Baby Red Potatoes

Roasted red potatoes with rosemary or dill is what you see above. This time we diced them into bite size pieces so it wouldn’t take as long. A great option if you are in a rush.

The quickest of course would be cooking potatoes in the microwave which we have for you here too. These small sizes only take a few minutes this way.

Baby potatoes are small and bite-sized. Harvested early in their growth cycle, they are typically picked when they are about the size of a golf ball. Known for their tender texture and sweet flavor, and are often used in a variety of recipes such as roasted, boiled, mashed potatoes, or fried.

Baby Red Potatoes

Nutritionally these are a good source of dietary fiber, vitamin C, potassium, and other essential nutrients. Low in fat and calories, makes them a healthy addition to your dinner. When buying them, look for those that are firm and free from soft spots or blemishes. If stored in a cool, dark place they will stay good for up to a week or 2 in the refrigerator.

How to Cook Baby Potatoes

Instant Pot Baby Potatoes

We have this Instant Pot red potatoes recipe too. This process is the same no matter what size you have on hand but with this smaller version you could cut the timing in half vs. left whole. This method is great if you are going to later mash them, so you want them as tender as possible, or smash and serve something like chili on top.

Instant Pot Roasted Potatoes

You can start with your pressure cooker and then transition into your Ninja Foodi too though. If you do have that machine you wouldn’t have to transfer at all because of it’s dual function. For an Instant Pot you’d have to use their new lid or move to your AirWave to crisp the skins.

Air Fryer Baby Potatoes

Everyone usually has a distinct preference when it comes to how they love their potato skins done. Personally I like a little bit of texture and crunch. Therefore I will do both, or just stick with frying in my hot air machine. Here are a few different options;

  • Cooking baby potatoes in pressure cooker + air fryer
    • Add potatoes into a vegetable steamer basket with 1.5 cups of water into your pressure cooker.
    • Cook on high for 10 minutes and let natural release for 10 min. before quick releasing rest of steam.
    • Remove potatoes and pour on to a few paper towels. Pat outsides dry.
    • Preheat air fryer to 360 F for 5 minutes.
    • Pour potatoes in spreading out so they are overlapping the least amount possible. Spray tops generously with olive oil spray and sprinkle tops with salt and pepper.
    • Air fry for 8-10 minutes total, gently shaking the basket after minute 5, spraying tops again and re-seasoning or until they are as crispy as you’d like.
  • Cooking baby potatoes in air fryer
    • Rinse potatoes and lay on a few paper towels. Press towels down to dry off the skins. Put into a bowl with 3 tbsp of olive oil, toss to coat. Preheat air fryer to 400 degrees F for 5 minutes.
    • Pour into basket and spread out, sprinkle tops with salt and pepper and/or other seasonings you want. Cook for 10 minutes. Then gently shake basket to rotate them.
    • Spray tops with olive oil spray and add more seasonings.
    • Air fry another 10 minutes or until centers are fork tender and skins are as crispy as you’d like.
  • Cooking baby potatoes in slow cooker

Roasted Red Potatoes with Rosemary
How long to bake halved baby potatoes

Start off with preheating the oven to 400 degrees F. Wash and dry taters with paper towels to dry the skins. In a bowl toss the potatoes in a bowl with olive oil to coat, salt, and pepper until completely coated. Place on a baking sheet and oven roast baby potatoes until they are fork tender, about 40-45 minutes.

Boiled Baby Potatoes

We have boiled potatoes in Instant Pot if you want to try that. It is more like steamed but essentially has the same outcome overall. In a pot with boiling water you would want to add those once you reach a low boil consistently.

Baby Potatoes Recipe

Add a pinch of salt and in 10-18 minutes they should be fork tender. Season with olive oil, fresh herbs and garlic powder then serve.

Ninja Foodi Roasted Potatoes

If you have leftovers you can totally reheat baked potato in air fryer later too. I hate wasting food so don’t throw on whatever is left on the table y’all. Make sure they cool first but you can keep the water off the skins by wrapping tightly with foil and then into the fridge. Reheat within 48 hours but this is the way to get that great texture back.

  • olive oil spray
  • salt and pepper, to taste
  • 1 tbsp rosemary, or dill, diced, fresh is best
