How to Make Steak Tips

I usually use steaks to slice into small bites like you see below but technically it should be from the tenderest part of the cow. I have made these into smaller bites of our Fall Apart Sirloin Tip Roast but I don’t always have one of those on hand. It is very versatile as far as the cut goes. One with less marbling is best though so it is super duper tender.

Steak tips in the oven is what we are sharing with you here!! Baked bites of steak with a dry rub are delicious, easy to make, and can be a pretty cheap meal depending on the cut of beef you use. You could saute these on the stovetop too but on a sheet pan is the best way to caramelize the outsides.

Do steak tips need to be marinated?

Not necessarily though soaked in a sauce can make them more tender and add a ton of flavor to your meat as well. If marinated after cutting into bite sized pieces you only need an hour or so, left whole you could leave in the fridge overnight if you wanted to.

What cut is steak tips?

These are also known as beef tips or sirloin tips. Small pieces of beef that are cut from the tender and flavorful sirloin or top sirloin primal cut of the cow. Typically cut into bite-sized cubes or strips and are known for their tenderness and rich beefy flavor. They can be baked, slow cooked or Braised Beef Tips on the stove.

How to Make Steak Tips

How do you slice steak tips?

Choose a tender cut of beef suitable for this meal such as sirloin, top sirloin, flank steak, or tenderloin. These cuts are flavorful and can be easily cut into bite-sized pieces.

  1. Trim using a sharp knife to trim any excess fat or connective tissue from the steak. This helps ensure that they are tender and free from chewy or tough pieces.
  2. Cut Into Strips on a cutting board and slice it against the grain into strips. Cutting against the grain helps break up the muscle fibers, resulting in more tender steak tips. Aim for strips that are about 1/2 to 1 inch thick, depending on your preference.
  3. Cut Into Cubes once you have sliced into strips, cut each strip crosswise into bite-sized cubes. Again, aim for uniformity in size to ensure even cooking.
  4. Season with our Steak Dry Rub or toss with bbq sauce
    • You can make garlic butter steak bites with a mixture of those 2 ingredients, or just simple salt and pepper.

Same goes with our Instant Pot Beef Tips and Gravy, with a sauce. I cut them the same size if I don’t use stew meat to make this because that is what is on sale and I cannot pass it up.

What is the best cut of steak for steak bites?

Filet Mignon also known as tenderloin steak, is one of the most tender cuts of beef. It has a buttery texture and mild flavor, making it ideal but the most expensive. Since it’s naturally tender, it cooks quickly and remains juicy even when cut into small pieces.

  1. Sirloin steak is another excellent option for the best Sirloin Appetizers. It’s flavorful and moderately tender, with lean meat. Look for top sirloin or Tri Tip in Oven for the best results. Sirloin steak can be cut into bite-sized pieces and cooked quickly over high heat for delicious steak bites.
  2. I have made this with Ribeye in Air Fryer because it is well-marbled and bursting with rich, beefy flavor. While it’s not as lean as a filet or sirloin, it is incredibly tender and juicy, making it a delicious choice. Cut into small cubes and sear them quickly for tender and flavorful bites.
  3. New York Strip, also known as strip loin or Kansas City steak, is known for its excellent flavor and tenderness. It’s slightly firmer than a filet but still tender enough for these. Look for well-marbled pieces and cut them into bite-sized pieces for a tasty appetizer or main dish.

Flat Iron steak, also known as top blade, is a relatively inexpensive cut that’s tender and flavorful. It’s well-marbled and has a rich, beefy flavor.

How long to cook steak tips in oven at 425?

If you didn’t want to switch between 400 and 450 degrees you could bake at one temp. Set at 425 for the total of 10 minutes. Total timing you need overall is about 15 minutes with resting a bit when they are done. If you wanted to make this in a skillet over medium high heat you’d want to refer to our Pork Bites instructions. We used a butter and minced garlic sauce for that one with a bit of olive oil. Same idea, different protein and sauce. Serve either with mashed potatoes and voila!

Equipment

  • 1 sheet pan
  • 1 knife
  • 1 cutting board

Ingredients 

  • 4 steaks, cut into bite size pieces
  • 1 tsp olive oil
  • 1/2 c brown sugar
  • 1 tbsp garlic powder
  • 1 tbsp salt
  • 1/2 tbsp chili powder
  • 1/2 tbsp paprika
  • 1/2 tsp garlic salt

Instructions 

  • Blot steaks with paper towels to remove moisture on outsides. Preheat oven to 400 degrees F. Line a sheet pan with non stick foil.
  • On a cutting board remove any fat and then slice into squares that are bite sized. Put into a bowl and toss with the olive oil. Mix together seasonings in a cup and pour on meat. Toss together so all pieces are nicely coated.
  • Pour on to the sheet pan in a single layer so they aren't overlapping. Bake at 400 F for 5 minutes. Then raise it to 450 degrees F for 5 minutes for medium or 6 minutes for very little pink inside. Allow to sit on pan out of oven for a few minutes and then serve.
