This is the best baked queso dip with meat no Velveeta recipe in the oven. It is a killer cheese dip with ground sausage or ground beef and Rotel like our Velveeta sausage dip Rotel. It can be as spicy as you’d like for a crowd.

Baked Queso Dip

First we made this shrimp Rotel dip, that was amazing. If the meat you want to use is seafood then this would be a good choice for that. Cocktail shrimp are best but you could even add some chunks of canned or imitation crab meat too.

You can see all the ingredients below. There are a lot of things you could substitute, or swap out for something else. You can use mild or spicy smoked hatch chiles, or just buy them canned to make things quicker. Rotel will add heat itself but to tone that down you could dice up your own tomatoes.

Ground Beef Queso Dip

This one focuses on ground meats like sausage, beef, chicken or turkey. You will need to precook that beforehand but everything else can just be thrown right into the pan. You have a choice as to what type of dish you use. I LOVE disposable aluminum pans. Especially if I’m making this to serve to a crowd it lends to a much easier cleanup for sure.

Both are great and always a hit. Cheddar, Pepper and Monterey Jack are the cheeses that go really well together but if you have another fave you could use another instead. I would stick to varieties that will melt at about the same rate though.

Jalapenos are optional for heat of course. You can tone them down by removing all the seeds. Leave some in for a hotter pepper. Even diced bell peppers would work quite well in this, or crumbled bacon bits. This is how to cook frozen ground beef if that is all you have on hand, if not just brown on the stovetop.

If you go the pork route I would go with a roll of spicy Jimmy Dean, it’s my favorite. You can also mix half this and half beef or ground turkey. You can load it up with a few different ones too if you want to make this kinda’ a meat lovers version of sorts.

Queso Dip Ingredients

You are going to want by browning your meat. I highly suggest that you use spicy Jimmy Dean ground sausage over ground beef, or half and half, to add a bit of heat and a LOT of flavor though any ground meat will work.

You will want quite a bit of shredded cheddar cheese, pepper jack cheese, and monterey jack cheese. Don’t count the calories on this one, just load it inside and on top and you’ll be the hit of the party y’all.

  • To make it creamy you want to use half and half or evaporated milk could be used but will be a bit sweeter
  • I like to add a can of diced green chiles 4 oz. mild or spicy for flavor
  • A can of rotel is best because it already has diced jalapenos in it but 3 tomatoes diced will work too
  • Some minced garlic is nice for a pop of yummy flavor
  • 6 or so green onions diced are optional

You will want a piece of foil to cover the top while it’s baking so it can kinda’ steam until everything is melted. If you wanted to take it out of the oven and go straight to your buffet table and look nicer you could use a nicer casserole dish or larger Dutch Oven.

If you’re on social media at all you may have seen this made by a few people on Tiktok. Theirs typically uses processed cheese which we didn’t use in this one. It’s addicting for sure. Baked isn’t the only way to make it this way though, you can cook that in a skillet over medium heat, or make smoked queso dip with the same ingredients too.

How to Cook Queso dip with Meat in Oven

It isn’t something I would make just for my family because it makes a lot. I have however cut recipe in half for just us on Christmas Day to keep us full until dinner is ready. You want to cut cheeses in large bite size chunks, dice and prepare veggies and put everything in your disposable aluminum pan or large baking dish.

Cover your full pan with some aluminum foil tightly and put into a preheated oven stirring halfway thru until smooth and creamy, warmed thru to the center. Serve with tortilla chips, bagel or pita chips

You could use processed cheese too if you wanted to. Velveeta hamburger dip recipe would use just that, store bought or homemade Velveeta cheese. Want this to stay warm for hours?? Use a large slow cooker to cook this on low for a few hours and then switch the Crock Pot to warm for Game Day.

Then the lid will maintain the ooey gooey texture of this meaty queso dip for hours beyond the time that it is done. If it begins to thicken up a bit too much you can add a bit of sour cream and stir that in, or cream cheese works too. Another fun one to serve with this is our ground beef taco dip with taco seasoning.

How to Make Oven Baked Queso Blanco

If you wanted to use only white cheeses there are a few to choose from; Mozzarella, Jack, Gruyere, Parmesan, Brie, Asiago, Goat cheese and Feta (which I wouldn’t recommend for this). Just add these choices for a white version of a beef queso dip recipe.

Equipment

  • 1 aluminum pan disposable

Ingredients 

  • 1 lb ground sausage, or ground beef, precooked
  • 8 oz cheddar cheese
  • 8 oz pepper jack cheese
  • 8 oz monterey jack cheese
  • 2/3 cup half and half
  • 1 can green chiles, 4 oz., diced
  • 1 ca rotel, or 3 tomatoes diced
  • 1 tbsp minced garlic
  • 6 large green onions, diced

Instructions 

  • Cut cheeses in large bite size chunks, dice and prepare veggies and put everything in your disposable aluminum pan. (could use a large casserole dish instead) Cover with aluminum foil.
  • Preheat your oven to 375 degrees F. Once warmed place pan on middle rack and bake for 30 minutes.
  • Lift foil and stir ingredients together. Recover and bake for another 20 minutes or until everything is melted together.
  • Remove, stir and serve with chips or pita chips.

How Long Does Queso Dip Last in the Fridge?

You’ll need to enjoy it within 1 week after storing it into the fridge. You want to wait until it has cooled completely first and then move it into a sealed container. When you’re ready to enjoy it again you’ll need to move it into a microwave safe dish. Heat for 45 seconds then stir and heat again for another 45 sec. to 1 minute.

What Can You Eat with Cheese Dip?

I mean there isn’t anything you CAN’T eat with it but there are a few favorites that are typically served with it like; air fryer soft pretzel bites are the bomb, tortilla chips, russet potato chips, everything bagel chips, and my husband says it’s best drizzled inside of baked potato skins. LOL.
