3cbaby potatoesused red
olive oil spray
salt and pepperto taste
1tbsprosemaryor dill, diced, fresh is best
Instructions
** Pressure cooker + air fryer ** Add potatoes into a vegetable steamer basket with 1.5 cups of water into your pressure cooker.
Cook on high for 10 minutes and let natural release for 10 min. before quick releasing rest of steam.
Remove potatoes and pour on to a few paper towels. Pat outsides dry. Preheat air fryer to 360 F for 5 minutes. Pour potatoes in spreading out so they are overlapping the least amount possible. Spray tops generously with olive oil spray and sprinkle tops with salt and pepper.
Air fry for 8-10 minutes total, gently shaking the basket after minute 5, spraying tops again and re-seasoning or until they are as crispy as you'd like.
** Only air fryer ** Rinse potatoes and lay on a few paper towels. Press towels down to dry off the skins. Put into a bowl with 3 tbsp of olive oil, toss to coat. Preheat air fryer to 400 degrees F for 5 minutes.
Pour into basket and spread out, sprinkle tops with salt and pepper and/or other seasonings you want. Cook for 10 minutes. Then gently shake basket to rotate them.
Spray tops with olive oil spray and add more seasonings. Air fry another 10 minutes or until centers are fork tender and skins are as crispy as you'd like.
