Jiffy Corn Muffin Mix Recipes

Jiffy Corn Muffin Mix is a popular and convenient baking mix that allows you to make delicious cornbread muffins, breads and casseroles quickly and easily. It’s known for its iconic blue box and has been a staple in American kitchens for many years. (affiliate links present)

The ingredients in this white and blue box typically contains cornmeal, wheat flour, sugar, animal shortening (lard), baking soda, and salt. Some variations may also include dried whey or buttermilk solids. To make a batch of let’s say air fryer cornbread, you usually need to add an egg and milk (or a milk substitute to make it dairy free).

Simply mix just until combined, and then bake according to the package instructions. It’s a quick and straightforward way to enjoy cornbread. While it is primarily used for making cornbread muffins, it can also be used in various recipes, such as Jiffy corn casserole, stuffing, or as a topping for meats or salads.

This variety, and Krusteauz version, tends to have a slightly sweet flavor, making it a great complement to savory dishes or as a base for sweet ones. Boxes are widely available in most grocery stores in the United States and is known for its affordability.

This brand also offers other baking mixes, such as Jiffy Baking Mix and JBlueberry Muffin Mix, which can be used to make a variety of baked goods. We are speaking of the white and blue one for corn muffins here. Perfect for a muffin tin or on top of something like Chili Cornbread Casserole.

Overall, this is a convenient option for making baked goods and other dishes that feature the classic flavors of cornmeal. It’s a versatile pantry staple that can be customized to suit your taste preferences and used in a wide range of recipes like Fried Cornbread and beyond.

Ingredients in Jiffy Corn Muffin Mix

Of course the company doesn’t divulge and list exactly what is in the box but over the years many have worked with what is listed to come up with a general copycat version we can now use. The exact measurements on how to make Jiffy cornbread mix is here if you want to make your own.

  1. Cornmeal is the primary ingredient in cornbread and gives it its distinctive corn flavor and texture.
  2. Wheat Flour is often used in cornbread mixes to help with texture and binding.
  3. Sugar adds a touch of sweetness to the cornbread, giving it a slightly sweet flavor.
  4. Lard traditionally is used as the fat source. Animal fat contributes to the texture and flavor of the cornbread. However, some variations may use vegetable shortening instead of lard.
  5. Baking Soda is a leavening agent that helps the cornbread rise and become fluffy.
  6. Salt enhances the overall flavor of the cornbread by balancing the sweetness.

I personally don’t bother making it because I can find it for about a buck at the store and when I do I just load up. It’s not just good as a side baked in an 8×8″ pan or muffin tin. The batter can be poured over a ground beef mixture to make into a heartier dish, like our Jiffy tamale pie.

How to Make Jiffy Corn Muffin Mix

Making corn muffins using Jiffy Corn Muffin Mix is a straightforward and quick process. Now you can add diced chiles or jalapenos into the batter like we did with Jiffy Mexican Cornbread or leave it plain which is still delicious. Here are the basic steps:

  • 1 box of Jiffy Corn Muffin Mix
  • 1/3 cup milk
  • 1 egg

Preheat your oven to 400°F, then get ready for this easy muffin tin recipe. For easy clean up, line pan with paper muffin liners. In a mixing bowl, empty the contents of one box of dry mix. Crack one egg into the bowl with the mix. Pour in 1/3 cup of milk.

Using a spoon or spatula, gently stir the ingredients together until just combined. Do not overmix; a few lumps are okay. Spoon the batter into the prepared muffin cups, filling each about 2/3 full. Place the muffin tin in the preheated oven and bake for approximately 15-20 minutes, or until golden brown on top.

Remove from the oven and allow them to cool in the tin for a few minutes. Then, transfer them to a wire rack to cool completely. You do not want to leave them in too long or they will dry out quickly. You can of course make it in a square baking dish too or Jiffy Cornbread in Cast Iron Skillet which is served up pretty fun.
