I love easy desserts and just recipes in general. That is where this 2 ingredient strawberry cake comes into play. You know when you are planning on baking something but realize you are out of eggs? Or you’re supposed to bring a treat to this afternoon’s potluck and you have less than an hour to do it in. Well this cake is perfect for that. (affiliate links present)

Believe it or not this comes out super moist. There are a lot fewer calories since you need no eggs or oil to make it. If you use a light version of everything you can really call it a skinny cake! This 2 ingredient cake reminds me of the strawberry cake in a mug we make pretty often, just in a larger form so you can share. ๐Ÿ˜‰

Soda Cake Ingredients

  1. A 13×9″ pan or a I prefer using a pretty bundt cake pan for cakes myself
  2. Box of cake mix
  3. Can of soda
    1. we used lemon lime but if you could find strawberry soda that would be even better
    2. people have asked about club soda, I haven’t used it but it wouldn’t be very sweet

I have to tell you I was a bit skeptical when my friend mentioned she had made this and it was pretty good, so I had to try it myself.

Easy Strawberry Cake with Soda

It’s not as though I am necessarily watching my weight, but if I could have a bit more…..I’d be down with that. ๐Ÿ˜‰ It’s one of our favorite dump cake recipes. The reason we love this idea is it is so easy, so much so that my girls would make it almost on their own when they were young!

How to Make 2 Ingredient Strawberry Cake

  • Add cake mix and your soda pop in a large bowl.  It is best to use a mixer on low to mix and make sure no lumps are left. 
  • Spray the inside of your bundt pan or cake pan with non stick spray and pour cake mixture in. 
  • Set oven to temperature on cake box (ours was 350F).
  • Now bake for approximately 30 minutes or until cake springs back when touched in the middle.

You can use these same ingredients but in a 9×13″ pan and make a cake mix strawberry poke cake instead too! Frosting options are: I will say it a bit more dense than a traditional cake with egg and oil but it is a very slight difference in our opinion (asked kids too).

toppings

  1. Melt a tub of ready made frosting and pour it on with a sprinkle of chocolate chips
  2. Mix powdered sugar and water and pour that “frosting”/ glaze on
  3. Use whipped topping (light or regular, like I did)
  4. Garnished with some fresh fruits it is really a pretty cake and perfect for picnics, barbecues, and especially during the Summer when there are tons of fruits to choose from!

Soda and Cake Mix Combinations

  • Just Chocolate cake mix + chocolate soda
  • Chocolate cake mix + Coke (I did this and made cupcakes in a jar with it)
  • Lemon or yellow cake mix + lemon lime soda
  • Spice cake mix + ginger ale with whipped cream on top
  • Another quickie under 30 minutes – Angel food cake mix and crushed pineapple we call pineapple angel food cake – that’s fat free

Use pineapple cake mix and make a tropical poke cake with coconut sprinkled on top and pineapple tidbits. All you do is combine cake mix with liquid, pour in prepared cake pan and bake in oven at 350 degrees for 30 minutes.

How Long to Bake a 2 ingredient Cake

I think if you bake it in a bundt pan lightly sprayed the texture is the best. A 9×13″ works too but will likely have the edges more dry than the center which isn’t ideal. Instead, if you use a bundt the whole thing will stay nice and fluffy and is prettier when served too. At 350 degrees F, 30 minutes is usually just about right for it to spring back when touched gently.

7-Up Bundt Cake

Here is what our final product looked like and how we decorated it. I mean that part is totally up to you. If you put it on a cooling rack right out of the oven you could melt frosting and pour that on top.

Allow it to cool. Put a cake plate on top and quickly flip it over. Use a defrosted tub of whipped topping to coat the top and lay fruit on top of that. Chocolate bits or sprinkles are nice options as well. If you love actual fruit baked in, try our peach angel food cake with just 2 things as well.

Best way to save leftover cake

That is to wait until it is completely cooled of course. I like to use Press n Seal instead of cling wrap. Either way set what is left on a plate and cover with one of these. Then kinda’ mold it around the pieces of cake on there so there is no way air can enter inside. Air is the enemy and will dry it out.

  • 1 bundt pan
  • 1 Bowl

Ingredients 

  • 1 can soda, 12 oz., Lemon Lime we like
  • 1 box cake mix
  • 1 tub whipped topping, optional

Instructions 

  • Add cake mix and soda in a bowl. 
  • Use a mixer on low to mix and make sure no lumps are left. 
  • Spray bundt pan or cake pan with non stick spray and pour cake mixture in. 
  • Set oven to temperature on cake box (ours was 350) and bake for approximately 30 minutes or until cake springs back when touched in the middle.
  • Allow to cool in pan on a cooling rack for 15 minutes before putting a plate on top and flipping over to serve.

    1. Best cake I have made in the IP was a coffee cake. You can search Instant Pot coffee cake on my site and try that. Just note that others will take on a very different, more dense texture

  3. What flavor of diet soda would you use in a sugar free yellow cake mix? I’d like to make your strawberry cake but I can’t find a sugar free strawberry cake mix.

  4. For diabetics, just use sugar-free soda & sugar-free yellow or chocolate cake mix along with sugar-free cool whip.

    1. 1920 calories in mix + 192 calories in soda = 2112 total calories รท 67 calories per slice = 31.5 pieces per cake. Nobody is going to cut this cake into that many pieces. The math doesn’t work.
