Ok so for years I have made this Jiffy Mexican Cornbread but wanted to change it up a little bit and tweak the ingredients used on the box to make each bite as tender and moist as possible. After a few rounds of experimenting I made the BEST version ever and wanted to share how to make them with all of you.

What can I add to my Jiffy Corn Muffin Mix to Make it Better?

Ok so when baking you may have figured out that adding a bit more fat into the mix makes your end result more fluffy and moist, same goes for these. Instead of just adding milk and egg (as directed on the box) you should add some sour cream!

With that said go for the real stuff, not light or low fat (that would defeat the whole purpose friends). Going a bit further, when adding the milk itself it is best to use vitamin D or at least 2%. Once again, more fat = moister and more flavorful.

Jiffy Corn Muffins with Jalapenos

Let’s take it even another step further because I love to use a boxed mix and making it taste like homemade with this and that. I tried adding roasted jalapenos into other sides to add more flavor and a bit of heat and that worked well so why not with these??!!

Now the key to this is like with our Hush Puppies with Jiffy Mix I will add them diced inside the batter with 1 slice on the top. You can mess around with this combo depending on how spicy you may want them to be – or leave out entirely if you want to keep them as is and mild.

What is the best cheese to add?

Once again, this is optional but for me I grew up in a house that ALWAYS had a lot of cheese. Maybe that is the German side of my family speaking but everything is better with it! In this case since I wanted a bit more heat I used pepper Jack but shredded cheddar would work too if you prefer that variety.

Can you use Greek yogurt instead of sour cream?

Yes! That is a great substitute if that is all you have on hand or just prefer this ingredient instead. It is also a great alternative if you need them to be dairy free you can use Silk brand or a lactose free version. I’ve done this to make our Jiffy Tamale Pie.

How do you make Jiffy corn muffin mix from scratch?

Once you make this you may never buy those little white and blue boxes at the store. To make things easier you can gather all the ingredients listed below and combine into sandwich baggies to store in the pantry. Then when ready to make just combine with 1 large egg, and 1/3 cup milk to make the batter. Adding 2 Tbsp melted butter or sour cream makes them richer.

  • 2/3 cup all purpose flour
  • 1/2 cup yellow cornmeal
  • 3 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt

One year when I was forgetful and didn’t buy enough boxes to make these and our Jiffy corn casserole with cream cheese I had to make from scratch and it literally tasted the same so I have done it this way a few other times since then.

Jiffy Corn Muffins with Sour Cream Recipe

Equipment

Ingredients 

  • 2 boxes Jiffy corn muffin mix, 8.5 oz. each
  • 3/4 cup milk, vitamin d or 2% is best
  • 2 large eggs
  • 1/2 cup sour cream
  • 1.5 cup cheese, pepper Jack used, shredded
  • 2 small jalapenos, optional, membrane and seeds removed, diced and some sliced for the top.

Instructions 

  • Preheat oven to 400 degrees F. Line tin with paper muffin liners, set aside. In a bowl mix together all ingredients leaving some slices of jalapenos aside to place on the top (if you want to add them, it will make the muffins spicy).
  • Use a scoop and fill each liner 3/4 of the way full. Optional to top the muffins with a sprinkle of extra cheese and a slice of jalapeno.
  • Place in the oven and bake for 15-17 minutes, or until a toothpick comes out mostly clean with moist crumbs attached. Remove from oven, take muffins out of hot pan and transfer to a cooling rack so they don't continue to bake and dry out or serve immediately.
