Meatloaf in a Bundt Pan 2 lbs

You can make this into Meatloaf Wrapped Bacon with a few strips over the top too if you like Around the whole thing would be tough and messy but you’ll get that same crunch on the top if you want to go all out. Other ideas to switch things up include using half spicy ground sausage or lower in fat turkey.

You do not have to use the recipe below. If you swear by your favorite Stove Top stuffing meatloaf you make all the time then just use our timing and temperature for the oven. I mean I could go on and on when it comes to thinking outside of the box once you get the hang of this. Just remember it isn’t just for cakes and experimenting in the kitchen makes cooking fun.

Bundt Pan Meatloaf with Onion Soup Mix

If you need to make Meatloaf Without Breadcrumbs you can follow this recipe instead. There are other binders to use that can be gluten free and yield the same texture and taste. We made this with 2 pounds of meat to fill the whole pan. If you wanted smaller portions I would use a mini bundt pan instead.

Ingredients

  • 2 lbs ground beef or a mix of ground beef and pork
  • Italian breadcrumbs is our choice but you could crush crackers
  • Onion diced are optional but add flavor and texture
  • eggs will be your binder to keep things together
  • 1/2 c sour cream or lactose free variety
  • Worchestershire sauce gives it a pop of flavor
  • 2 tsp dijon mustard is a nice touch but ketchup would work too
  • Oregano is our seasoning of choice
  • salt and pepper to taste is great to have on hand too

Meatloaf Glaze

  • Ketchup or barbecue sauce works
  • Brown sugar
  • 1 tbsp dijon mustard

You don’t need a sauce on top but that layer is a must for us. You could use just a brown sugar bbq sauce if you didn’t want to do any work. I mean I add more to dip it in on the side too so there’s that…..

Bundt Pan Hamburger Recipe

Now instead of using freshly diced onions you could use our Copycat Lipton French Onion Soup Mix. If you do then skip the salt and pepper since that is already included in the packet and you don’t want to overwhelm it.

How to Make Bundt Pan Meatloaf with Onion Soup Mix

  • Preheat your oven to 375°F or 190°C. Grease a bundt pan with cooking spray or a light coating of oil. In a large bowl, combine the ground beef, bread crumbs, chopped onion, eggs, sour cream, Worcestershire sauce, dijon mustard, dried oregano, pinch of salt and black pepper.
    • if you wanted to soften the onions do so with some olive oil in a skillet over medium heat
    • pour on paper towels and then add
  • Use your hands to mix everything thoroughly, but avoid overmixing to keep the meatloaf tender.
  • Gently press the beef mixture into the prepared bundt pan and bake!
  • Place the bundt pan in the preheated oven and bake for approximately 45 minutes to 60 minutes, or until the meatloaf is cooked through and has reached an internal temperature of 160°F.
  • Meanwhile, in a small bowl, whisk together the ketchup, brown sugar, and Dijon mustard to create the glaze.
  • About 10 to 15 minutes prior to serving, carefully pour off excess grease. Then, spread a thin layer of the glaze over the top of the meatloaf mixture, ensuring even coverage.
    • another option is sprinkling shredded sharp cheddar cheese on the top
    • or put a layer of premade stove top stuffing mix so it can brown on top of the pan

Return the meatloaf to the oven and continue cooking for the remaining time. The glaze will become caramelized and glossy. Use a sharp knife to slice the meatloaf into portions with mashed potatoes and serve.

How Long to Cook Meatloaf in a Bundt Pan

If you want to cook other things at the same time you could easily set oven to 350 if that is what you need for your veggies or something. I share all about How Long to Cook Meatloaf in different ways here if you want to see other options but with this one we baked in the oven for almost 1 hour.

Tips

Many times I will set the pan on a baking sheet just because it is easier to lift in and out and ensure it sits flat on your shelf the whole time.

Now if you wanted to make a sort of duo of stuffing meatloaf you could. I would make your stuffing and let it sit while the meat is baking for about 30 minutes. Then layer the breading over the top and continue for the last 15 minutes so it can get golden brown with a bit of crisp at the very top. We love this over our spicy meatloaf.

  • 1 Bowl

Ingredients 

  • 2 lbs ground beef, or a mix of ground beef and pork
  • 1 c Italian breadcrumbs
