recipe. I get that. But with one bite of this decadent, moist chocolate cake with chocolate frosting, every single person around the table commented that this was the best chocolate cake they’d ever tasted.

  2. Is the bundt cake pan necessary? Can we use a regular cake pan? The one you linked is $40. FYI.

  3. I was just wondering about how you get the 3 carbs per slice. There is more carbs than that in the box cake mix. My box of Devils Food shows 35 carbs and 2 fibers = 33 carbs per slice. I’m trying to cut my carbs down in order to bring down my A1C.

    1. I would imagine it would work just as well, I have used diet Coke in a similar version and it was fine. 😉
