If you’re making toast in the oven for a crowd and want a bunch of fun and different items to serve with it, this is a must. Even if your guests are new to the flavor, I bet they will want to try it. I would say this is a love it or an acquired taste. A lot has to do with the seasonings and how it is prepared as well.

Can you cook bone marrow in an air fryer?

Yes ma’am, we are here to show you how to cook bone marrow this way. If you are just not about to heat up your oven because it is already hot enough inside, this will be a game changer. Just 5 minutes to preheat and 15 – 20 minutes of cooking will get it just right. As smooth as pate with a rich beef flavor my husband and I just love.

Roasted bone marrow is a delicacy in many countries. If you learn to make it yourself though you can have it every day if you like. Homemade is cheaper and a great way to season to your liking perfectly, as well as improving your health.

Is bone marrow fat or protein?

If you look at it when it slides or you scoop it out you would think it was fat, resembles gelatin a bit. It actually is made up of protein collagen that turns into a jello texture once it is cooked. I will say that instead of boiling these the texture is much better this way. A bit thicker and creamier vs. it being submerged into water to cook.

Beef Bone Marrow Benefits

Packed with amino acids, vitamins and nutrients it is great for your skin and nails. Said to improve your joint health too which is a real win. Just a bit smeared on some toast in air fryer or on top of a small bagel for breakfast and enjoy.

Let’s assume you have never even bought this at the store so you’re starting off from zero. No problem, I was there once and here to help. You can find these in the meat section of your local grocery store. If you live in a smaller city they are likely in the frozen meat section, check there if it’s not near the fresh packaged pieces.

Having trouble beyond that? Just ask your butcher. If they don’t have any at the time they will likely order however many pieces you’d like. If that is the case I would order a few batches and freeze what you don’t cook right away.

I do this quite often because I like to buy meat in bulk. That way I can just go down to my deep freezer and pull out whatever I want to defrost for that night or the next. It saves me money for one but also saves trips to the store. Especially during the wintertime this is a must, snowy days aren’t my fave.

Timing below is based on thawed or fresh beef marrow. If you started from frozen that would be fine but it would increase the timing a bit. The great thing about this method of cooking is that you can check tenderness often. Just open the drawer, use a small bone marrow spoon to poke it to test and if it needs longer just close again.

Air Fryer Beef Bone Marrow

It should become like pudding in a sense when done. You could season it at the beginning, when it’s done, or both. Salt and pepper are the obvious choices but garlic powder is wonderful too and/or Lawry’s seasoned salt is popular too. You just need:

  • As many pieces as you’d like, some are whole like you see here and others are sliced in half lengthwise
  • Coarse sea salt and a bit of pepper is really all you need but up to you of course

I would suggest placing a piece of parchment underneath them to catch the yummy insides you want.

Roasted Bone Marrow in Ninja Foodi

If you are using this style of machine you will only use the air crisp function. That requires the lid that is attached to the side only. Just as easy to peek in, just open to check how it’s doing and close if it needs a bit longer. Place the amount of pieces you want to cook inside the basket with holes in the bottom with a piece of parchment underneath.

Typically I would say that you shouldn’t add any foil or paper into the air fryer basket, except there is a reason for this. When the center of the bones start to really soften as desired they may begin to slide out of the bottom. If this happens the parchment will catch it and you’ll easily be able to lift all of it out.

Then it is time to scoop up the inners into a small ramekin to use. Taste, smooth with the back of a spoon if desired, and adjust the seasonings as you’d like.

If you wanted to make garlic roasted bone marrow, sprinkle some diced up air fryer garlic cloves right over the top to infuse that flavor right inside.

How to Cook Bone Marrow in Air Fryer

  • Place bones into your basket, upright, in a single layer.
    • *Parchment paper can be placed on the bottom of the Air Fryer basket if desired to prevent leakage out of the bottom.
    • I would recommend this but if you don’t have any it isn’t a game changer.
  • Set your air fryer to 400 degrees F and cook for 20 minutes.
    • If the bones are small, check at 15 minutes so that all of the good marrow and healthy fat does not leak out of the bones.
  • When middle was tender use tongs to remove cooked soup bones and set onto a dish.
  • Using a spoon or knife, scoop marrow out of bones and spread onto toast.

You will likely have more than will be consumed right then and there. The insides save well so don’t worry about that, I will explain how to do that below. And don’t throw away the bones because you can make beef bone broth in pressure cooker like this with them too!!

How long can you store cooked bone marrow?

You will first want to allow it to cool completely. There should be a thick layer of fat on the top, that is good. Store in a small dish tightly covered with plastic wrap or a cover. With a nice layer of fat kept on top it will keep well for up to 2 weeks. In the case that there isn’t very much to keep it moist you will need to consume it within 3-4 days.

Can you reheat bone marrow in microwave?

Yes, you just don’t want to heat it too long or it will just become liquid. 30 seconds at a time, and test is all you need really. You just want to take the edge off of it being cold and harder. You can also preheat oven to 250, place on a baking sheet and keep an eye on it. Remove once it softens just a bit but before it liquifies.

    Would you share a recipe how to cook and freeze beef bone marrow?

    1. If you wanted to cook from frozen I would decrease the temperature a bit and add a few more minutes checking near the end for tenderness. I haven’t done this yet so don’t have exact instructions for you but typically this is done if starting from frozen.
