We LOVE this mini quiche recipe! Better yet, we love (ok it’s me) muffin tin dinners. I combined our two loves last night and look how great they turned out. We made this with spinach but you could use ham too. (affiliate links present)

Muffin Tin Spinach Quiche

Have leftover ham and a quiche recipe you already love? Use that with my timing and how I made these bite size pie crusts. This one uses our easy spinach quiche recipe to fill, but just in a smaller form. Made as a tasty appetizer, breakfast or fun dinner idea, this will change the way you make this classic French recipe.

This bell pepper breakfast quiche recipe is great too. That is why I love this dish so much. You can make all sorts of varieties just by changing the add ins. You can make vegetarian with lots of diced up bell peppers or broccoli florets, or add bacon bits and ham into your spinach mixture like we do often.

How to Make Homemade Mini Quiche

I love to start with frozen creamed spinach from Green Giant. I buy these boxes in bulk so I always have the ingredients I need on hand. Cuts down on the prep time and number of ingredients I need overall. Once you have your spinach quiche mixture, you just roll out the already made pie crust.

For years I would just use the top of a drinking glass to cut out the rounds that would fit inside each hole. Of course a large round cookie cutter can be used if you have one to make your small pie crusts. You do want them larger than the hole itself so the sides are also lined and allow the filling to bake into it and not the pan itself.

Spray your muffin tin so they will slide out when your mini quiches are done. Then push it into the bottoms and fill each hole about 3/4 full (they won’t really rise so they won’t overflow).

Before you begin I suggest watching the video I included in this post. Then you can see how to make the egg mixture, fill the muffin cups and how I made them the right size. It will take about 30 minutes total to do.

You can make the insides for this and make it without the carbs on the outside too though. Read our crustless broccoli quiche recipe for that version. Both are wonderful and an easy start to the day packed with protein. Without the crust is a bit harder to get out of the pan and messier if eating with your hands but both are wonderful.

Mini Quiche Recipe Ingredients

  1. Large round cookie cutter or glass to cut the crust
    1. Unless you are making it crustless like our Bisquick zucchini quiche recipe
  2. Regular size muffin tin
    1. could try it in a mini muffin tin using a smaller glass to cut pastry crust
    2. timing would be less since there would be less quiche filling
  3. 1 pkg. frozen creamed spinach from Green Giant
    1. or make your own homemade using heavy cream and a fresh bag of greenery
  4. Eggs
  5. Refrigerated pie crusts (or from scratch if you prefer)
  6. Swiss Cheese
  7. Add ins – 1/2 cup leftover ham and cheese, bacon bits, sliced mushrooms, green onions….

Bake at 375 degrees for about 15 min. or until the tops are golden brown. If you loved our easy mini quiche recipe we have other muffin tin recipes to enjoy!

Mini Spinach Quiche Recipe

  1. Unroll your pie crusts and cut out circular pieces big enough to lay inside regular sized muffin tin holes. They will just slightly go up sides but not all the way.
  2. Put frozen packaged creamed spinach in microwave and follow directions to defrost and heat. Shred your cheese and put in a bowl.
  3. Whisk eggs and pour in with your cheese. Add all other ingredients you want to add in like bacon, mushrooms, ham, cheddar cheese if you like…..
  4. When spinach is warmed, cut open the package and add to your bowl. Fold everything together
  5. Spray your muffin tin with non stick spray and push mini circle pie crusts into holes. Spoon about 1/4 cup of spinach quiche mixture in holes on top of crust pieces.
  6. Preheat oven to 375 degrees F and bake for about 13 – 15 minutes or until egg is not soft any longer in the center and there is just a slight brown on the tops. Serve warm as an appetizer or meal!
What pairs well with mini quiche?

If serving these for brunch I would go with other items that can be picked up. You can use the same concept of baking in muffin tins but with sweeter fillings too. Use pie filling for sweeter options, offer fresh fruit on skewers, muffins are an inexpensive add as well as bagel bites and cream cheese.

Why is my quiche crust soggy?

I find if I bake and serve immediately I do not have this issue, but if it is going to sit for a while or you want to serve it cold you will want to par bake it for a few minutes before adding the filling. This step will fix the soggy shell you are experiencing. Set parchment paper on top with baking beans to keep it from rising for about 10 minutes, then add filling and continue baking until set.

  • 1 muffin tin

Ingredients 

  • 3 eggs
  • 1.5 c swiss cheese, shredded
  • 1 pkg creamed spinach, frozen, thawed, 10 oz., Green Giant brand used
  • 2 tbsp bacon bits, (optional)
  • 1/2 c ham, (cubed, optional)
  • 3/4 c mushrooms, (sliced, optional)
  • 2 quiche crust, link to homemade here or use refrigerated

Instructions 

  • Unroll your pie crusts and cut out circular pcs. big enough to lay inside muffin tin holes and go up sides just a bit.
  • Put creamed spinach in microwave and follow directions on pkg. 
  • Shred your cheese and put in a bowl
  • Whisk eggs and pour in with cheese
  • Add all other ingredients you want to add in like bacon, mushrooms and/or ham.
  • When spinach is done add to your bowl and fold everything together well.
  • Spray your muffin tin with non stick spray and push mini circle pie crusts into holes

  1. So easy and delicious! I don’t normally think store bought pie crusts tastes great when I make regular sized quiche, but that’s what I used for these since I had one in the freezer that needed to be used. The crust was moist, flaky, and delicious!!! Our family enjoyed them!
