Herbed Crusted Chicken Breast

Baked herbed crusted chicken in oven or air fryer is a delicious copycat Texas Roadhouse recipe. Parmesan crusted with mustard, parsley and basil. Choose boneless skinless thighs or Chicken Breast in Oven 350 with white meat is great too.

Our parmesan herb crusted chicken recipe is a flavorful and delicious dish that features chicken breasts coated with a mixture of breadcrumbs and diced fresh herbs. It’s crispy on the outside and tender on the inside, making it a crowd pleaser. (post may contain affiliate links present)

Now you could Bake a Whole Chicken at 350 this same way too, it would just take much longer. For an entire bird I would double the coating and cover for at least half the cook time. That way you can get the insides moist and mostly cooked, then remove to crisp the outside and get the coating to brown nicely (but not burn).

In the event you wanted to use this breading on frozen chicken breasts recipe you could, but in a similar fashion. You’d need to allow a bit of cooking to happen first, covered, then add the topping and remove cover to get that golden brown and crispy on the top.

  • 3-4 medium boneless skinless chicken breasts
  • Parmesan grated
  • 1/3 c Panko breadcrumbs
  • Lemon juice
  • Basil fresh, chopped
  • Avocado oil or olive oil
  • 1.5 tbsp mustard
  • 1 tbsp parsley fresh, diced
  • 1/2 tsp salt and pepper
Can you coat chicken with herbs instead of breadcrumbs?

Yes, and it is delicious too. I do suggest adding some parmesan cheese to add flavor and some umami to this dish. Just coat boneless skinless breasts or thighs with this mixture to coat and bake until tender and juicy.

Do you have to use eggs to bread chicken?

Nope, we have several suggestions of other things you can use to get everything to stick nicely. In this case we coat our herbed chicken with mustard which adds flavor and allows everything to adhere on to the outsides well.

This is yet another example of How to Bread Chicken Without Eggs. We use mustard in this case to make a thick and somewhat creamy coating before dunking into the breadcrumbs and parmesan. For dairy free you could skip the cheese entirely but it is low in lactose.

And a sheet pan is what you will use to get this done, or better yet a 9×9″ pan if you are only making a few at a time. If you choose to make this Ninja Foodi chicken breast style you could fit 2 probably without overlapping your pieces. That method will get you a really crispy outside which we love as well.

Now if you wanted to use something other than cheese you could substitute all or half of it with crushed nuts for another idea. We have made Almond Crusted Chicken before and not only does it offer a new flavor but the crunchy texture is surprisingly delicious.

Just like if you were making Herb Crusted Salmon this way, the size of the dish you use will depend on how many people you are serving. This is easy to double or triple but there will be juices released so you want higher sides on the dish so it doesn’t run all over and ruin the inside of your oven.

How to Make Parmesan Herb Crusted Chicken

  • Preheat oven to 350 degrees F. In a bowl, mix lemon juice, mustard, salt and pepper.
  • Add olive oil and basil and mix together.
  • In a separate bowl, mix bread crumbs and cheese.
  • Spray inside of a 9×9″ pan with non stick spray
  • Rinse and dry the chicken fillets with paper towels.
  • Brush with lemon mixture. Press each piece of chicken into bowl with cheese mixture to coat.
  • Lay inside pan.
  • Bake for 20 minutes to up to 30 minutes at 350 f, depending on the thickness, or until thickest part reaches 165 F internally.
  • Rest for 5 minutes before slicing.

Many times we will make this with Parmesan Crusted Brussel Sprouts or pan fried green beans to serve together. A great duo that you can bake together.

Baked Parmesan Herb Crusted Chicken

You can use a variety of herbs, fresh or dried, to add depth and complexity to your dish. Here are some popular choices beyond what we have used for your chicken dish.

Herbs for Chicken

  1. Fresh parsley adds a bright and fresh flavor to the crust. It’s a classic choice for herb-crusted chicken.
  2. Thyme has a slightly earthy and floral flavor that pairs well with chicken. Fresh is always better than dried herbs, but either can be used in your crust.
  3. Rosemary has a strong, piney flavor that can be quite aromatic. Finely chopped leaves can be added into mashed potatoes served with this too.
  4. Fresh basil leaves offer a sweet and slightly peppery taste, which complements chicken nicely. Tear or chop fresh basil into your breadcrumb mixture.

  6. Sage has a savory and earthy flavor, which works well with chicken. Use fresh or dried sage leaves in your crust.
  7. Tarragon has a unique and somewhat anise-like flavor that can be a delightful addition to herb-crusted chicken. Fresh tarragon leaves are ideal.
  8. Dill offers a bright and tangy flavor, which pairs beautifully with chicken. Use fresh dill fronds or dried dill in your crust.

Chives have a mild onion flavor and can add a subtle kick to your herb crust. Finely chop fresh chives to incorporate into the mixture.
