New York Strip Steak in the Oven is a cut from the short loin, we’re here to help. You don’t always have your grill available, but a close second is seared and then baked. We are here to share how to cook strip steak to medium rare and fork tender with every bite.

Unlike our Steak Tips in the Oven (which are amazing too) we are going to sear in a cast iron skillet initially to lock in those juices. That is tip number 1. You can typically fit 1 or 2 comfortably in the pan but are showing you just one large piece here since it was rather large.

Tip number 2 has to do with keeping it as tender as possible. You know how great steak is at restaurants? Well it is because they pay close attention to the internal meat temperature. Tougher cuts like this one does NOT get more tender the longer it’s cooked. With that said you want to keep it pink in the center.

Tip number 3 is the same as we spoke about regarding beef strip loin steaks. I recommend cooking in a cast iron skillet over high heat and wait until it is smoking hot before adding meat. With the bit of olive oil on the outside, keep it to 3-4 minutes per side and about 5 baked, to give it a nice crust.

Tip number 4 – Always wrap or tent after you remove the steak from the oven. This not only keeps it warm but also locks in the juices to keep it tender. * and you can use pan sauces to thicken into a gravy if you want while it rests too. ๐Ÿ˜‰

Beef Strip Steak Recipe

Beef strip steak in oven is melt-in-your-mouth tender. Kept medium rare and pink inside, you can lightly season or use our dry rub too.

Ingredients 

  • 1 strip steak
  • 1 tbsp olive oil
  • 2 tbsp steak dry rub, or just use salt and pepper

Instructions 

  • Remove the steak from the refrigerator in advance so that it warms up to room temperature – about half an hour. Preheat the oven to 380F. Rub the steak with olive oil and then salt and pepper (or my dry rub linked above).
  • Fry the steak in a dry hot cast iron pan for 3 minutes. Turn the steak over to the other side and fry for another 3 minutes.
  • (if using a regular skillet to sear, you would need to remove and place the steak in an oven safe baking dish) If using cast iron you can transfer from stove to oven now. Bake for about 5 minutes for medium rare or 7 minutes for medium.
  • When done, remove from oven, lift meat out of pan and into a piece of foil, wrap up and leave to rest, wrapped, for 10 minutes. At this time the temperature inside the steak will rise about 5 degrees more and lock in the moisture so it is as tender as possible.

Notes

Ideal temperature is 130 before you wrap it in foil so it is medium but still a bit rare. This cut will not get more tender the longer it cooks so you do want pink. You can refer to our What Temperature to Cook Steak

Why is my strip steak tough?

If your lean cut whether it be beef or Pork Steaks in the Oven, it is likely tough because you cooked it too long, beyond 140F will become chewy. Another reason may be that you didn’t sear in a hot pan to lock in the juices. And at the end if you didn’t allow it to rest for for 5 minutes at least, the juices will release out making it less juicy.

Other Cooking Methods

  1. You can cook Steak in the Instant Pot this way with potatoes and gravy. You won’t get a crispy exterior in this case.

What to Make with Leftovers

If you do have some of your beef strip steak recipe left what I always do is save in a sealed bag in the fridge. Next day I will trim the fat and dice into small bite size pieces. Instead of ground beef I will use this instead to make 5 Ingredient Chili.
