Instant Pot Fettuccine Alfredo without Heavy Cream

You could even add diced chicken for a heartier dinner idea but as is it is wonderful. It is definitely one of our cheap Instant Pot recipes because you only need a few ingredients and they’re inexpensive to pick up.

If this is your favorite meal at the local Italian restaurant you will love that you can now make it right at home. With just a few ingredients you can use traditional or smaller noodles that will taste the same but cost a lot less. If you have a Crockpot Express or Ninja Foodi those will work the same way.

Ninja Foodi Fettuccini Alfredo

If you are going to use this brand there is just one change to the directions below. All you need to remember is to use the lid that is not attached for the high pressure function. You don’t need to crisp anything for this meal so the other lid won’t be used.

Here’s how easy it is to make in your electric pressure cooker. The basic steps to make Instant Pot chicken fettuccine alfredo are here. You’ll need to break your fettuccine noodles in half to fit them properly in your pot, I did the same thing when I make Instant Pot spaghetti.

In my opinion it is easier to eat when they are a bit shorter anyway. Now you can make this alfredo as thick or as thin as you want. Use more or less half and half and/or cornstarch to adjust it to the thickness you desire. To add meat just put in shredded rotisserie chicken (or drained, canned) after the pressure cooking process is done. It’s super easy.

Recipe #1 using homemade sauce is listed below as to what you need to get started. You could use vegan plant based butter and/or coconut milk for a vegetarian dairy free option for this.

Ingredients

  1. Fettuccine noodles are best and the timing is for this size
  2. Chicken broth or stock is better than water
  3. Garlic – I use jarred minced but could roast your own
  4. Butter will make it creamy for a homemade sauce
  5. Parmesan cheese gives it that classic flavor
  6. Half and half or heavy cream are best, don’t count the calories on this
  7. Oil – I always use olive oil but any will do
  8. Salt is optional but I feel it needs a bit
  9. Cornstarch is used as a thickener, optional of course

When you make sauce from scratch you can tweak it to your liking many different ways. One that is popular is to make spicy like our cajun alfredo sauce. If you’d rather make that then use the directions in that post.

Instant Pot Fettuccini Alfredo with Jarred sauce

Ingredients

  • 15 oz. jar of alfredo sauce
  • 2 cups chicken broth
  • 3 cups small uncooked noodles, I like medium shells

Second to our Kraft Mac and Cheese in a pressure cooker, this is a quick meal I can throw together with 3 ingredients.

Directions

  1. Add 1 jar of alfredo sauce – 15 ounces
  2. Pour in 1 cup of chicken broth
  3. Then pour the 2nd cup of broth inside your alfredo jar, add the top and shake. Pour this into your pot now.
  4. Sprinkle in 3 cups of medium shells or other small uncooked noodles, stir.
  5. Set to pressure cook high for a 4 minute cook time
  6. Allow steam to naturally release for 2 minutes
  7. Then quick release the pressure and open lid.
  8. Turn pot off, add salt and pepper to taste, stir and serve hot, add parmesan on top if you’d like

You could easily add a can of drained canned chicken to either one. If you just want a fast meal that will take 10 minutes start to finish, use the jarred recipe. 

It is necessary to use both alfredo sauce and broth to thin it out. If you just add sauce it will be too thick and may cause the burn notice to arrive. Here are step by step directions. There is a printable recipe card below too with all of the necessary ingredients listed. If you want to add raw meat, first set Instant Pot to saute and add some olive oil. Cube chicken into bite size pieces and add in. Cook until meat is no longer pink, then turn pot off.

How to Make Homemade Fettuccine Alfredo in Pressure Cooker

  1. OR you can just add a can of precooked canned chicken (or tuna) to your alfredo pasta at the end.
  2. Break pasta noodles into 3 equal pieces. Pour in broth, add garlic, salt and oil. Then add broken noodles and mix well.
  3. Place the lid onto the instant pot and close the pressure release valve. Set the pot to manual, high pressure for 8 minutes. 
  4. When cooking cycle is complete, quick release steam.
  5. Carefully open pot and separate pasta with a fork.  Add drained can of chicken now if desired.
  6. Stir in butter, cheese and half and half. Set pot to saute. In a small bowl add cornstarch mixture and some of your hot liquid, whisk together and add back into pot.
  7. Heat until bubbly and thickens.  Serve immediately with chopped fresh parsley garnish. 

What can I add to my fettuccini alfredo?

I mentioned shrimp, chicken and canned tuna above. In the first step when you’re adding the noodles you could include 1/2 cup of frozen peas too. That is kinda’ my go to. If you have leftover ham that is good too. Dice it small and add it with all other ingredients at the start so it can heat together.

    How do you revive fettuccini alfredo?

    If you have leftovers slow cooker chicken alfredo, or this you either way would store it in an airtight container in the fridge. When reheating, move to a microwaveable dish and add 1-2 tbsp of broth or water. Cover with a paper towel and heat in 30 sec. intervals. Stir every time you add more time so it can be heated evenly.

    Equipment

    • 1 pressure cooker

    Ingredients 

    • 16 oz fettuccine noodles, or small noodles like shells or rotini
    • 3 c chicken broth
    • 1 tbsp garlic, minced
    • 1 tsp salt
    • 1 tsp oil
    • 2 tbsp butter
    • 3/4 c parmesan cheese, shredded
    • 1/2-1 c half and half, depending on how thick you want it
    • 3 tbsp cornstarch, optional, depending on how thick you want it

    1. My noodles were not covered my the chicken broth, so my top noodles were not cooked all the way. Any tips?

    5. This is a great simple recipe, just what I needed. Made this as a side for steak and snap peas. I will add some chicken another time! I added a dash of nutmeg to my alfredo.

      I would recommend a *long* fork (if you have one- I don’t) to break up the pasta since its kind of hot to use a regular sized fork.
