Microwave banana bread recipe in a mug is a great treat. If I am in need of something sweet late at night or my teens want a snack after school this hits the spot. You just need a few ingredients dumped into a mug, your oven isn’t the only thing that can “bake”. Just one of many easy mug recipes. (affiliate links present)

Banana Bread for One

Let’s say you only have one brown piece of fruit left in the bowl. You need several to make an entire moist banana bread bundt cake so what can you make with it?? I know, I hate wasting too so you have to find something to do with it. I have a few ideas and this is one that is always a hit with everyone around here.

If you don’t want to make a small batch of banana pancakes out of it I would suggest getting out a large mug! That is right, if you have never had the opportunity to bake in a microwave you are in for a treat and a surprise probably. I like using a large one so it doesn’t bubble over and make a mess.

ou can literally use the same cup to mix all the ingredients together, just like we do with blueberry muffin in a mug or banana muffin in a mug. Like anything else, I like to mash the fruit first, add the wet ingredients, and then add the dry. Incorporate with the same fork you used at the beginning, and you’re set. If you spray the inside first, it’s a bit easier to clean when you’re done—just a tip.

  • 1/4 c all purpose flour, brown sugar, and rolled oats
  • 1/4 tsp baking soda
  • 2 tbsp sugar
  • 1 mashed banana
  • 1/8 tsp cinnamon
  • A small pinch of salt
  • 1 tbsp chopped walnuts if desired
  • Optional 1/8 tsp vanilla extract
  • You could add a pinch of instant coffee for banana coffee cake

Small Batch Banana Bread

To make most of our treats this way like this one or our chocolate chip cookie in a mug you want one that is larger than most. Reason being is it likes to rise a lot, and then come down closer to the end. It won’t stay that high but if your cup is “regular” it will likely flow over and make a mess which is no fun to clean up.

If you don’t have one this size I would just grab one. Then you can make all the things you want in it, not just for this breakfast YUM. Of course it needs to be microwave safe, and I prefer dishwasher safe as well if you know what I mean. You’ll want a fork or spoon to enjoy this once it is done as well.

How ripe should bananas be for banana bread?

You do want them to be quite brown, at least with quite a few darker spots. Stay away from black as those start to turn into liquid and can be turning bad. Always inspect fruit for any bad smells or mold before adding into your batter of course.

Can you ripen bananas for banana bread in the microwave?

Yes!! Poke the skins all over with a fork. Put on to paper towels and nuke for 30 seconds, check and if they are still too firm add another half of a minute. Once they are tender to the touch they are ready and better than using yellow firm naners.

Of course you can decide to cut let’s say our 4 ingredient banana bread recipe in half and make a smaller loaf, but for one person this is easier. Another reason others love this is sometimes you don’t want to heat up your whole house by turning your oven on. Especially during the summertime in the desert it’s a no go.

  • For easier clean up spray inside of your microwave safe mug with cooking spray
  • Mash ripe banana and mix all other ingredients together to create a batter
  • Pour into a large mug (or mix in the cup itself)
    • (it will rise so use a larger cup so it doesn’t overflow)
  • Cook in microwave for 3-4 minutes cooking time depending on wattage of machine.
  • Check at 3 minutes with a toothpick to see if it is cooked to the middle. If not add 30 more seconds and check again.
    • take note of how long it took in your machine for the next go around

Enjoy as is, with a drizzle of maple syrup on top or a dollop of peanut butter is kinda’ fantastic too. Love this quick and easy breakfast idea?? Of course you did. Use a few more to dehydrate bananas as a quick snack too. What are you waiting for??

Can you bake banana bread in the microwave?

I hope we have answered that question for you here. Yes and no is the answer really. We share our banana bread in the microwave recipe here. It is just as delicious as one slice but an individual serving you can enjoy for breakfast or dinner.

Since this is done so quickly you really should make this fresh. You could make 2 at a time in different mugs and cook at the same time without issue I would think. It won’t save real well though so only make it when your guest, or yourself, is ready to consume it. You could prep it with the dry ingredients ready and mixed inside if you wanted.

Or prep that and store in baggies with a sharpie on the outside stating what you need to add to make the batter. If you want to make this often this can come in handy to save a bit of time in the morning hours. When you find that you have a very brown piece of fruit you are ready to go by mashing that, adding your baggie of ingredients and go.

If you did make one and it doesn’t get eaten you could save it. Air is the enemy so you want to remove it from the cup and put into a baggie. Suck all of that air out and seal shut. Leave it on the countertop and you can warm the next day to enjoy. Only 30 seconds will liven it up again to moisten it back up. Adding a smear of butter on top will help make it moist again too.
