  3. During the holidays there are a few musts to make. All of my relatives leave making this Jiffy Cream Corn Casserole to me because it is just that good.

  5. Now many nights I will have leftovers adding a layer of this on the top to make it a whole “new” meal is the way to go. Our Jiffy Chili Cornbread Casserole is a great example of this.

Making corn muffins using Jiffy Corn Muffin Mix is a straightforward and quick process. Now you can add diced chiles or jalapenos into the batter like we did with Jiffy Mexican Cornbread or leave it plain which is still delicious. Here are the basic steps:

  • 1 box of Jiffy Corn Muffin Mix
  • 1/3 cup milk
  • 1 egg

Preheat your oven to 400°F, then get ready for this easy muffin tin recipe. For easy clean up, line pan with paper muffin liners. In a mixing bowl, empty the contents of one box of dry mix. Crack one egg into the bowl with the mix. Pour in 1/3 cup of milk.

Using a spoon or spatula, gently stir the ingredients together until just combined. Do not overmix; a few lumps are okay. Spoon the batter into the prepared muffin cups, filling each about 2/3 full. Place the muffin tin in the preheated oven and bake for approximately 15-20 minutes, or until golden brown on top.

Remove from the oven and allow them to cool in the tin for a few minutes. Then, transfer them to a wire rack to cool completely. You do not want to leave them in too long or they will dry out quickly. You can of course make it in a square baking dish too or Jiffy Cornbread in Cast Iron Skillet which is served up pretty fun.

We will continue to add more options as the years go buy because our family loves it so much and it’s great for things way beyond corn cake. I would highly suggest you start with our Jiffy corn pudding with cream cheese inside or sour cream on top if holidays are approaching.

Then year round use our other tweaks to make main dishes, sides and now we even have a way to transform this mix into a thicker batter to make Cornbread Cookies!! My kids really got a kick out of these and a simple glaze on top when done is a real winner.

  • 1 Bowl
  • 1 pie pan

Ingredients 

  • 1/2 lb. ground beef
  • 1/2 lb. spicy ground sausage, or all ground beef
  • 1 can diced tomatoes
  • 1 can kidney beans, drained
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 2 tsp chili powder
  • 1/8 tsp salt and pepper
  • 1 pinch cayenne pepper, or red pepper flakes
  • 1 box Jiffy corn muffin mix, and ingredients to make batter

Instructions 

  • In a large cast iron skillet pan over medium high heat cook your meat until it is no longer pink. You could add finely diced onions too so they soften slightly together. Drain grease and set aside. Preheat oven to 350 degrees F.
  • Spray round pie pan with non stick spray, or use 8×8 dish. Pour diced tomatoes, beans, and seasonings in with the meat. Stir to combine and transfer to the prepared pie plate.
  • In a bowl, combine the Jiffy cornbread mix with necessary ingredients to make batter; egg, and milk until well blended. Spoon the cornbread batter over the chili mix and spread in an even layer. Bake for 25 to 30 minutes or until top is golden brown and cooked thru.
