How to change banana bread loaf to muffins

Ok, so this is easy. I do this ALL of the time y’all because I am either too hungry to wait or so that we can grab one and go on busy mornings. Instead of the hour you’d need for a loaf or bundt all you need is 18 minutes at 350 F. You will know they are done with a simple touch. When it springs back when touched gently in the center take them out immediately to stay as moist as possible. 😉

Banana and Cinnamon Bread Ingredients

  • 3 ripe bananas that are brown
  • Butter unsalted, melted
  • Vanilla extract is a must
  • All purpose flour begins the dry ingredient list
  • Baking soda to help it rise
  • Salt will bring out more sweetness
  • Sugar will make it a bit sweeter
  • Brown sugar packed
  • Cinnamon can be added into the batter too

Our Crumb Topping for Muffins can be added on your mashed banana bread batter or not, your choice. I have added this on top of other baked goods too it is so good. Just gives it a bit of extra “pretty”, texture and sweetness overall. Yes you can just sprinkle top with cinnamon and sugar mixture but this is better. Basics are below but you could include some crushed nuts or mini chocolate chips as well.

  • You will add some all purpose flour to make a crumble texture
  • Brown sugar packed to keep it sweet
  • Cinnamon added to the top too
  • Unsalted butter – this time should be cold and shredded or chopped

Can you make banana bread without butter?

Yes!! Actually our classic Banana Bread with Mayonnaise is always a huge hit and nobody has ever guessed the “secret ingredient” inside that makes it so moist. Still comes out sweet as ever but a great dairy-free alternative, or change if you find that you don’t have any sticks on hand. 😉

Another option is great during the Fall, add pumpkin!! Libby’s puree will give you that same needed moisture you need and want. I would follow our Moist Pumpkin Banana Bread recipe for that option. Greek yogurt would be the third option. I honestly would try them all because you may be surprised at enjoying one over the other.

What temperature do you bake banana bread in a glass pan?

I do not alter the temp. whether I am using a metal or glass loaf pan to bake sweet breads in the oven. I have done a lot of experimenting and lower and slower is better to keep it as tender as possible. Aim for 350 degrees F. in this case and for a 9×5″ size, 1 hour is about right. Check every few minutes after 60 minutes and remove as soon as the middle has cooked thru. Transfer out of pan to a wire cooling rack.

How Long do you Bake a Loaf of Banana Bread?

You will need to keep 60 minutes free to get this done. Now each oven will vary just slightly so give or take 10 minutes or so beyond that may be needed at your house. I talk all about How to Tell if Banana Bread is Done right here because we make it so often and I have had so many questions about making it perfectly!

Now if you were to make this in a smaller pan like our Pressure Cooker Banana Bread with a smaller quantity of batter it would take less time and of course if you are in a hurry just use a muffin pan because it will cut the timing by 1/3.

How do You Keep Muffins Moist?

When baking, check often at the end. You do not want to leave it in a minute too long. Checking with your finger, do so in the center until it springs back. Your toothpick inserted shouldn’t be completely dry, that means your bread is too. Remove when crumbs are attached, not batter.

If you have a few slices from your Slow Cooker Banana Bread or half of a bundt left you want to wrap it tight with plastic wrap first AND slide that into a freezer bag too. Leave on your countertop for best results and enjoy within 3 days – or freeze and defrost later.

What is the best substitute for cinnamon in banana bread?

You could use ground nutmeg, pumpkin pie spice, a pinch of allspice and apple pie spice instead. Of course all of these will have slightly different flavors will will give you that Fall feel to your dish.

What can you use instead of oil for baking?

Think moisture. This ingredient is used to keep your breads tender but isn’t the only thing that does the trick. For a healthier option, you can add 1:1 measurement of mashed avocado or Greek yogurt instead. Mayonnaise actually makes sweet breads really soft and moist as well.

Equipment

  • 1 9×5 loaf pan
  • 2 bowls

Ingredients 

  • 3 bananas, brown
  • 1/2 c butter, unsalted, melted
  • 1 tsp vanilla
  • 1.5 c all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 c sugar
  • 1/2 c brown sugar, packed
  • 1/2 tsp cinnamon

Cinnamon Crumble Topping

  • 1/3 c all purpose flour
  • 1/3 c brown sugar, packed
  • 1 tsp cinnamon
  • 2 tbsp butter, cold, shaved or cut into small pieces

Instructions 

  • Preheat your oven to 350°F (175°C). Grease a9x5-inch loaf pan. In a large mixing bowl, mash the ripe bananas with a fork. Add the melted butter and vanilla extract to the mashed bananas, stirring until well combined. Add the sugar and brown sugar to the batter and stir until well blended.
  • Add the baking soda into the flour, then combine into the wet mixture mixing until just incorporated. Be careful not to over-mix; a few lumps are okay. Pour the banana bread batter into the prepared loaf pan.
  • In a separate bowl, prepare the Cinnamon Crunch Topping by combining the flour, brown sugar, and ground cinnamon. Add the cold butter pieces and use your fingers or a fork to incorporate until the mixture resembles coarse crumbs.
  • Sprinkle the topping over the batter. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out mostly clean but with moist crumbs attached. Do not over-bake.
  • Remove, sit in pan for 10 minutes, then remove and sit loaf on a cooling rack for the rest of the time to stay moist. Slice when cool.
  • For banana bread muffins you would bake at 350 for 18 minutes or until middle touched gently springs back, cool on cooling rack.
