How Long to Bake Mini Muffins

How long to bake mini muffins at 350 in the oven to moist and tender. A delicious bite size breakfast or dessert with cake mix or homemade muffin batter.

  • 1 box cake mix spice or yellow
  • 3 eggs
  • 1/3 c vegetable oil
  • 1/4 tsp vanilla
  • 5 bananas brown, ripe, mashed

Instructions

  • Preheat oven to 350 degrees F. In a bowl mix cake mix, eggs and oil until you get a thick batter. In a small dish mash bananas, leave a little chunk for texture if you'd like.
  • Dump mashed bananas into batter and gently fold together. If you want to add 1/2 cup of crushed nuts or chocolate chips fold those in too.
  • Line mini muffin pan with paper liners and fill 3/4 of the way full. Bake for 10-12 minutes or until middle springs back when touched in the center gently.
  • Remove from pan and set on cooling rack.
