This is the best bundt pan meatloaf recipe with glaze baked in the oven. A pretty way to cook this easy ground beef dinner idea in a bundt shape for dinner. With a glaze on the top each bite is moist and juicy with a ton of flavor in each and every bite.

2 Lbs Meatloaf in Bundt Pan
You can make this into air fryer bacon wrapped meatloaf with a few strips over the top too if you like Around the whole thing would be tough and messy but you’ll get that same crunch on the top if you want to go all out. Other ideas to switch things up include using half spicy ground sausage or lower in fat turkey.
You do not have to use the recipe below. If you swear by your favorite Stove Top stuffing meatloaf you make all the time then just use our timing and temperature for the oven. I mean I could go on and on when it comes to thinking outside of the box once you get the hang of this. Just remember it isn’t just for cakes and experimenting in the kitchen makes cooking fun.

If you need to make Meatloaf Without Breadcrumbs you can follow this recipe instead. There are other binders to use that can be gluten free and yield the same texture and taste. We made this with 2 pounds of meat to fill the whole pan. If you wanted smaller portions I would use a mini bundt pan instead.
Ingredient Notes
We are going to make this on the larger side and using 2 lbs ground beef or a mix of ground beef and spicy ground beef if you want some heat to it like we did with our spicy meatloaf (which you could follow instead if you want).
You will need a binder and in this case the best one is Italian breadcrumbs but you could crush crackers and use those instead too (great idea for a gluten free substitute).
And then you typically will always add something like 2 eggs to help be your binder to keep things together.
- 1/2 c sour cream or lactose free variety
- Worchestershire sauce gives it a pop of flavor
- 2 tsp dijon mustard is a nice touch but ketchup would work too
Meatloaf Glaze
We like to use organic ketchup or barbecue sauce works too. To add a bit of sweetness you should add a bit of brown sugar and a pop of flavor with some dijon mustard too. Whisked together it is the easiest sauce to add to the top.
You don’t need a sauce on top but that layer is a must for us. You could use just a brown sugar bbq sauce if you didn’t want to do any work. I mean I add more to dip it in on the side too so there’s that…..

Now instead of using freshly diced onions you could use our Copycat Lipton French Onion Soup Mix. If you do then skip the salt and pepper since that is already included in the packet and you don’t want to overwhelm it.
How Long to Cook Meatloaf in a Bundt Pan
Once prepped and placed into a preheated oven you will want to bake for approximately 45 minutes to 60 minutes, or until the meatloaf is cooked through and has reached an internal temperature of 160°F. You could put a layer of Pepperidge Farm sausage stuffing to brown on top during the last 15 minutes or so if you’d like.
Or add the sauce listed near the end. The glaze will become caramelized and glossy. Use a sharp knife to slice the meatloaf into portions with mashed potatoes and serve. I share all about How Long to Cook Meatloaf in different ways as well here if you want to see other options

Tips
Many times I will set the pan on a baking sheet just because it is easier to lift in and out and ensure it sits flat on your shelf the whole time.
Now if you wanted to make a sort of duo of stuffing meatloaf you could. I would make your stuffing and let it sit while the meat is baking for about 30 minutes. Then layer the breading over the top and continue for the last 15 minutes so it can get golden brown with a bit of crisp at the very top. We love this over our spicy meatloaf.

Bundt Pan Meatloaf Recipe
Ingredients
- 2 lbs ground beef, or a mix of ground beef and pork
- 1 cup Italian breadcrumbs
- 1 small onion, diced
- 2 large eggs
- 1/2 cup sour cream, or lactose free variety
- 1 tbsp worchestershire sauce
- 2 tsp dijon mustard
- 1 tsp oregano
- 1 pinch salt, to taste
Meatloaf Glaze
- 1/4 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp dijon mustard
Instructions
- Preheat your oven to 375°F or 190°C. Grease a bundt pan with cooking spray or a light coating of oil. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, eggs, sour cream, Worcestershire sauce, dijon mustard, dried oregano, pinch of salt and black pepper.
- Use your hands to mix everything thoroughly, but avoid overmixing to keep the meatloaf tender. Gently press the meatloaf mixture into the prepared bundt pan, ensuring it's evenly distributed and pressed down to avoid air pockets.
- Place the bundt pan in the preheated oven and bake for approximately 50-60 minutes, or until the meatloaf is cooked through and has reached an internal temperature of 160°F.
- Meanwhile, in a small bowl, whisk together the ketchup, brown sugar, and Dijon mustard to create the glaze. About 10 to 15 minutes prior to serving, carefully pour off excess grease. Then, spread a thin layer of the glaze over the top of the meatloaf mixture, ensuring even coverage.
- Return the meatloaf to the oven and continue cooking for the remaining time. The glaze will become caramelized and glossy. Use a sharp knife to slice the meatloaf into portions and serve.
