Ingredients 

Dry Mix

  • 1 c all purpose flour
  • 3 tbsp sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon

To Make into Pancake Batter

  • 4 tbsp butter, melted
  • 1 egg
  • 1 c buttermilk

Instructions 

  • Mix all dry ingredients – flour, baking powder, baking soda, ground cinnamon, and sugar. In another bowl, whisk together the egg and melted butter.
  • Add buttermilk to the egg bowl, whisk until combined. Pour the liquid ingredients into the bowl with the dry ingredients. Stir just until combined.
  • You should now have a thick batter. Let the dough stand for 10 minutes. If it is too thin, add a pinch more flour. If it's too thick, add buttermilk.
  • Heat a skillet over medium heat and add a small pat of butter, or spray with non stick cooking spray. Pour in about 1/4 cup of batter and let cook until lightly browned, about 2 minutes. Flip and cook another 2 minutes or so until the other side is lightly browned and fluffy in the middle.
  • If you wanted to make and store this in bulk, mix just the dry ingredients and store in an airtight baggie. Mix wet ingredients when you want to make the batter.
