Preheat oven to 380 degrees F. Use a 7 inch pan and lightly spray it. Press large tortilla into the bottom, covering the sides too. (if using silicone pan set on a baking sheet so it sits on shelf flat)
In a bowl, combine all ingredients adding diced veggies of choice inside, but use half of the cheddar cheese in the mix.
Whisk everything together and carefully transfer it to the tortilla. Bake for 20 minutes. Then remove and sprinkle the remaining cheese on top. Return to the oven for another 5-7 minutes to melt.
Allow to rest for 5 minutes, slice and serve with a bit of sour cream and/or salsa on the top.
