Carrot Cake Cupcake Recipe

The best carrot cake cupcake recipe ever. Really easy to make and there’s a homemade cream cheese frosting recipe too to go with it.

There are three sweet breads I make often; zucchini pineapple bread (will share below), banana coconut bread, and carrot cake cupcake recipe using fresh veggies and sometimes I add fruit to the cake mix! This carrot cake cupcake recipe uses boxed cake mix with add ins to make it easier.

Combined with fresh grated carrots, nuts if you desire, and you can add diced pineapple pieces to make it really moist too.

If you want a homemade cream cheese frosting recipe I have that too. Or use a tub of it if you’re in a hurry….many times we skip the frosting.

If you don’t like or can’t have nuts just leave that portion out. Using a spiced cake mix as the base to this easy carrot recipe makes it simple to throw together. Here is the recipe.

  • Spiced cake mix
  • Grated carrots
  • Walnuts
  • Powdered sugar
  • Butter
  • Vanilla
  • Cream cheese

I add pineapple to many sweet breads to add more moisture and it gives it a little texture and added taste. If you like this recipe you’ve got to try our coconut banana bread, and zucchini pineapple bread too.

OR add apples in our apple carrot muffins, that is yummy too.

  • 1 box spiced cake mix
  • 2/3 c grated carrots
  • 1/2 c chopped walnuts
  • 1/2 c pineapple chunks optional
  • Frosting
  • 1/2 block cream cheese softened
  • 2 tbsp butter
  • 1 tsp vanilla
  • 1 1/2 c powdered sugar


  • Preheat oven according to instructions on box. Prepare box mix adding the ingredients listed above.
  •  Fold in carrots, walnuts, and pineapple if you add those. Fill half way with batter. 
  • Bake for 15-20 min. or until cooked through and springs back. Cool. Frost. Use an electric mixer to whip the cream cheese and butter together and then add other ingredients creaming them together until combined. 
  • Fill pint sized freezer baggie, cut corner off and squeeze on cupcakes.
