Easy breakfast cottage cheese quiche in a tortilla in the oven or air fryer step by step directions are here. We will show you how to make a large crustless mini quiche or with any vegetables and cheese you’d like.

So you love omelettes and quiche, this a great cross between the two of those. Served for breakfast, brunch or a protein packed dinner with a thin crust to house it all. Add diced tomatoes, bell peppers or olives to make it heartier.
Similar to our Bisquick Zucchini Quiche but with with NO flour mixed in, instead you will use cottage cheese as a thickener of sorts. I mean we all just want the insides of the pie anyway right? Using a large burrito size tortilla is a great way to make this low carb but still delicious.
Ingredient Notes
As for cheese you have tons of choices. Swiss is typical when you think of this French pie but not a must. You can use white cheddar, pepper Jack if you want some heat to make it sorta’ spicy or even mix and match half and half if you like. Go with what you love!
You are going to start out with 1 large tortilla (burrito size) on the bottom to use as a sort of pie crust. This size is just about right to fill the pan
You want a few large room temperature Eggs, 4 medium is about right that have been whisked before you add all the other items.
I suggest full fat cottage cheese vs. skim because you want fat to make it creamy and the regular type has more protein in it too typically.
Optional Add-Ins
I added a few mini tomatoes cherry, quartered are optional but a great choice to add flavor as well as 10 olives chopped or sliced give you a bit of sodium, texture and flavor
Equipment Needed
I used a round silicone pan so you can slide it out easily but you could use an 8 inch round pan sprayed. A bowl is needed to mix everything together for the filling.
Substitutions
To make this dairy free you can use lactose free shredded cheese for sure, Daiya has great varieties from Swiss to cheddar. I have found Lactaid cottage cheese that tastes almost identical to regular but is dairy free, a great alternative. I haven’t used egg white tortillas yet to make this but imagine if you make them thick enough they would work great.
Cottage Cheese Quiche Recipe
Equipment
- 1 7 inch silicone pan or 7 inch silicone round pan
- 1 Bowl
Ingredients
- 1 large tortilla, burrito size
- 1 cup cheese, shredded, divided
- 4 large eggs
- 1/2 cup cottage cheese
- 8 mini tomatoes, cherry, quartered
- 10 whole olives, chopped
- 1/3 tsp salt and pepper
- 1/3 tsp granulated garlic
Instructions
- Preheat oven to 380 degrees F. Use a 7 inch pan and lightly spray it. Press large tortilla into the bottom, covering the sides too. (if using silicone pan set on a baking sheet so it sits on shelf flat)
- In a bowl, combine all ingredients adding diced veggies of choice inside, but use half of the cheddar cheese in the mix.
- Whisk everything together and carefully transfer it to the tortilla. Bake for 20 minutes. Then remove and sprinkle the remaining cheese on top. Return to the oven for another 5-7 minutes to melt.
- Allow to rest for 5 minutes, slice and serve with a bit of sour cream and/or salsa on the top.

Air Fryer Directions
1 burrito (large) size tortilla wrap + 3 eggs + 2 3/4 c. cottage cheese + 1 c. mozzarella cheese. Toppings of choice. Add your eggs, cottage cheese, salt & pepper to a bowl and mix until combined. – Pour your egg mixture into your pan and top with some mozzarella cheese. Cook in your preheated air fryer at 170c or 325f on for 12-15 minutes!
You can watch a video of how it is made here on TikTok before you begin if you would like. I have made a version of this with our Air Fryer Quiche without any crust at all but I will say that something on the bottom is a lot easier so it doesn’t stick, and slice when done.
in a Muffin Tin
Whisk together filling ingredients and then preheat oven to 350F. Lightly spray muffin pan with non stick spray, use a 4 inch round cookie cutter to cut larger tortillas Press each smaller round into each hole. Pour egg mixture in filled 1/2-3/4 of the way full between the 12 Bake at 350 degrees for 20-25 minutes or until eggs are set and the edges of the are lightly browned.
If you didn’t have a pan with 12 holes you can instead us silicone cups set on a sheet pan. Only downside to these are that they aren’t super stiff so you may have to warm before slicing so they press in easier and shape properly. You don’t want the filling to leak out, that would be a real mess.
What other kinds of crust can you use to make a quiche?
Tater Tot crust is a fun one where you bake for 10 minutes, press to form into the pan, fill and bake. Use what we showed you here with an extra large tortilla. Refrigerated Pillsbury or Marie Callendars pie crust works of course. You could use our Pot Pie Crust instead that is homemade and buttery, could be made gluten free too if need be.
I would serve this to guests with a few option as far as toppings go. I like a bit of salsa, sour cream and/or chopped chives are great. Smaller versions are a crowd pleaser for brunch so people can grab one and walk around while they talk to other friends. If serving as a meal I would make the larger one.
How do you save leftovers?
For either of these you will want them to cool completely. Wrap each leftover piece with plastic wrap and then I like to slide that into a freezer bag as well to avoid any moisture, this will keep a better texture overall. The best way to reheat is in an air fryer for 2 minutes at 360 degrees F or until lightly browned on top.
FAQ
Believe it or not if you combine the two and heat them in the microwave, pan or oven you would never know it wasn’t cheese added!! This normally cold chunky dairy product when cooked turns cheesy and stringy. A great addition to a quiche or omelette.
Look at the middle. If it looks like raw eggs still with a clear color, it needs longer. Once it looks set in the center of it, touch gently. If your finger doesn’t sink in and it is firm to the touch then it is ready to cool on a cooling rack. The top will become lightly golden brown as well which is a good sign.
You can!! I would suggest filling with something savory like egg or frittata mixture but you could use it to bake a sweeter pie as long as it sets and firms inside. Fruit pies won’t stay together enough to slice nicely so I would avoid that filling.
