Ninja Foodi Pancake Bites
We first began with making these pressure cooker egg bites that are similar to a crustless quiche. Great when taken on the go for breakfast on busy mornings. Kids love carbs though so we went on to make their favorite start to the day, with syrup for dipping.
You could use pancake batter but I don’t always have that on hand so below is an easy batter you can whip together quick. They come out a bit like pancake mix muffins in a mini size pan, like that size if you want to picture them.

Pancake Bites Recipe with Pancake Mix
Below we show you what we used for our first batch, we will share other methods below as well but if you haven’t tried protein packed pancake mix it’s pretty good and great if you’re on a lower carb diet. I feel it is a bit firmer than other varieties which helps when popping them out and creates an ideal texture overall.
- I added fresh blueberries to this batch because that is my favorite fruit and a great size for pancake bites I thought.
- I probably wouldn’t use frozen blueberries or another berry for that matter.
My thought is that they’d sweat a bit in the cooking process and would make the pancake bites a bit wetter. They may not cook thoroughly all the way through if so.
Kodiak Cake Pancake Bites
I’d imagine diced fresh, yellow, bananas would work well too though. That is our next add in. For the protein pancake mix you use:
- 1 cup pancake mix
- 1 cup water
- 1/2 c blueberries if you choose to add those
This will make 1 full batch of pressure cooker pancake bites which is 7 total. You could make this homemade pancake recipe flat of course, but in small bite size balls is just way more fun right??
Pancake Bites Pressure Cooker
Like I said this Instant Pot egg mold works really well and does not require any non stick spray as it is made of silicone and allows you to literally POP the pancakes right out with no issue.
It does stay warm for a little while once you take it out but cools off rather quickly so you can push one out on to a plate and serve them.
- Refill them and make another round if you want more too.
If you have ever “baked” anything in your pressure cooker you do know that there is a bit of a different texture so don’t be alarmed if it is bit off from traditional pancakes. These are a great crazy morning breakfast option for us…and we hope you love them too. Looks yummy right??!!
Instant Pot Pancakes Ingredients
- Instant Pot egg bite silicone mold to make bite size pancakes while pressure cooking
- Pancake mix – this Kodiak cakes protein packed pancake boxed mix works best
You can use a gluten free pancake mix too to make Instant Pot gluten free pancakes
- Water or milk – depends on what pancake mix you use, follow directions on back of box
- Maple syrup for dipping when donbe
- Blueberries – optional add in but really good
- Chocolate chips – optional but tasty add in
- Large bowl
Difference between protein pancake mix and other mixes
- Protein packed is a bit more dense but has a ton of protein per pancake bite
- Traditional pancake are a bit fluffier
- Gluten free pancake mix is a great option when needed
How to Make Pancake Bites in Pressure Cooker
Here is the entire printable pancake recipe for Instant Pot pancakes below. Another fun idea is to use your muffin tin to make larger versions in the oven. We do that often if I am going to use the “old fashioned” method.
- Pour 1.5 c water into your Instant Pot, lower your trivet inside your pot. Make flapjacks batter.
- Spoon 2 tbsp of melted butter into each hole, use 2 egg molds for this batter listed below.
- Pour pancake batter into each hole inside your egg bites mold, 3/4 full.
- Cover with foil and lower into your pot on top of your trivet, one on top of the other.
- Pressure cook on high for 14 minutes with a 5 minute natural release.
- Release rest of steam and lift foil
- Pop each one out and enjoy

Instant Pot Pancake Bites
Ingredients
- 1 egg
- 1 c all purpose flour
- 1/3 c powdered sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 c milk, or dairy free alternative
- 1 tsp vanilla
- 1 pinch salt, about 1/8 tsp
- 1/4 c butter, melted, to spoon into molds before batter
Instructions
- Pour 1.5 c water into your Instant Pot, lower your trivet inside your pot.
- Use flapjacks directions on Kodiak cake box which requires 1 c mix + 1 c water. Mix well. Add blueberries if you like. We used fresh fruit.
- Pour batter into each hole inside your egg mold, 3/4 full.
- Cover egg mold with foil and lower into your pot on top of your trivet.
- Set to pressure high for 8 minutes.
- Allow to naturally release for 5 minutes, then release rest of steam.
- Carefully lift mold out, remove foil, allow to cool enough to handle mold.
- Flip egg mold over on to a plate and pop each pancake bite out of each hole.
- Dip into syrup and enjoy!

Very easy and tasty but doughy. I could have sprayed some oil in the mold for better release. 2 Tb of sugar is really sweet. I used dried blueberries and am undecided about the texture but happy there was no “purple or green bleed” effect from fresh. I might try frozen: I have heard of tossing berries in some flour helps-worth a try.
I used Swerve pancake mix and added some leftover raspberry jam I had made (could be sugar-free if wanted). At first when I tried them they seemed undercooked but letting them sit a few minutes did the trick and they were great.
This was very easy and tasty. I used the protein pancake mix I had in our pantry. The bites turned out moist and delicious. My husband went back for seconds, so this is a keeper in my book. Thanks!

When I make the Kodiak waffles or pancakes, I always add the egg and sub milk for water to give extra punch of protein. Would that work for these or do they need to be mixed with water?
I haven’t tried that but I think it would be worth a shot! If you try it let me know if it turns out just as good so I can share.

Can you do multiple molds for larger batches?
YES!! I tested this earlier this week. I made the Kodiak mix with 2 cups of mix, 1 cup of water, and 1 cup of milk. I did spray the silicone cups, just in case. Cover the bottom tray with foil as directed, and then I put 4 canning lids on top. I prepared the second mold the same, and just set it right on top of the canning lids. 8 minutes. Done!

I know you mentioned that the consistency of these will be different in the instant pot vs baked goods. But these came out doughy. After the 5 minutes of natural release when I released the rest of the pressure and started to remove the foil, they looked wet still. So I added two more minutes and they are still not a “done” consistency. Might I have done something wrong?
After 5 minutes mine aren’t doughy at all. Thoughts are you may have filled the holes too high so they didn’t cook all the way through, or there wasn’t enough water in the bottom to cook properly. Another thought might be the type of batter you used and if you made them on the thin side with a lot of liquid. That is all I can think of. Make sure the seal inside your lid is on properly too so it creates a good seal.
What setting are they on when you make them (cake, steam, etc.)? I have seen a similar recipe that steamed for 5 minutes, but we didn’t like how they turned out. Thanks.
Your recipe sounds wonderful! My question is in the recipe it says to cover the egg bite mold with foil. My egg bite mold came with a silicone snap on lid. Can I use the snap on lid in place of the foil?

I don’t like using plastic myself in the microwave or IP. Unsure how it would handle heat. I wouldn’t recommend it.

This looks yummy and easy! I I have a question. In your ingredient list for the Kodiak, you say 1 c water. Then the instructions tell you to follow package for 6 pancakes. My package says 3/4 water but 1 cup. In the side for muffins, it’s says 2 cups mix, 1 cup milk.

Yes follow the directions on your box. In recipe card I used Kodiak cake mix for flapjacks on the side of the box which call for 1 cup mix and 1 cup water. That result is shown and works well.
The Kodiak box does say 3/4 cup
If you use the recipe for flapjacks or waffles on the side of the box it calls for 1 cup, that is what I used and that is what is shown. You need to use 1 cup mix and 1 cup water.
