We’ve made lots of easy breakfast ideas on our blog because it’s a great breakfast that cooks quickly. If you wake up and realize you don’t have much in the house, this is a great kitchen hack to remember.
Get out a bowl and try these or our Bisquick mix muffins out this weekend. We did this after making a few air fryer pancakes, that mix is so versatile. You can make these into mini sizes like you see here or regular for breakfast or a fun snack with the kids.
What else can I use pancake mix for?
This powder is just SO versatile. Once you make the batter as directed below you can use any fresh or frozen berries you have on hand too and nobody will know it wasn’t homemade. If you have only thought of this ready made mix for breakfast time you will change your mind after this one.
It is not just great with bits of fruit but with chocolate chips is amazing too. I mean we have even used the dry mix for cookies made with pancake mix too. Try them all!!

I typically choose Krusteaz Light & Fluffy or Aunt Jemima. It depends on what store I am in and the price of each but those are my top choices.

Can I replace all purpose flour with pancake mix?
Yes, in a pinch this is a good alternative. It has leavening agents, sugar and flavorings in it already so just use a 1:1 ratio and you should be fine. Get started as you usually do when you’re making this popular morning dish, add a bit of goodies like we did here and see which add ins are your favorite.
From there you’ll just prepare as you normally would with any other type of muffin recipe you have. Make normal or mini sizes, the only difference will be the cook time. The base is below, beyond that you can fold in berries like we did here or use our Sweet Potato Pancake Recipe.
Pancake Muffins Ingredients
- Pancake mix is the main deal of course, there are many brands out there including store brands which are typically cheaper than others.
- Milk is better than water and whole is better than fat free to make them more moist.
- Eggs help them fluff up pretty and make the texture great, like semi-homemade like.
- Muffin tin of your choice unless you use silicone cups on a sheet pan but those aren’t my favorite since they are hard to clean.
What can I add to muffin mix?
- Fresh or frozen (defrosted) berries
- Chocolate chips
- Lemon or orange zest
- Swirl a bit of jam inside
- Fruit curd
Can I make muffins with homemade pancake mix?
Yes!! I will almost always use bagged or boxed mix since in a hurry is my game BUT I have experimented lately with Cracker Barrel pancake mix. That one is from scratch and mixed with buttermilk which makes it really moist.
Krusteaz Pancake Mix Muffins Recipe
- Preheat oven to 350 degrees F. Put regular or mini muffin liners in muffin pan or spray with non stick cooking spray.
- In a bowl whisk together milk, eggs and pancake mix until smooth. Gently fold in berries or chocolate chips.
- Fill muffin holes with about 2 tbsp. of batter, no more than 3/4 of the way full.
- Now bake for 12-14 minutes for mini, or about 18 min. for regular sizes. Take out when top springs back when touched lightly.
- Allow to cool slightly, dip into maple syrup and enjoy.
You can use this batter to make blueberry muffin tops too. Pancake muffins are really fun for kids to grab and go in the morning too. In about 15 minutes you can have them done and ready to enjoy. Everyone loves pancakes so why not give these a whirl right?
How long do you bake pancake muffins in the oven?
That depends on what size you want them to be. I typically will use a mini muffin tin so they are bite size and faster. The smallest take about 11 minutes, regular is closer to 18 and jumbo is closer to 22 min. Check with a toothpick in the center or when it springs back when touched.
If you make homemade pancakes regularly you could make a double batch and make these with the other half. 1/4 cup is about right to fill standard size muffin cups so you can make a decent batch in little to no time.

How to bake pancake mix muffins in air fryer
OMG have you thought or tried this yet? It is a great way to make small batches at a time or not heat up your whole house during the hot summer months. You just use the same batter directed below but the temperature and timing in our air fryer muffins directions here.
We’ve even made cake mix gingerbread muffins and so you don’t even have to use your oven! If you wanted to make a Fall treat, mix up our pumpkin pancakes with Bisquick and bake into muffins instead of flat. Those are always a hit.
How to save leftover muffins
If you do have leftovers they save rather well if you store them correctly. Remember that air is the enemy. Keeping that in mind you want to slide them into a freezer bag once they are at room temperature in one layer. Suck all of the air out of that bag and leave on the counter, not the fridge.
The cold will dry them out much faster and it’s already been baked so they don’t need to stay in the refrigerator. In the next 48 hours take a few out and eat as is or warm in the microwave for 30 seconds and top with some butter. That will add a bit more moisture to fluff them up once again.

Yummm! It turned out soft and fluffy. I was out of pancake mix so I used Alton brown’s semi-instant pancake mix. I added 2Tbsp melted butter because most regular pancake mix has some shortening mixed in.
My whole family enjoyed it. Perfect for dipping in syrup.

Super easy base recipe, but definitely would recommend using a sweetener. Muffins obviously taste like plain pancakes so they aren’t as sweet as regular muffins. That being said my toddler can’t tell the difference, so if you are wanting to cut sugar a bit then this is a great option. We used almond milk in place of regular milk and they turned out great.
