Roasted Ninja Foodi Cherry Tomatoes
NO rack needed method: Tomato Confit is incredibly tasty and easy. Layer bottom of the pot with whole cherry tomatoes. Pour 1/2 cup olive oil, thinly slice two cloves of garlic , sprinkle with sea salt , a teaspoon of balsamic vinegar & some thyme. Mix. Use the bake mode for about 45 mins until soft and squishy.
Ideally you would use this to make Homemade Pressure Cooker Spaghetti Sauce right in the same pot on high pressure but you can allow to cool fully and pour into containers too. It will lasts for 3 months properly stored and can be frozen for even longer!

How to dehydrate tomatoes in Ninja Foodi
Slice baby plum tomatoes in half or use tomatoes slices and mix / brush with olive oil, garlic powder, onion powder, dried oregano, dried basil, salt & pepper. Lay in a single layer on racks with skin side down. Dehydrate at 60° C or 140 degrees F. for 3 hours. Flip and dehydrate for another 3 hours.
Just like when making Ninja Foodi beef jerky you will want to set pieces on paper towels for an hour once done and wait until completely cool to store in a sealed container.
Sun dried tomatoes Ninja Foodi
The biggest difference between sundried and “roasted” is how long you leave them in there to dry out and dehydrate. When you take them out depends on what you are making. If you are using these in homemade sauce I would leave some texture, you don’t want hard bits. On top of pizza or baked into breads you may want the completely dried timing.
Storing sun dried tomatoes long term
If you want to store these to use in latter months make sure they are completely dry without any moisture to them. You want them to reach a beef jerky-like consistency. Remember that when they cool they will dry and harden up even more. Use a thick freezer bag. Pour them inside and suck ALL the air out. Keep in an area free from sun no higher than 60 degrees F. You can keep this way for 6-9 months to enjoy on all the things.
Ninja Foodi Tomatoes and Onions
You can add other things into the basket with the air crisp function like we did in our How to Roast Tomatoes in Air Fryer post. Here we used this function with whole tomatoes, jalapenos and onions in order to then blend and make salsa with all of it. You could dice yellow onions in with the olive oil on bake function too with no change in the timing.
How long to cook tomatoes in Ninja Foodi
That depends on what mode you are using, how large they are and how cooked down you want them to become. It is from 45 minutes to 6 hours basically. The best part is that you can check them often to check and see when you feel they are ready to remove and start to cool.
How long to roast tomatoes in air fryer for soup
If you wanted to make a sundried tomato soup after these were done to your liking, it will deepen the flavors to become a rich bold flavor vs. just cooking them down. I would use the 45 minute confit steps below with olive oil for this. You just want to soften, season and puree for a smooth dinner or side dish.
Can you can tomatoes in Ninja Foodi?
No. Electric pressure cookers are not set up to can. Although they can reach very high temperatures it is not quite high enough. They are smaller too and may not have the necessary pressure control or capacity for canning jars safely. Pressure canners on the stovetop are set up for this, we show you how to can here.
You can use air crisp, dehydrate or bake to cook them a number of different ways. I share all 3 here which vary depending on how “dried” you want them to become. You use bake for a tomato confit in pressure cooker style, dehydrate or air crisp will give you sundried tomato style that can be stored.
You can use the air crisp button at a low temperature to have the same effect where the water is sucked out of the food. You can dehydrate tomatoes this way, beef for jerky or make homemade dog treats with chicken.
Ninja Foodi Tomatoes
Equipment
- 1 ninja foodi
- 4 dehydrator racks if dehydrating or air frying
Ingredients
- 2 c cherry tomatoes, or plum tomatoes, sliced in half to dry, kept whole for confit
- 1/2 c olive oil
- 1 pinch sea salt
- 1 pinch oregano
- 1 pinch basil
- 1 pinch garlic powder
Instructions
- Dehydrated Ninja Foodi tomatoes – Slice baby plum or cherry tomatoes in half or use tomatoes slices and mix / brush with olive oil, garlic powder, dried oregano, dried basil and salt. Lay in a single layer on racks with skin side down. Dehydrate at 60° C or 140 degrees F. for 3 hours. Flip and dehydrate for another 3 hours. Lay on paper towels for an hour once done and store in a sealed container.
- Sun dried Ninja Foodi tomatoes – Using air crisp air fryer mode – Close lid that is attached and preheat at 240 F for 5 minutes. Spray basket and lay tomatoes with olive oil and seasonings in a single layer inside. Close attached lid and set to air crisp for 30 minutes. Then turn the tomatoes over and cook for another 30 minutes. Check every 10 minutes at this time and remove when they are as dried as you'd like.
- Ninja Foodi Tomato Confit – Leave tomatoes whole for this or slice in half. Toss with olive oil, seasonings listed + thinly sliced two cloves of garlic + a teaspoon of balsamic vinegar. Layer bottom of the pot with whole cherry tomatoes. Use the bake mode at 120c or 250f for about 45 mins. Mix every 10 mins or so until soft and squishy. Allow to cool fully before you pour into a container. Keep in sealed container in fridge for the week or best if used immediately.
