Ninja Foodi Zucchini Fritters Recipe

For Ninja foodi recipes will use the lid that is attached and the air crisp button to make these. I like to spray the basket with a bit of olive oil so they don’t stick. You can essentially use this recipe with any shredded vegetables you would like. Use almond flour for low carb or all purpose if you prefer. A healthy deliciously crispy snack we love!

It’s not only great for creating sides but other goodies like pumpkin zucchini muffins for breakfast!!

These are the ingredients you’re going to need to make these as a Cosori air fryer recipe or whatever brand you have:

Ingredient Notes

You will want a few medium sized vegetables for shredded zucchini with skin on. there is a trick when baking with veggies which I will share with you below. You are best to shred these with several paper towels underneath your grater to absorb moisture.

Almond flour is used to make it low carb, or use all purpose flour works as well. This will serve as a binder to keep it together and make a sort of pancake texture out of them.

A large Egg should be ideally added at room temperature to create the ideal texture where they become moist and chewy.

To add flavor into the mix we like to add green onions diced are nice, salt and pepper for seasonings to taste and some grated parmesan cheese is delicious.

    Variations

    If you wanted to add another veggie into the mix we have instructions for zucchini corn fritters here as well. Seasonings are totally up to you but you will want a bit of salt if nothing else as otherwise they will be rather bland.

    Tips

    When making this easy side dish you want to ensure that the shreds are dried. you can do this easily with a few paper towels or a tea towel. Once grated, roll up, gently press down to absorb as much water out of the vegetable shreds as possible. This will allow them to hold together better into patties.

    How to Make Vegetable Fritters

    Grate zucchini on top of a few paper towels and fold to absorb as much water as possible so they get crispy It is very important to squeeze water out or else these will likely fall apart and not crisp well. Toss with the salt in a bowl, let this sit which is an additional step to reduce the moisture.

    1. Transfer to paper towels to press down again.
    2. Add other ingredients into a bowl to incorporate together.
    3. Preheat the air fryer, incorporate the grated dried zucchini into the batter mix
    4. Create small patties and then set on parchment paper until they’re all made.
    5. Set inside in a single layer not overlapping
    6. Air fry then flip each one over, can spray near the end for an extra crispy outside. Remove when they’re as golden brown as you’d like. Serve with sour cream or tzatziki sauce.

    Air Fryer Zucchini Fritters Recipe

    Equipment

    • 1 air fryer
    • paper towels

    Ingredients 

    • 2 medium zucchini, about 2.5 c. shredded, pressed dry
    • 1 tsp salt
    • 1 egg
    • 1/3 c almond flour
    • 1 tsp Italian seasoning
    • 1/2 tsp garlic powder
    • 1/2 tsp baking powder
    • 1/3 c parmesan cheese
    • 2 green onions, diced

    Instructions 

    • Grate zucchini on top of a few paper towels folded together to absorb some of the water. Fold up, gently press down to remove as much liquid as possible.
    • Transfer to a bowl and toss with the salt. Let sit for 15 minutes to absorb more of the water. (you can skip this if you wish to reduce the sodium by just folding shredded pcs. in paper towels and press down to remove water)
    • After 15 minutes sitting, transfer zucchini to paper towels and press down.
    • In another bowl mix together the egg, almond flour, 1 of the green onions, seasoning, baking powder and cheese until combined.
    • Preheat the air fryer to 375 degrees F for 5 minutes.
    • Gently incorporate the grated dried zucchini into the batter mix.
    • Create small patties with the mixture, spray inside of air fryer basket with non stick spray and set patties inside with a bit of space between each of them.
    • Set to cook for 15 minutes at 375 F, flip each one over after 10 minutes. Remove when they're as golden brown as you'd like.
    • Top with sour cream and green onions.

    Of course. Take out of the fridge and it is best to allow them to reach room temperature a bit first. Then microwave for 45 seconds or you could warm in an oven at 375 F for about 10 minutes.

    Can you freeze cooked zucchini fritters?

    You could. Make sure you allow them to cool off completely, then transfer to a freezer bag. They can be frozen safely for about 2 months if in an airtight bag.
