Bisquick banana bread with streusel topping is quick and delicious. Using this baking pancake mix, ripe mashed bananas and cinnamon you can now bake a loaf for breakfast in no time at all.

Bisquick Banana Bread Recipe

This is one of our favorite dessert recipes. If you have overripe bananas and you’re like me you hate to waste them. Baking with them makes every sweet bread moist and full of flavor. Give this one a whirl next time you have a few.

The easiest way we’ve made this in the past was to use cake mix. I still swear by our 4 ingredient banana bread to this day, but this is great to add to the list too. Beyond that are the add ins like; crumble topping, adding crushed nuts or mini chocolate chips. Let’s go over the basics first though. 😉

Tips

You could use the “regular” yellow box or the heart healthy style you see here. One has less fat in it so it is healthier but won’t be as moist if you had to compare the two. The whole thing starts with these yellow fruits though. The browner the better, but catch them before they’re completely black.

The closer to deep brown they are the sweeter the taste of any baked goods you use them in. Not that you couldn’t use yellow firm ones but you will certainly taste the difference, it will be more bland.

So just mash them up in a bowl and set that aside. You’ll want to cream together the wet ingredients like the butter, oil, sugars etc… In another bowl mix together the dry ingredients. Since the leavening agents are already inside when you stir in Bisquick baking mix there’s less to do than if you were making completely from scratch.

Ingredient Notes

Bisquick is the base of your dry ingredients instead of regular flour, there is a gluten free version too if you need that. Start with this in a bowl to combine others

Sugar will sweeten the batter with brown sugar used for the top side of the streudel crumb topping for muffins we added this time, optional.

Milk, whole is best to add as much moisture as possible. You could use a dairy free alternative if need be. If so I recommend cashew milk because it is creamier and thicker than others.

Vegetable oil or some sort of fat is necessary. With that said you can substitute this in recipes in general with a few things; applesauce, canned pumpkin, mashed avocado or Greek yogurt. These will make it more dense though, just a note.

You want to add eggs at room temperature ideally and combine with your vanilla and cinnamon to add warm Fall flavors.

Tip for picking the perfect ripe bananas is to wait until they are browned well, not black.

Of course the add ins for all bisquick recipes are up to you. Want Bisquick banana nut bread? Go for it with some chopped nuts like walnuts maybe. Want to incorporate some mini semi sweet chocolate chips, you could add 1/2 cup of those too at the end. I like to add all the extras at the end so they don’t break down.

Bisquick Banana Muffins

Ok so you could bake this faster with a muffin tin too if you wanted instead of a 9×5 loaf pan. Same batter but cuts the time in the oven quite a bit. 18 minutes is regular size while this is how long to bake mini muffins if you want them bite size and “so cute”.

Bisquick Banana Bread Recipe

Easy Bisquick banana bread recipe with streusel topping that is to die for. Using baking pancake mix makes this easy and quick to bake at home.

Equipment

  • 1 9×5 loaf pan

Ingredients 

  • 2 2/3 cup bisquick
  • 2/3 cup sugar
  • 1/3 cup milk, whole is best
  • 3 tbsp vegetable oil, or use applesauce, sour cream or Greek yogurt instead
  • 3 medium eggs
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 3 large bananas, overripe
  • 1/2 cup nuts, crushed, walnuts, optional

Instructions 

  • Preheat oven to 350 degrees F. Lightly spray inside of 9×5" loaf pan or line with parchment paper.
  • Mash bananas. In a bowl combine all other ingredients for bread other than Bisquick. Fold in bananas and then mix in bisquick until you get a semi smooth batter.
  • In a small bowl use the back of a fork to mix together streusel topping until crumbly.
  • Pour 1/2 of your batter into loaf pan and then sprinkle half streusel. Pour remaining half of batter on top followed by remaining streusel.
  • Bake for 45-55 minutes or until top is light browned and middle is no longer wet with just crumbs attached to toothpick.
  • Allow to cool in pan on cooling rack for 10 minutes, then slide out and place on cooling rack until cooled, then slice.

If you want to make muffins fill muffin cups 3/4 of the way full and bake for 18-20 minutes or until top springs back when touched gently on top.

Can you use Bisquick instead of flour?

No, it’s not the same. There are other ingredients mixed within it vs. just using all purpose flour for baked goods. It has baking powder, fat, sugar and salt in it. If you substituted then you’d have too much of these 4 items in your batter and it wouldn’t turn out well.

How to bake this in an air fryer

You could follow our air fryer banana bread recipe for temp and timing too though. This is baked in mini loaf pans which makes them great for gifting during the holidays.

If you have a lot of naners to use up beyond this creation I would highly recommend making our banana bread pudding with your others. To save fruit for next day or so stick in a bowl in the fridge to slow down the ripening process.

How to save leftovers

You want it to stay really moist right? To do this allow it to reach room temperature first. Slice what you want to enjoy and leave the rest of the loaf whole. Wrap tightly in plastic wrap and then aluminum foil over that. Store on the countertop for 3-4 days, reseal after opening every time.

If you need to freeze what is left, wrap it this same way. Freeze for 3-4 months. Allow it to sit on the counter to thaw out when you’re ready to enjoy it later. Then slice and warm in the microwave for 30 seconds and enjoy.
