Savory Oatmeal with Egg
Just like cereal, and sweet Ninja foodi oatmeal you may have made before, this night cereal is made with milk. AND has milk poured over it too which we love. Now think savory when you’re cooking this.
Oatmeal no longer needs to be thought of as a breakfast cereal topped with sugar. It is a great base to add ingredients like sausage, eggs, and spices. Let me show you what I mean.
Savory Oatmeal with Egg and Avocado
Of course you can make this meat free if you’d rather and add avo. on top instead. I swear I could eat one of these every single day if they were ripe year round. Use your imagination to swap out one thing for another. Feel free to use drained and rinsed black beans with your fried egg, salsa, etc.
Ingredients
- 1 1/2 c milk
- almond milk or dairy free milk alternative
- 1 c Old fashioned oats is what we used for this, sometimes called overnight oats
- Quaker has a gluten free rolled oats option available too that would work the same way
- for how to cook steel cut oats refer to this post
- Quick oats could be made in the microwave for a faster option
- 8 oz ground sausage that is mild or spicy, precooked
- Minced garlic
- 1 tbsp cheddar or parmesan grated cheese
- Olive oil
- Eggs cooked and placed on top of your savory oats
- Pinch of salt and black pepper to taste
Some diced onions, grated cheeses and even bell peppers can be added with the meat for texture and more flavor. You’ll need a small saucepan to cook the oats and a pan for the meat.
The first thing you want to do is boil some milk and add your oatmeal to that so it becomes the desired consistency. You could make this as slow cooker oatmeal as the base and add your crumbled ground sausage cooked and egg at the end too.
How to Make Savory Oatmeal
We like ours a big more turgid than others. Especially if we are making it a savory dish but if you like a soupier consistency then just add a bit more milk. While this is boiling you will want to start browning the sausage, onion, and garlic in a bit of olive oil. I know, it sounds good already right??!!
Can you crack an egg into oatmeal?
You could but you would want to wait until most of the water has been absorbed and the oats are almost as tender as you’d like them to be. Then you could crack it right on the top while it is boiling and have it cook right in the pot during the remaining time and serve together. It will sink a bit but could be a fun surprise when your kids dig in!
I like to involve my kids when I’m cooking or baking because it makes them want to taste “their recipe.” I’ve done this for so long that my children have a wide range of things they like including sushi, kale chips, and this night cereal sausage and egg savory oatmeal too!
Allowing them to add ingredients to the mix is fun for them, and makes them curious as to what it will taste like in the end……mom success. 😉
Is adding an egg to oatmeal good for you?
Absolutely, it adds more protein and will keep you feeling full for even longer. I encourage you to try this dish for dinner too! Everyone loves breakfast for dinner and this is a new way of thinking about cereal that you may not have thought about before. I assure you it is really good! Another thing you’ve got to try, have dinner outside in the backyard.
I don’t know what it is about sitting together on the patio but it’s a nice change every once and a while. Let’s face it, a little bit of sunshine just puts everyone in a good mood. 😉 Let us know what your family thinks of this night cereal sausage and egg savory oatmeal when you make it.
Dairy Free Savory Oatmeal
You may not be able to handle lactose, no problem. Almond milk, plain, works just as well to make this. You could even use water instead for fewer calories but it won’t be as creamy and delicious in that case. Want a sweet and savory breakfast? Add 1 tbsp of brown sugar in with the oats.
How do you make oatmeal savory?
- Brown your ground sausage in a pan with the minced garlic, olive oil, and finely diced onion if desired. Set aside.
- Add milk to another pan and wait until it boils, reduce heat
- Then add your oats and cook on medium heat for 5-6 min. or until it reaches your desired consistency.
- To thin oatmeal add a bit more milk.
- Fold in cooked sausage mixture and add to a bowl.
- Cook an egg medium / hard and place on top. Pour extra milk on top if desired.
- Serve together! This recipe serves about 2 people.

For other yummy home cooking breakfast recipes try our chocolate oatmeal and/or oatmeal raisin muffins too. You could literally eat oats for all 3 meals in a day, it is that versatile. For a large crowd, like if you are having family over for the holidays this is a fun one to offer. Always new for people to try and a conversation starter.
If you make a breakfast bar you can offer all sorts of things to add on top like crumbled bacon, sliced Italian sausage pieces, even hash browns are fun to scoop on the top with a bit of salsa or hot sauce.
Creamy Oatmeal with Egg
If you used quick oats you can follow instructions on the back of the container to nuke those in a bowl until tender. Another version would be overnight oats, take out in the morning and make a fresh over easy egg to top it with.
How to Make Oatmeal with Egg in Microwave
- This is how to cook an egg in microwave alongside it;
- Crack your egg on a microwave safe plate, or use a large coffee mug
- Heat at regular 100% power for 30 seconds
- Gently touch the top and see if you want it more done
- If you want it closer to over medium heat another 10 seconds at a time checking again each time until it is as done as you’d like

Make this and a batch of peach baked oatmeal and get ready for something new that will make you want seconds y’all.
Add an egg to the top! You can cook it right in the same pot for the last few minutes that it is boiling or separately and serve right on top. Another idea is to brown sausage or beef and fold that in with some sauteed onions and/or garlic to make protein packed oatmeal.

(P.S.: I think the word you’re actually looking for is just good ol’ “thick”.)
I would respectfully submit that “turgid” is not the word you’re looking for. Turgid means “swollen, bloated, or congested” – it’s more descriptive of a corpse just fished out of a river than it is of any food that anyone would actually want to eat. 😀
